KETO MUFFULETTA CHICKEN

Number Of Ingredients 20

1 1/2 pounds chicken breasts (4 breasts total)
1/4 cup butter (1/2 stick)
4 ounces salami, thinly sliced
4 ounces provolone cheese, sliced
4 ounces mortadella, thinly sliced
4 ounces mozzarella cheese, sliced
4 ounces capocollo, thinly sliced
2 cups Olive Salad (Recipe Below)
1 1/2 cups giardiniera pickled vegetables
1 cup green olives
1 cup Kalamata olives
1/2 cup pepperoncini
1/3 cup red wine vinegar
1/4 cup roasted red peppers
1/4 cup olive oil
4 large cloves garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper
1/2 cup capers

Steps:

  • In a large skillet over medium-high heat, pan-sear the chicken breasts in the butter until they are golden brown and slightly crispy, about 8 minutes each side.
  • Preheat the oven to 350°F
  • Place the chicken breasts on a rimmed baking sheet. Layer each breast with the salami, provolone, mortadella, mozzarella and capocollo. Bake on the middle rack for 10 minutes.
  • Remove the chicken breasts from the oven and top with a heaping portion of Olive Salad.
  • In a food processor, combine the giardiniera, green olives, Kalamata olives, pepperoncini, red wine vinegar, roasted red peppers, olive oil and garlic. Pulse until all the ingredients are roughly chopped.
  • Pulse in the oregano, basil and black pepper until incorporated.
  • Stir in the capers. Cover and refrigerate for at least 1 hour before serving.

1/2 cup pitted green and/or ripe olives, finely chopped
1 jar (4 oz) sliced pimientos, drained and finely chopped
1 clove garlic, finely chopped
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon crushed dried oregano leaves
1 (8-inch) round Italian bread loaf (about 1 1/4 lb)
4 oz sliced provolone cheese
4 oz thinly sliced cooked chicken breast (from deli)
4 oz sliced Genoa salami

Steps:

  • In small bowl, stir together olive salad ingredients.
  • Cut loaf of bread horizontally in half. Scoop out soft center from top and bottom of loaf, making room for the filling and leaving a 3/4-inch shell. Using tablespoon, scoop out or drain off 2 tablespoons liquid oil and vinegar dressing from olive salad, and drizzle over inside of bottom half of bread. Spread remaining olive salad mixture inside top half of bread.
  • Layer cheese, chicken and salami in bottom half. Cover with top of loaf; wrap well with plastic wrap. Place loaf on plate; cover with another plate and then a heavy weight, such as a large can. Refrigerate 1 to 6 hours.
  • To serve, cut sandwich into 6 wedges.

3/4 cup olive oil

Steps:

  • In a large bowl, combine the first 14 ingredients. Cover and refrigerate at least 8 hours. , Cut bread in half horizontally; carefully hollow out top and bottom, leaving a 1-in. shell (discard removed bread or save for another use). Spoon half the olive mixture over bottom half of bread. Layer with salami, ham, mortadella, Swiss and provolone; top with remaining olive mixture. Replace bread top. Wrap tightly. Refrigerate at least 3 hours or overnight. Cut into 8 wedges.

1 teaspoon dried oregano
1/3 cup olive oil
10 large pitted green olives, chopped
1/3 cup pitted, chopped kalamata olives
1/4 cup chopped roasted red bell peppers
Salt and freshly ground black pepper
1 (1-pound) round bread loaf (about 7 inches in diameter and 3 inches high)
4 ounces thinly sliced ham
4 ounces thinly sliced mortadella
4 ounces thinly sliced salami
4 ounces sliced provolone
1/2 red onion, thinly sliced
1 1/2 ounces arugula leaves

Steps:

  • Whisk the first 3 ingredients in a large bowl to blend. Gradually blend in the oil. Stir in the olives and roasted peppers. Season the vinaigrette, to taste, with salt and pepper.
  • Cut the top 1-inch of the bread loaf. Set the top aside. Hollow out the bottom and top halves of the bread. Spread some of the olive and roasted pepper mix over the bread bottom and cut side of the bread top. Layer the meats and cheeses in the bread bottom. Top with the onions, then the arugula. Spread the remaining olive and roasted pepper mix on top of the sandwich and carefully cover with the bread top. You can serve the sandwich immediately or you can wrap the entire sandwich tightly in plastic wrap and place in the refrigerator a day before serving.
  • Cut the sandwich into wedges and serve.

