CHICKEN TIKKA MASALA

This takeaway favourite is freezer-friendly and quick to reheat, giving you the chance to get ahead and save money.

4 tbsp vegetable oil
25g butter
4 onions, roughly chopped
6 tbsp chicken tikka masala paste (use shop-bought or make your own - see recipe, below)
2 red peppers, deseeded and cut into chunks
8 boneless, skinless chicken breasts, cut into 2.5cm cubes
2 x 400g cans chopped tomatoes
4 tbsp tomato purée
2-3 tbsp mango chutney
150ml double cream
150ml natural yogurt
chopped coriander leaves, to serve

Steps:

  • Heat the vegetable oil and butter in a large, lidded casserole on the hob, then add the onions and a pinch of salt. Cook for 15-20 mins until soft and golden.
  • Add the tikka masala paste and peppers, then cook for 5 mins more to cook out the rawness of the spices.
  • Add the chicken breasts and stir well to coat in the paste. Cook for 2 mins, then tip in the chopped tomatoes, tomato purée and 200ml water. Cover with a lid and gently simmer for 15 mins, stirring occasionally, until the chicken is cooked through.
  • Remove the lid, stir through the mango chutney, double cream and natural yogurt, then gently warm through. Season, then set aside whatever you want to freeze. Will keep, in an airtight container, in the freezer for up to three months. Scatter the rest with coriander leaves and serve with basmati rice and naan bread.

This classic chicken Parmesan recipe gets the Good Food makeover, resulting in a hearty yet healthy dish great for sharing with your mates

2 large, skinless chicken breasts, halved through the middle
2 eggs, beaten
75g breadcrumb
75g parmesan, grated
1 tbsp olive oil
2 garlic cloves, crushed
half a 690ml jar passata
1 tsp caster sugar
1 tsp dried oregano
half a 125g ball light mozzarella, torn

Steps:

  • Halve 2 large skinless chicken breasts through the middle then place the 4 pieces between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin.
  • Dip in 2 beaten eggs, then 75g breadcrumbs, mixed with half of the 75g grated parmesan. Set aside on a plate in the fridge while you make the sauce.
  • Heat 1 tbsp olive oil and cook 2 crushed garlic cloves for 1 min, then tip in half a 690ml jar passata, 1 tsp caster sugar and 1 tsp dried oregano. Season and simmer for 5-10 mins.
  • Heat grill to High and cook the chicken for 5 mins each side, then remove.
  • Pour the tomato sauce into a shallow ovenproof dish and top with the chicken.
  • Scatter over torn pieces of half a 125g ball light mozzarella, and the remaining grated parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling.
  • Serve with vegetables or salad and some pasta or potatoes, if you like.

Steps:

  • Begin making the sauce by frying the minced garlic, minced ginger, coriander powder, paprika and turmeric for about a minute to release the flavours.
  • Add the onions and fry for a further 10 minutes.
  • Add the tomatoes and water and simmer for approximately 1 hour until the mixture is thick and most of the water has evaporated.
  • Blend the mixture until it becomes thick and velvety.
  • Begin to make the curry by frying the onion, green pepper, minced garlic, minced ginger, cumin powder and coriander powder for around 10 minutes.
  • Add the sauce you prepared earlier, along with the chicken stock, cinnamon powder, cayenne pepper, white wine vinegar, sugar, red food colouring and salt to taste.
  • Give everything a good mix and add the chicken.
  • Simmer for 10 minutes and add the chopped coriander.
  • Simmer for another 20 minutes until the curry has reduced and serve with rice.

My favourite dish at my old local Indian was a Patia. Since I've moved away, I thought I'd try to recreate it so, with a little help from Google, I found this recipe. The recipe is in two parts - one is the base, which can be portioned and frozen for future use, and then the main part, which is really quick and easy once you have the base. The recipe of the base makes enough for three curries, so you can freeze two thirds for future curries - or if you want to make just this one, reduce the base ingredients amounts to 1/3 of the listed amount.

4 large onions, coarsely chopped
150 ml vegetable oil
6 large garlic cloves, minced
1 three-inch chunk ginger, grated
1 tablespoon ground coriander
2 tablespoons hot paprika
2 teaspoons ground turmeric
480 g chopped tomatoes
water
2 teaspoons salt
4 tablespoons vegetable oil
1 medium onion, finely chopped
1 large garlic clove, minced
1 one-inch chunk ginger, grated
1/2 teaspoon cumin
1/2 teaspoon ground coriander
1/2 teaspoon cinnamon
1 teaspoon salt (to taste)
1 -2 fresh red chili pepper, finely chopped (to taste)
1 large bunch fresh coriander, coarsely chopped
2 tablespoons white wine vinegar
2 tablespoons sugar
6 golf-ball sized tomatoes, quartered
4 chicken breasts, diced
1 chicken stock cube
200 ml water

Steps:

  • FOR THE BASE.
  • Heat the oil in a large pan or wok, add the garlic and ginger then the coriander, turmeric and paprika. Stir together and cook for 30 seconds.
  • Add the onion and salt and cook, stirring, until softened. If the spices stick to the pan, add a little water.
  • Stir in the tomatoes, then fill the can with water and add that. Bring to the boil, then simmer until considerably thickened (the original recipe said one hour, but I found after 35 minutes it was very thick).
  • Puree with a hand blender, split into three portions and freeze two of them when cooled.
  • FOR THE PATIA.
  • Put the oil, cumin, ground coriander, garlic, ginger and onion in a large pan and heat until the onion is soft.
  • Stir in the tomatoes, base sauce from above, chicken stock pot, water, cinnamon, vinegar, sugar and chilies. Add salt to taste.
  • Add the chicken and simmer gently for about 20 minutes, until the chicken is cooked through and the tomatoes have softened.
  • Stir in the fresh coriander before serving.

Make a crowd-pleasing pasta dish for dinner. We've taken inspiration from creamy alfredo sauce with Cajun-style seasoning to add a bit of punch.

1 tbsp olive oil
400g chicken breasts, chopped into large chunks
3 garlic cloves, finely chopped or grated
2 tbsp Cajun-style seasoning
400g can chopped tomatoes or passata
1 chicken stock cube, crumbled
500g penne or another tube- shaped pasta
150ml double cream
20g parmesan, finely grated, plus extra to serve
½ lemon, juiced
chopped parsley, to serve (optional)

Steps:

  • Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
  • Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
  • Meanwhile, bring a large pan of salted water to the boil and cook the pasta for a minute less than pack instructions. Stir the cream into the chicken and continue to simmer gently. When the pasta is cooked, drain well and stir into chicken mixture. Finish cooking the pasta in the sauce over a low heat for 2 mins, then stir in the parmesan and lemon juice, and cook for 1 min more. Serve the pasta straight from the pan, or tip into a large serving bowl. Scatter with parsley, if you like, and extra parmesan.
