SKILLET CHICKEN AND RAVIOLI

One 9-ounce package small cheese ravioli
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 1/4 pounds skinless, boneless chicken breasts, cut into chunks
Freshly ground pepper
8 ounces white mushrooms, halved
1 cup halved cherry tomatoes
2 cloves garlic, thinly sliced
2 tablespoons red wine vinegar
1/3 cup low-sodium chicken broth
2 tablespoons grated Parmesan cheese
1/4 cup chopped fresh parsley, basil or a combination

Steps:

  • Bring a pot of salted water to a boil. Add the ravioli and cook as the label directs; drain, then drizzle with olive oil and toss.
  • Meanwhile, season the chicken with salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken; cook, undisturbed, until beginning to brown, about 2 minutes. Continue to cook, stirring, 1 more minute. Transfer to a plate.
  • Heat the remaining 1 tablespoon olive oil in the skillet. Add the mushrooms and cook, undisturbed, until browned in spots, about 2 minutes. Season with salt and continue to cook, stirring, until softened, about 3 more minutes. Stir in the tomatoes, garlic and vinegar and cook until the tomatoes begin to soften, about 2 minutes. Return the chicken to the skillet, then add the ravioli, broth and Parmesan; bring to a simmer and cook, stirring occasionally, until the chicken is cooked through, about 4 minutes. Top with the parsley.

This looks really good! I haven't made it yet but I hope to soon. UPDATE: 3-23-09 This is a keeper. Made with refrigerated spinach & ricota ravioli (thanks moms). I added mushrooms :), and of course extra garlic. I used pettie tomatoes instead of crushed and added italian seasoning. The taste of the sauce is great! it comes out very "saucy"

2 tablespoons melted butter or 2 tablespoons margarine
1/4 cup flour
1 teaspoon seasoning salt
1 beaten egg
1 tablespoon water
1/4 cup dry breadcrumbs
1/4 cup grated parmesan cheese
4 boneless skinless chicken breast halves

Steps:

  • Preheat ovent to 350 degrees.
  • In four different small mixing bowls, place flour and seasoned salt, beaten egg and water and bread crumbs and cheese.
  • Beginning with the butter, dip the chicken breast into each of the 4 bowls, ending with the crumb and cheese mixture.
  • On a rack placed in a shallow baking dish, arrange breasts close together.
  • Bake 45 minutes or until chicken is tender.
  • Remove from oven, turn heat to"broil" and slip chicken under broiler for a few minutes to lightly brown crust.

12 ounces uncooked penne
1 teaspoon olive oil
2/3 ounce pine nuts, about 2 tbsp
1 1/2 teaspoons minced garlic
10 ounces frozen chopped spinach, thawed (I used freshly cooked spinach and it was just fine)
1 lb plum tomato, chopped
4 ounces feta cheese, crumbled
6 medium olives, black,pitted and chopped (I prefer the green Greek or Italian olives)

Steps:

  • Cook pasta according to package directions (without butter or oil), drain and set aside.
  • Coat a large skillet with cooking spray.
  • Add olive oil and heat over medium-high heat until oil sizzles.
  • Add pine nuts and garlic.
  • Cook and stir until pine nuts are golden brown, about 3 minutes.
  • Stir in spinach and tomatoes and cook until heated through, stirring occasionally, about 3 minutes.
  • Add spinach mixture to pasta and toss until combined.
  • Serve pasta sprinkled with feta cheese and black or green olives.

from 3 fat chicks on a diet UPDATE:2-25-09 I made these today and i used caned chicken instead of regular chicken and it worked reall well. It didnt change the points at all according to the recipe builder on ww online. I used whole wheat tortillas and those made my points go up by 2.(so 4 in total) which still wasnt bad. these are pretty good and fast to make.I was gonna have one and a piece of fruit but the wrap was filling enough. I couldnt find the fat free cream cheese in the garden veggie flavor so i used regular fat free. update! 3-02-09 made these again(lol) still used the plain cream cheese, ff, but instead of sprinkling with the cayenne pepper, i used italian seasoning and garlic powder! it was delicious! i wont use the cayenne again the italian seasoning is the best! feel free to change the seasoning up a bit and let me know how you did it!:)

2 boneless skinless chicken breast halves
1 cup nonfat chicken broth
4 low-fat flour tortillas (or non fat)
1/2 cup fat-free cream cheese with garden vegetables, softened
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/4 teaspoon cayenne pepper (optional)
1 1/3 cups coleslaw mix
1/4 cup finely chopped green bell pepper

Steps:

  • Add chicken and broth to large nonstick skillet. Bring to a boil. Cover; reduce heat. Simmer 8 to 10 minutes or until chicken is done. Drain; cool slightly. Shred chicken or cut into thin strips.
  • Spread each tortilla with cream cheese to within 1/2 inch of edges. Sprinkle evenly with seasonings. Top evenly with chicken, slaw mix and chopped pepper. Press lightly to flatten. Fold up bottom edge, then roll tightly to form wrap. Wrap in plastic wrap and chill until serving.