1 cup mixed pitted olives, chopped
1/4 cup mayonnaise
1/4 cup spicy cherry peppers, chopped
1 tablespoon red wine vinegar
1/2 teaspoon dried oregano
3 green onions, thinly sliced
Kosher salt and freshly ground black pepper
One 12-ounce/12-count package Hawaiian bread rolls
1 cup thinly sliced iceberg lettuce
1 teaspoon olive oil
1/2 teaspoon red wine vinegar
6 ounces sliced salami
6 ounces soppressata
6 ounces prosciutto
6 ounces sliced mortadella
6 ounces thin deli-sliced roast beef
6 ounces provolone, sliced
6 ounces mozzarella, sliced

Steps:

  • For the spicy olive spread: Mix together the pimientos, olives, mayonnaise, peppers, vinegar, oregano, green onions, salt and pepper in a bowl until well combined. Set aside.
  • For the sandwiches: Without separating the rolls, slice the entire top off the set of Hawaiian rolls. Place the bottoms on a baking sheet.
  • Lightly dress the iceberg in the olive oil and vinegar, then set aside.
  • Smear the spicy olive spread on the bottom half of the rolls. Next, layer on half the meats and cheeses. Top with the iceberg, followed by the remaining meats and cheeses. Finally replace the top half of the rolls.
  • Wrap with plastic wrap or foil and place in the fridge for at least 2 hours or up to 24. Remove to a cutting board, then slice the rolls and serve.

1/4 cup sherry vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
1 red onion, diced
2 cups each pitted picholine and cerignola olives, coarsely chopped
1 cup roughly chopped piquillo peppers
1 bunch flat-leaf parsley, leaves roughly chopped
1/4 cup chopped fresh oregano leaves
Kosher salt
Freshly ground black pepper
1 muffaletta or small round Italian loaf
2 ounces each thinly sliced Genoa salami, hot soppresata, Salchicon de vic or other dry salami, and serrano ham
2 ounces thinly sliced aged Manchego cheese

Steps:

  • Whisk together the mayonnaise, vinegar, mustard and honey in a large bowl. Add the onion, olives, peppers, parsley and oregano; toss, and season, to taste, with salt and pepper.
  • Slice the bread in half and pull some of interior from the top half. Spread some of the olive salad on each half. You will probably have some salad left; it holds well in the refrigerator.
  • Layer the meat and cheese on the bottom half, alternating layers of each meat with thin layers of cheese. Cover with the top half, press gently, slice, and serve.

These gigantic sandwiches were invented a century ago at Sicilian Deli here in New Orleans. The spicy, tangy olive salad is what really sets this meat and cheese sandwich apart. A genuine muffuletta should be made on oven-fresh Italian bread topped with sesame seeds. Be sure and use the highest-quality ingredients available; it really makes a difference! Since you're going to all the trouble of making the olive salad, consider doubling the recipe so you'll have some extra waiting around for when you get another muffuletta craving -- it keeps for at least a month! Note: Use round bread loaves for real muffuletta.

Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight.
  • To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella, mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters.
  • Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread.

2 1/2 teaspoons salt
1 lb small shell pasta or 1 lb other small dry pasta
1/2 lb bulk salami, cut into 1/4 inch dice
1 lb bulk provolone cheese, cut into 1/4 inch dice
1/2 lb bulk mortadella, ham, cut into 1/4 inch dice
1/2 lb bulk boiled ham, cut into 1/4 inch dice
20 pitted jumbo black olives, sliced
20 large pimento-stuffed green olives, sliced
1/4 cup minced onion
1/2 cup celery, diced
1 cup fresh parsley leaves, chopped
1/4 cup fresh thyme leave
1 cup extra virgin olive oil
6 tablespoons cider vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce (to taste)
1 tablespoon fresh garlic, minced
1 teaspoon pepper, freshly ground

Steps:

  • Combine water and 1 teaspoon salt in a large saucepan and bring to a boil over high heat.
  • Add pasta and cook uncovered, stirring occasionally until tender, about 6-8 minutes.
  • Remove from heat and drain.
  • Rinse with cold water and drain again.
  • In a larger bowl, combine pasta,salami,provolone,mortadella, boiled ham, olives,onion,celery,parsley, and thyme.
  • In a small bowl, whisk together vinegar,worcestershire,hot sauce,garlic,pepper, and 1/2 teaspoon of the salt.
  • Then, gradually whisk in the olive oil.
  • Pour over salad mixture and add remaining 1 teaspoon of salt.
  • Toss to mix well.
  • Store in an airtight container in the refrigerator for at least eight hours before serving.

  • To make the dressing, whisk together the vinegar, pickled peppers, garlic, salt and black pepper in a medium bowl. Whisk in the olive oil, kalamata olives and pimento olives.
  • To make the salad, toss romaine with the mozzarella or bocconcini, mortadella, ham, salami, provolone and croutons. Pour the dressing over the salad and toss to combine well.
  • Serve immediately.
