1/2 cup milk
3 ounces shredded pecorino
1 1/2 tablespoons sea salt
Pinch freshly ground black pepper
1/2 pound angel hair pasta, partially cooked
One 28-ounce can crushed tomatoes
One 7-ounce can tomato paste
2 tablespoons olive oil
Salt
3 large eggs, separated
16 ounces 2 percent milk, heated to 100 degrees F, plus additional as needed
2 ounces lemon juice
1 tablespoon unsalted butter, melted and cooled
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon baking soda
Peanut or vegetable oil, for frying
1 boneless, skinless chicken breast, cut into sixths
1 1/2 ounces breadcrumbs
1 1/2 tablespoons paprika
1 1/2 tablespoons salt
1/2 tablespoon cayenne pepper
Pinch black pepper
Garlic powder, to taste
6 slices part-skim mozzarella

Steps:

  • For the pasta waffle: Preheat a waffle iron to medium heat.
  • Mix eggs, milk, pecorino, salt, black pepper and angel hair pasta in a medium bowl.
  • Ladle into waffle iron (this will fit neatly in two 7-inch Belgian waffle compartments) and cook until brown, 6 to 8 minutes.
  • For the tomato sauce: Blend tomatoes, tomato paste, olive oil and salt in a bowl.
  • For the batter: Beat the egg whites in a large bowl until slightly foamy, then combine the milk with the whites, whisking constantly. Add lemon juice.
  • In a separate bowl, whisk together slightly beaten egg yolks and butter until smooth. Whisk into the milk mixture.
  • Whisk together the flour, salt, sugar and baking soda in a large bowl, then add in thirds to the milk mixture. Adjust consistency with milk as needed to make a thick batter.
  • For the chicken tenders: Heat oil in a deep-fryer to 325 degrees F.
  • Dunk the chicken pieces in batter.
  • Stir together the breadcrumbs, paprika, salt, cayenne, black pepper and garlic powder in a bowl. Remove the chicken from the batter and coat in the spice mixture.
  • Fry the tenders until golden brown, about 6 minutes.
  • Heat the cooked tenders on a hot griddle and top with mozzarella, then melt under a lid.
  • Spread sauce on the pasta waffles, then top each with some chicken and mozzarella.

¼ teaspoon granulated garlic
¼ teaspoon Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
1 ½ cups warm milk
2 large eggs
⅓ cup salted butter, melted
⅓ cup shredded Cheddar cheese
1 (24 ounce) package frozen breaded chicken breast fillets (such as Kirkwood®)
cooking spray
1 pinch salt

Steps:

  • Mix flour, baking powder, salt, garlic, and seasoning in a large bowl; set aside. Beat milk, eggs, and melted butter together in a separate bowl. Pour milk mixture into the flour mixture; beat until blended. Fold in Cheddar cheese.
  • Preheat an air fryer to 400 degrees F (200 degrees C) for 5 minutes.
  • Air fry chicken for 7 minutes. Turn chicken pieces and cook for another 6 minutes.
  • Meanwhile, preheat the oven to 200 degrees F (95 degrees C). Preheat a waffle iron according to manufacturer's instructions. Spray waffle iron with nonstick cooking spray.
  • Ladle 3 tablespoons batter on the waffle iron. Cook until waffle is golden brown and the iron stops steaming, about 5 minutes. Place on a lined baking sheet and keep warm in the oven. Repeat with remaining batter.
  • Assemble waffle and chicken sandwiches once all the waffles are cooked.

1/2 cup all-purpose flour

  • Combine flour with all the spices in one bowl and combine buttermilk (with salt and pepper) and the chicken thigh into a seperate bowl.
  • Let the buttermilk and chicken marinade for at least 30 minutes.
  • Once finished marinating, shake the excess buttermilk off the chicken and dredge in seasoned flour.
  • Add an inch of canola oil in a frying pan and heat to 350 degrees fahrenheit.
  • Cook the chicken 7-8 minutes per each side (internal temperature 165 degrees farenheit.
  • Sandwich Assembly Instructions:.
  • Take fried chicken thigh and spread marinara sauce on top.
  • Add shredded mozzarella and shredded parmesan.
  • Turn broiler on and melt the cheeses on top of the chicken.
  • Assemble the waffle sandwich, placing the chicken on top of one waffle, some fresh basil and the second waffle.

1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/3 cup peanut oil
1 egg
1 teaspoon sugar
Peanut oil, for frying
1/2 cup all-purpose flour
1 cup panko bread crumbs
3/4 teaspoon Cajun seasoning
10 dashes hot sauce
1 egg, beaten
1 tablespoon water
12 chicken tenderloins
Salt and freshly ground black pepper
1 cup mayonnaise
1/4 cup pure maple syrup
1/2 teaspoon mustard powder
1 teaspoon horseradish
12 slices applewood smoked bacon, cooked until crispy and drained
8 slices sharp Cheddar

Steps:

  • In a large bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the buttermilk, peanut oil, egg, and sugar. Mix well. Let the batter sit for 30 minutes before cooking the waffles.
  • Preheat a waffle iron. Follow the directions on your waffle iron to cook the waffles accordingly- you will need at least 4 large size waffles to assemble the sandwiches. Once the waffles are golden, remove from the iron. Allow to cool and split them horizontally. Keep the waffles warm in a low oven, if necessary.
  • Heat about 3-inches of peanut oil to 375 degrees F in a large enamel or cast iron Dutch oven.
  • Place flour in a small bowl. In another bowl, mix panko and Cajun seasoning. In a third bowl, mix hot sauce, egg, and water. Remove the tough tendon from each tenderloin. Roll each tender in flour, then in egg mixture, then in panko mix. Fry immediately until the tenderloins are cooked through and golden brown, about 3 to 5 minutes. Season with salt and pepper, to taste. Set aside or keep warm in a low oven.
  • In a medium bowl, mix mayonnaise, maple syrup, mustard powder, and horseradish.
  • To assemble the sandwiches: Lay 1/2 of the waffle bottom on an ovenproof plate; top with the 3 chicken tenders, 3 slices of bacon, and 2 slices of Cheddar. Broil the sandwich for a few minutes until the cheese melts. Spread about 3 tablespoons of the maple mayonnaise on the top waffle, and place on the sandwich.