3/4 cup water (70 to 80 degrees)
2 tablespoons olive oil or 2 tablespoons canola oil
1/2 teaspoon sugar
1/2 teaspoon salt
2 cups bread flour
2 teaspoons active dry yeast
1 clove garlic, minced
1/8 teaspoon garlic salt
2 cups chopped fresh spinach
1 small red onion, sliced and separated into rings
1 cup sliced fresh mushrooms
4 ounces shredded mozzarella cheese
1/4 cup crumbled feta cheese
1/2 teaspoon dried basil

Steps:

  • DOUGH: In a bread machine pan, place the first six ingredients in order suggested by manufacturer.
  • Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tbs of water or flour if needed).
  • When cycle is completed, turn dough onto a lightly floured surface.
  • Knead for 1 minute.
  • Cover and let rest for 15 minutes.
  • Roll into a 12-in circle.
  • Transfer to a lightly greased 12-in pizza pan.
  • Cover and let rise in a warm place until puffed, about 20 minutes.
  • TOPPINGS: Sprinkle with garlic and garlic salt.

2 cups low sodium chicken broth
2 tablespoons tomato paste
6 ounces long grain rice
6 ounces drained cooked red kidney beans
1 cup drained canned plum tomato
fresh ground black pepper, to taste

Steps:

  • Spray large nonstick saucepan with Pam, place over med-high heat 30 seconds.
  • Add bell pepper, onions and garlic and cook, stirring frequently, until soft, 5 to 6 minutes.
  • Add chicken and cook until browned, 5 minutes. Reduce heat to low.

1 (28 ounce) jar spaghetti sauce (I use meatless)
6 uncooked lasagna noodles
1 (15 ounce) container fat-free ricotta cheese
1 -2 cup sliced/chopped raw vegetables (I've used zucchini,bell peppers,mushrooms,onions)
1 (8 ounce) package shredded lowfat mozzarella cheese

Steps:

  • Spray 11x7 baking dish with cooking spray.
  • Spread 1/3 of the sauce on bottom of dish.
  • Arrange 3 noodles over the sauce.
  • Top with another 1/3 of sauce,all of the riccota cheese and the vegetables,and 1/2 the mozzerella cheese.
  • Top with remaining 3 noodles and the remaining sauce.
  • Cover dish with foil.
  • Bake at 375 degrees for 1 hour.
  • Remove foil and sprinkle with remaining cheese,bake for another 5 minutes.

  • I cut the lasagna in 6 pieces,wrap them in seran wrap and freeze them.

After my boyfriends grandmother passed, I was given her recipe book to take down some that looked good to me. This one is a winner. ** Update 3/7- I just made this for the first time myself and realized that in the recipe it calls for milk but it is not listed in the ingredients. I guess I did not record this when copying the recipe so I used about 2 cups to get it creamy like it should be.. however.. I ended up with too much sauce. I used it over chicken later in the week.

1 1/2 lbs ground beef
3/4 cup oats
1/2 cup tomato juice
1 egg
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon chili powder
2 teaspoons onions, minced
3 tablespoons butter
3 tablespoons flour
2 cups milk, see not in description
1 cup cheddar cheese, shredded
1 (12 ounce) can Mexican-style corn, drained
2 green peppers, small, cut into rings

Steps:

  • Combine beef, oats, tomato juice, egg, 1 tsp salt, pepper, chili powder, and onion in a large bowl. Do not overmix. Pack into a 9 inch square baking dish. Bake at 350 for 20 minutes, drain juices.
  • Melt butter over medium heat, whisk in flour and 1 tsp salt. Slowly add milk while whisking. Bring to a boil.
  • Cook one minute, add cheese.Stir in corn.
  • Pour mixture over meat, top with green pepper rings. Bake 20 minutes.
  • Let cool 10 minutes before cutting. Serve.
