JOOLS' SIMPLE CHICKEN & VEG STEW

Jools' simple chicken & veg stew image

I don't really like onions in my cooking, so I always leave them out of my stews - I prefer to use leeks instead. My kids also like sweetcorn in there, which I stir in from frozen just after the casserole has come out of the oven. Daisy loves this with mint sauce on the top, too.

Categories     Mains     Chicken     Sunday lunch     British     Stew     Chicken thighs     Beef

Time 1h30m

Yield 6

Number Of Ingredients 13

2 medium leeks
2 carrots
2 sticks of celery
2 cloves of garlic
3 sprigs of fresh thyme
3 rashers of higher-welfare smoked streaky bacon
olive oil
200 g celeriac
2 parsnips
6 new potatoes
8 free-range chicken thighs, skin off, bone out
1 heaped teaspoon Marmite
600 ml organic vegetable stock

Steps:

  • Preheat the oven to 180ºC/350ºC/gas 5.
  • Trim, wash and slice the leeks 1cm thick, scrub and cut the carrots into rough chunks and finely slice the celery. Peel and finely slice the garlic, pick the thyme leaves, discarding the stalks, and finely slice the bacon.
  • Heat a lug of oil in a large casserole pan on a medium heat, then add the bacon. Scatter in the thyme leaves and fry for a few minutes, or until the bacon is golden.
  • Next, add the leeks, carrots, celery and garlic and cook for around 10 minutes, or until the leeks start to soften, stirring regularly. Meanwhile, peel and roughly chop the celeriac and parsnips, then roughly chop the potatoes.
  • Add the chicken, celeriac, parsnips and potatoes to the pan. Stir in the Marmite, add a good grinding of black pepper and stir to coat.
  • Pour in the hot stock, bring to the boil, then turn the heat down to low. Crumple up and wet a piece of greaseproof paper, then open it out and place on top of the stew. Cover with a lid and pop in the oven for 1 hour, or until the chicken is super-tender.
  • When the time's up, gently break the chicken up into the stew, then serve up in bowls. I like to serve this with broccoli on the side. Sometimes I top it with puff pastry or I stir it through pasta for a really tasty sauce.

ROASTED MUSHROOMS, PARSNIP, POTATOES AND SPINACH CASSEROLE

Roasted Mushrooms, Parsnip, Potatoes and Spinach Casserole image

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 1h35m

Yield 4 to 6 servings

Number Of Ingredients 20

Parsnips, Potatoes and Spinach Casserole
4 large starchy potatoes, peeled and cut into chunks
4 medium parsnips, peeled and chopped into chunks
Salt
1 small peeled onion
1 box frozen chopped organic spinach, defrosted and squeezed dry
2 tablespoons butter
About 1/2 cup milk
1/2 cup heavy cream
Freshly ground black pepper
Freshly grated nutmeg
2 eggs, beaten
1 cup grated Gruyere or Parmesan
Paprika
Roasted Mushrooms
2 1/2 pounds mixed mushrooms - when you bring them home, wipe them, stem them and slice them, portobellos should be gilled and sliced, buttons may be halved, shiitakes, oysters or other wild mushrooms may be coarsely chopped
8 to 10 cloves garlic, crushed
Several sprigs fresh thyme
1/2 cup extra-virgin olive oil
1 lemon

Steps:

  • Put the potatoes and parsnips in large pot and cover with water. Bring the water to a boil, over medium heat. Salt the water and cook the vegetable until tender, 12 to 15 minutes. Drain and return them to the hot pot. Grate in 3 to 4 tablespoons of onion, then add the spinach, butter, half of the milk and all of the cream. Season with salt, pepper and a little freshly grated nutmeg, to taste. Mash the mixture together and taste to adjust seasonings. Add the extra splash of milk if the potatoes are too tight. Cool to room temperature, then stir in the eggs and transfer the mixture to a casserole. Cover with cheese and sprinkle with paprika. Cool and chill for a make-ahead meal.
  • Preheat the oven to 400 degrees F.
  • Put the casserole on a baking sheet and put it in the lower third of the oven. Bake until hot and golden, about 35 to 40 minutes.
  • In a medium baking dish toss the mushrooms with the garlic, thyme and olive oil. Roast until dark and tender, about 30 minutes. Stir in the lemon juice and season with salt and pepper, to taste.
  • Serve the mushrooms alongside the casserole.

WILD RICE, CHICKEN OF THE WOODS, AND CHICKEN CASSEROLE (EASY HOME VERSION)

Wild Rice, Chicken of the Woods, and Chicken Casserole (Easy Home Version) image

A simple casserole made with chicken of the woods mushrooms, real wild rice, and chicken.

