CHICKEN BACON RANCH PITA PIZZAS

- Using the stove: Preheat the broiler. Heat a heavy skillet over medium high heat. Place one pita in the pan. After the underside has browned in spots (about 3-4 minutes), remove to a baking sheet placing the browned side down and repeat with second pita. Top each pita with 1 Tablespoon of dressing and layer on chicken, bacon and ¼ cup of mozzarella cheese. Place under broiler until cheese is golden. Serve immediately.
- Using the grill: Preheat the grill using medium heat. Place the pitas on the grill and watch them closely until they are slightly charred on the underside. Flip over and quickly spread 1 Tablespoon of dressing on each pita. Layer on chicken, bacon and ¼ cup of mozzarella cheese onto each pita. Lower the heat to low and close the grill until the cheese is melted. Serve immediately.

- Preheat oven to 450°F Place pita rounds on a baking sheet. Mix blue cheese dressing with your desired amount of buffalo sauce; brush onto pita rounds. Scatter chicken and celery on top.

- In a blender combine juice, 1 tablespoon oil, garlic, coriander, cumin, salt and pepper and mint or cilantro leaves. Process until smooth and pour over chicken to marinate. Refrigerate chicken and allow to marinate for 30 minutes. In a small bowl stir together yogurt, cucumber and chopped mint.
- In a large skillet heat 1 tablespoon olive oil over medium high heat. Add marinated chicken and cook for 8-10 minutes, stirring occasionally. Heat pitas under a broiler or in a toaster oven. Slice open pitas and stuff with chicken, tomatoes, lettuce and top with yogurt dressing. Serve immediately.

Steps:
- Preheat oven to 400 degrees.
- Place a piece of aluminum foil over a cookie sheet and spray with non-stick spray (I have done without the spray - one time it worked, one time it did not).
- Put the pita on the foil and spread the chicken pieces evenly on top of the entire pita.
- Pour the salsa over the chicken making sure all chicken is covered (you may use more than recipe calls for if you feel it is necessary!).
- Sprinkle cheese all over the top of the pita.
- Place the cookie sheet in the oven and allow to cook for approximately 10 minutes, or until pita is slightly brown and chicken is heated through (it might be longer if you have refrigerated your chicken!).
- Cut in wedges and enjoy! (or just bite into the side, without cutting, like my crazy husband did!).

- Heat oven to 200C/180C fan/gas 6 and put a baking sheet inside to heat up. Spread each pitta with 1 tsp purée. Top with the tomatoes, shallot, chorizo and cheddar.
