CHICKEN-SPINACH CALZONES

Steps:
- Preheat the oven to 450˚. Line a baking sheet with parchment paper. Combine the chicken, mozzarella, spinach, roasted red peppers, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
- Divide the pizza dough into 4 pieces; keep covered with plastic wrap until ready to use. Working with 1 piece at a time, roll the dough into a ball and dust with flour, then roll into a 7-inch round on a lightly floured surface. Spoon one-quarter of the chicken mixture on one side of the dough round, then fold the dough over the filling and crimp the edges with a fork to seal. Transfer to the prepared baking sheet. Repeat with the remaining dough and filling.
- Brush the calzones with the beaten egg and make a few slits in the top of each with a paring knife. Bake until the calzones are golden and puffed, about 25 minutes. Let rest 5 minutes. Serve with marinara sauce.

PEAR AND PROVOLONE CALZONES

- Preheat the convection oven to 375 degrees F.
- Combine all of the dough ingredients in a large bowl, then cover the bowl with a dishtowel and set aside to rest for about 30 minutes.
- Combine the walnuts, Gorgonzola, truffle oil, garlic, salt, and sugar in a small bowl.
- Roll the dough out on a lightly floured surface and cut it into 6 equal squares.
- Put equal slices of pears and provolone cheese on 1 half of each piece of dough. Top with 2 tablespoons of the walnut mixture. Fold the dough square in half to make a triangle and close the edges by pressing down with your fingers or a fork. Brush each calzone with olive oil and sprinkle with garlic salt.
- Put the calzones on a lightly greased cookie sheet. Bake until lightly browned, about 17 minutes. Remove the calzones from the oven and put them on serving plates.

- Preheat the oven at 400°F.
- Sauté garlic and red bell pepper, in olive oil, for about 3 minutes (just enough to "combine" the flavors). Put aside to cool.
- In a bowl combine sun-dried tomatoes, thyme, chili and red pepper mixture. Toss until well mixed. Season with salt and pepper.
- Unroll pizza dough onto clean work surface.
- Pat out to 15x11-inch rectangle; cut in half lengthwise, then in half crosswise to form 4 rectangles.
- Place the dough pieces on a floured surface.
- Spread a 1/4 of the shredded chicken on one side of each dough piece. Be sure to leave 1/2 inch of the dough border free.
- Place one slice of cheese over each portion.
- Spread the vegetable mix over the cheese.
- Add 3 leaves fresh basil to each calzone.
- Brush the dough borders with little water and cover the filling with the dough (using the side without filling) and seal edges with fork.
- Place on baking sheet sprayed with cooking spray and cook for about 20 minutes or as desired until golden brown/middle down.
- Serve warm or cold as sandwiches.

WING CHICKEN CALZONE

- Place cheeses in bowl, add parsley, basil, Romano and mix well. In separate bowl, place garlic and onion and crack 3 eggs on top. Mix well and add to cheese mixture until well incorporated. Set aside.
- For the Pizza Dough: Place flour, sugar, shortening and salt in bowl of mixer. Place water in separate bowl, add yeast and sugar, let stand for 5 to 8 minutes until yeast rises to top of water. With kneading hook on the mixer, start mixer and add water. Mix for 10 to 12 minutes. Remove from bowl and place on floured sheet pan. Knead slightly adding flour if needed to form a large dough ball. Refrigerate for 45 minutes before using various recipes. Special note: Flour must be high gluten. Yeast must be granulated.
- Assembly: Cut chicken into strips. Coat with flour, then egg, and then Romano cheese. Make sure that cheese is well coated on the chicken. Place on oiled sheet pan in a preheated 500 degree oven for 5 minutes. While chicken is cooking, mix red hot sauce, butter, garlic and jalapeno and cook over low heat for 5 minutes. Place pizza dough on peel and spread into a circle. Place calzone cheese on 1 half of the circle. Remove chicken from the oven and place in mixing bowl. Cover with sauce and coat well. Place chicken on top of calzone cheese, cover with a little sauce and blue cheese, fold, brush with butter and bake in a preheated 400 degree oven for 15 minutes or until golden brown. Remove from the oven, slice and serve with extra wing sauce on the side.

- Preheat oven to 450 degrees F.
- Coat a large baking sheet with cooking spray.
- In a large bowl, combine chicken, cheese, tomato sauce, liquid smoke, and hot sauce. Mix well and set aside.
- Roll dough out, using a rolling pin, to a 12-inch circle. Spread chicken mixture over half of circle, to within 1-inch of the edge. Fold over untopped side so that it meets the other side, forming a half moon. Pinch the edges together to seal.

Steps:
- Preheat oven to 425 degrees.
- Pat chopped and drained artichokes dry with papertowels.
- In large bowl, combine artichokes, pepper, salt and garlic.
- Add spinach, chicken & shredded provolone- Gently toss.
- Line your largest cookie sheet with foil.
- Pour olive oil over foil and brush or spread with back of spoon evenly over foil.
- Sprinkle cornmeal over oil.
- Unroll pizza dough onto prepared cookie sheet, use a roller pizza cutter and cut the dough into 6 even sections.
- Cover and let sit 5 minutes.
- Pat each section into 5 by 6 inch sheets.
- Spoon mixture onto half of rectangle sheet making sure not to cross the diagonal.
- Fold across the diagonal to make triangle calzones and squeeze edges of dough to create a seal.
- Bake on center rack for 12 minutes or until golden.

- Sprinkle flour on a wooden cutting board and roll out dough.

- Preheat the oven to 400 degrees F (200 degrees C).
- Fry bacon in a large skillet over medium-high heat until crisp. Remove from the pan to drain on paper towels; crumble. Add the onion and shredded chicken to the hot bacon grease in the pan. Fry over medium heat until onion is tender. Stir in 1/3 cup of barbeque sauce, and remove from the heat. Mix in the cooked bacon.
- Roll the pizza crust dough out onto a greased cookie sheet. Press out to an even thickness, and then cut in half. Divide the chicken mixture between the two pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge. Drizzle the remaining sauce over the filling. Sprinkle the cheese and cilantro over the top. Fold the uncovered portion of dough over the filling, and press the edges together with a fork to seal.
- Bake for 25 minutes in the preheated oven, or until browned to your liking. Cool for a few minutes, then cut each calzone in half. Each serving is half of a calzone. These can be served with additional barbeque sauce if you like.
