CHICKEN SALAD MY WAY
My mom really likes the DC Chicken Salad at Corner Bakery, so I came up with a copy that tastes as good as the real thing. Enjoy!

Steps:
- Place the 1-inch piece of ginger and star anise in a pot of water over medium-heat and bring to a boil. Add chicken to the water. Lower heat to medium-low; simmer until chicken is no longer pink the middle, 10 to 12 minutes. Remove to a plate to cool. Once cool to the touch, dice into bite-sized pieces.
- Make a dressing by whisking together the mayonnaise, salt, pepper, paprika, and honey; set aside.
- Combine the diced chicken, celery, apple, onion, raisins, walnuts and 2 teaspoons minced ginger in a bowl. Drizzle dressing into the chicken mixture; stir until pieces are evenly coated. Cover and refrigerate overnight.

MY WAY CREAMY SAUCE - CHICKEN CASSEROLE
This is my husband's favorite casserole and mine too. I always bake two extra chicken breast just so I can make this casserole. You can add a cooked fresh green veggie if you like to the casserole, but we prefer it plain and simple... and so do children. Instead have a nice green salad, veggie on the side and some garlic bread.

Steps:
- In a sauce pan combine all ingredients except the sour cream and linguine pasta.
- Stir several times over medium/low heat until the cheese is melted.
- Remove from heat and add the sour cream and blend well.
- NOTE: You can add fresh cooked veggies and your special spices at this time.
- In a bowl blend together the pasta and 1/2 of the sauce and pour into a 9X13 baking dish.
- Set aside the other 1/2 sauce and cover with a lid.
- Bake at 375 degrees for 20-25 minutes.
- Note: The extra sauce is to be served warmed up in a bowl or individual small bowls and used like a gravy spooned over the finished casserole servings.
- Sprinkle of grated Parmesan is always a nice touch.
CHICKEN SHWARMA, MY WAY.
A very popular middle eastern dish. Traditionally cooked rotisserie style, this method allows you to recreate the flavor and texture on a much more economical and smaller scale.

- Cut the chicken breasts, into long, slim strips, then into lengths that are about an inch long.
- Put them into a bowl, and allow them to marinate in the lemon juice and rind, olive oil, crushed and diced garlic, yoghurt, tomato paste, salt, pepper and spices.
- Allow 24 hours for the flavors to develop. [ i know it seems like a long wait, but it'll be worth it].
- The following day, remove and drain the chicken pieces from the marinade, and saute them for 10 minutes.
- Serve hot as a mezze or for sandwiches along with thinly sliced onions, deseeded tomato, pickles, and fresh baked pita.
DAD'S ROAST CHICKEN -- MY WAY WITH A PARSLEY LEMON JUICE OIL
My dad's roast chicken is really simple. He stuffs a whole chicken with fresh herbs and seasons it with salt and pepper, then pops it in the oven. My version, which uses chicken that's already cut into serving pieces instead of a whole chicken, is less work and cooks a lot faster and more evenly. I've also spruced up the flavor with some grated lemon rind and finish it off with a fresh, colorful and tangy oil for drizzling over the finished chicken. Dad ? your chicken's good but I may have one up on you on this one!

- Preheat the oven to 400 degree F.
- Trim off any excess skin or fat from the chicken. Cut off and discard the wing tips. Place the chicken pieces in an 11 by 13-inch baking pan, or any pan that that they fit in without crowding. Season the chicken pieces generously with salt, pepper, olive oil, the herbs, and the lemon zest. Toss through all the seasonings and then arrange the chicken piece skin side up in the pan. You can season the chicken pieces and set them up in the roaster up to a day before you cook them. Cover the pan with plastic wrap and refrigerate.
- Roast until the skin is nicely browned and there is no pink near the thigh bone and the juices run clear, about 35 to 40 minutes. Check both white meat and dark meat. If the white meat is done before the dark meat, take it out and set it on the serving plate until the dark meat is done.
- For the parsley drizzle, wash and dry the parsley. Remove the leaves from the stems and chop the leaves finely. Combine the remaining ingredients in a bowl and use immediately to garnish the roast chicken.
PARTY CHICKEN, MY WAY
My version of a dish my mom used to make. Serve over buttered noodles or rice with a veggie. I like to add a dried habenero to the sauce because we like everything to be spicy!

Steps:
- Place chicken in a greased 2 quart or 13x9 casserole baking dish. Season with salt and pepper.
- In a medium bowl, combine sour cream, soup, parsley, and garlic powder. Combine well. Season with salt and pepper to taste.
- Pour sour cream sauce over chicken.
- Bake at 350 degrees for 45 minutes to an hour, covered.
- Top chicken with fried onions and bacon. Bake, uncovered, 5-10 more minutes or until onions are golden brown.

- Take chicken cutlets pound them thin. Place grilled pepper, mozzarella, & asparagus, in center of cutlet season it with salt and pepper and roll it. Secure it with a tooth pick to hold it together and wrap a slice of bacon around the outside of rolled cutlet. Bake at 350 for 50-60 mins. Enjoy!