Provided by Alan Bergo

Categories     Main Course

Number Of Ingredients 14

½ cup breadcrumbs or panko (lightly toasted)
3 tablespoons sunflower seeds (lightly toasted)
Small handful of chopped parsley or similar (optional)
2 cups of leftover chicken
8 ounces young, tender chicken of the woods mushrooms (cut into 1 inch pieces, as you would chicken meat)
2 cups chicken stock or equivalent (like mushroom stock)
¾ cup Chopped onion (1 medium-small onion) ((green garlic makes a good substitute, and is what I actually used here) )
2 large cloves Fresh garlic, finely chopped or pressed, etc
4 ounces lard or unsalted butter + more for drizzling over the top and sweating the mushrooms
1/3 cup all purpose flour or equivalent (for the roux)
1 cup heavy cream (sour cream, or half and half)
1 tablespoon chopped fresh thyme or similar
4 cups cooked wild rice
Kosher salt and fresh ground black pepper (to taste)

Steps:

  • Mix the panko and sunflower seeds with the parsley if using and reserve.
  • Mix the stock and cream. Cook pieces of chicken of the woods in some fat, adding the onions or other alliums after the mushrooms have wilted and the edges of the pan are starting to color.
  • Season with salt and pepper and cook for a few minutes until the onions are translucent, then add the 4 oz of butter, melt, sprinkle over the flour and stir to make a roux. stir in the stock and cream in batches, stirring well after each one to prevent lumps and cook until thickened.
  • In a large mixing bowl (or the cooking pan) mix the wild rice, cooked chicken, thyme, stock and mushroom-allium mixture, taste and double check the seasoning, adjusting and tasting a few times to make sure the seasoning is dead-on, then put into a baking dish, like a 9x11 casserole size, or a 10 inch cast iron skillet.
  • Top with the crumb-seed mixture, criss cross with melted lard or dot with butter and bake for 20-25 minutes at 450F, or until the crust is well browned and the mixture is hot.

  • In a small heatproof bowl, cover the porcini with the boiling water and let stand until softened, about 20 minutes. Drain the porcini, straining and reserving the soaking liquid. Coarsely chop the porcini.
  • Preheat the oven to 400°. Season the chicken with salt and pepper. In a large, deep skillet, heat the olive oil until shimmering. Add the chicken and cook over moderately high heat, turning once, until browned, about 8 minutes. Transfer the chicken to a plate.
  • In the same skillet, melt 2 tablespoons of the butter. Add the white mushrooms and cook over moderately high heat until browned in spots, about 5 minutes. Add the onion, carrots and celery and cook over moderate heat until tender, about 5 minutes. Add the porcini and season with salt and pepper. Sprinkle in the flour and cook, stirring, for 2 minutes. Return the chicken and any juices to the skillet. Stir in the chicken stock, thyme sprigs and the porcini soaking liquid and bring to a simmer over moderate heat, scraping up any bits from the bottom of the skillet. Simmer until the sauce has thickened and the chicken is cooked through, about 10 minutes. Spoon the chicken into a medium baking dish; discard the thyme sprigs.
  • Meanwhile, in a large saucepan, cover the potatoes and parsnips with cold water and bring to a boil. Cook over moderately high heat until very tender, about 15 minutes. Drain and return the vegetables to the pot. Cook over low heat until they look dry, about 1 minute. Remove from the heat. Add the remaining 4 tablespoons of butter and mash the vegetables until smooth. Season with salt and pepper.

  • Preheat the oven to 150°C/fan130°C/gas 2. Heat 2 tbsp of the oil in a flameproof casserole over a medium heat. Add the chicken pieces, skin-side down, and cook for 4-5 minutes on each side until browned. Transfer to a dish and season with salt. Cover and set aside.
  • If there’s a lot of fat in the casserole, drain some off, leaving just enough to brown the vegetables. Add the carrots and leeks and cook for 5-7 minutes, stirring occasionally, until just browned. Add the potatoes and herbs and cook for a further 2-3 minutes. Season with salt.
  • Return the chicken pieces to the casserole and add just enough water to cover. Bring to the boil, cover with a lid, then transfer to the preheated oven. Cook for about 1 hour.
  • Return the casserole to the hob and remove the lid. Using a slotted spoon, transfer the chicken and vegetables to a warm serving platter. Cover with foil to keep warm. Bubble the juices over a medium heat for 3–5 minutes to reduce slightly, then stir in the cream. Bring to the boil, then reduce the heat and simmer gently, uncovered, for 5 minutes.

  • Place the chicken in a bowl with 6 tablespoons of the flour plus 1/2 tsp each of salt and pepper. Toss to cover the chicken in the flour and seasoning.
  • Heat the oil over a high heat in a large frying pan (skillet) and add the chicken. Brown all over (it doesn't need to be cooked through at this point). Remove from the pan with a slotted spoon and put to one side.
  • Place the butter in the same frying pan and melt over a low-medium heat. Add the onions, garlic, thyme and celery salt and cook for 5 minutes until the onion softens. Sprinkle on the remaining 3 tbsp of flour and stir for a minute (it will be lumpy).
  • Pour in a splash of the stock and stir, using a whisk until combined. Continue to add in stock, a little at a time, whilst stirring, until all the stock is added and you have a smooth sauce with no lumps (the onions will still be in there though - so it will look a little lumpy because of that).
