2 cups sliced fresh mushrooms
1/4 cup butter, divided
2 teaspoons minced garlic
2-1/4 cups hot water
1/4 cup Marsala wine or chicken broth
1 envelope (4.3 ounces) fettuccini and chicken-flavored sauce mix
4 boneless skinless chicken breast halves (4 ounces each)
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
2 tablespoons sour cream

Steps:

  • In a large saucepan, saute mushrooms in 2 tablespoons butter for 4-5 minutes or until tender. Add garlic; cook 1 minute longer. Add water and wine. Bring to a boil; stir in pasta mix. Reduce heat; simmer, uncovered, for 10 minutes or until pasta is tender. , Meanwhile, flatten chicken to 1/2-in. thickness. In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet, cook chicken in oil and remaining butter over medium heat for 4-5 minutes on each side or until no longer pink. Remove pasta mixture from the heat. Stir in sour cream. Serve with chicken.

This classic Italian-American chicken recipe includes tender, perfectly pan seared chicken cutlets, and flavor enhancing browned mushrooms, and it's all covered with a richly seasoned marsala wine, garlic and herb sauce.

1 1/4 cups dry marsala wine*
1 1/4 cups unsalted chicken broth
2 (10 - 11 oz) boneless skinless chicken breasts, (butterflied and halved, pounded to an even thickness)
Salt and freshly ground black pepper
1/3 cup all-purpose flour
2 Tbsp unsalted butter
2 Tbsp olive oil
8 oz. cremini mushrooms, (sliced)
3 garlic cloves, (minced (1 Tbsp))
1 tsp minced fresh thyme ((or scant 1/2 tsp dried))
1 tsp minced fresh oregano ((or scant 1/2 tsp dried))
1 1/2 tsp cornstarch (whisked with 1 Tbsp chicken broth (in a small bowl until well combined))
1/3 cup heavy cream
1 Tbsp minced fresh parsley

Steps:

  • Add marsala wine and chicken broth to a medium saucepan. Heat over medium-high heat, bring to a boil, then reduce heat to medium and let gently boil until reduced to 1 cup**, about 15 minutes.
  • Meanwhile season both sides of chicken with salt and pepper. Dredge each side in flour.
  • Melt 1 Tbsp butter with 1 Tbsp olive oil in a 12-inch skillet over medium-high heat. Add chicken pieces and let sear until cooked through (165 in center), turning once halfway through, about 10 - 12 minutes.
  • Transfer chicken to a plate. Tent with foil.
  • Reduce burner temperature to medium heat. Melt remaining 1 Tbsp butter with 1 Tbsp olive oil, add mushrooms.
  • Sauté mushrooms, just tossing occasionally (and increasing burner temp slightly as needed to encourage browning), until mushrooms have shrunk and are golden brown, about 8 minutes. Add garlic during last 1 minute of sautéing.
  • Remove pan from heat then pour in marsala reduction***, thyme and oregano.
  • Return to heat, bring to a simmer, while scraping up browned bits from the bottom, then stir in cornstarch chicken broth mixture. Stir until thickened****.
  • Off heat stir in heavy cream, season sauce with salt and pepper to taste. Return chicken breasts to pan, spoon sauce over top.
  • Sprinkle with parsley and serve immediately.

Creamy Chicken Marsala Pasta is a delicious twist on a classic Italian dish. It is so easy to make and ready in 30 minutes.

1 lb. fresh boneless skinless chicken breasts (cut into bite-sized pieces.)
8 oz. fresh sliced mushrooms
2/3 cup marsala wine
3 tablespoons olive oil (divided)
5 tablespoons unsalted butter (divided)
1 tablespoon minced garlic
1 1/2 cups heavy cream
1 1/2 cups finely grated parmesan cheese
1/4 teaspoon garlic powder
salt and pepper (to taste)
12 oz. pasta
1 tablespoon fresh chopped parsley (Optional garnish)

Steps:

  • Cut the chicken into bite-sized pieces. Season the chicken with salt, pepper and garlic powder. Lightly season the sliced mushrooms with salt and pepper.
  • While you are making the creamy chicken marsala, boil your pasta according to the package instructions and drain when finished. Make sure that you add salt to your pasta water.
  • In a large saute pan, heat 2 tablespoons of olive oil over medium heat. Cook the chicken pieces, stirring for even browning until fully cooked, for about 8 minutes but times may vary. Transfer the cooked chicken to a plate and tent with foil to keep warm. Do not wipe the pan down.
  • In the same pan, add 1 tablespoon of olive oil over medium heat, melt in 2 tablespoons of butter. Add the seasoned sliced mushrooms to the pan and saute for 8 minutes, stirring occasionally, until they are golden. Transfer the sauteed mushrooms to the plate with the cooked chicken. Tent with foil to keep warm.
  • Use the same pan to make the sauce, do not wipe it down. Add the marsala wine to the pan to deglaze it, scraping up the browned bits, and simmer for about 2 minutes. Add the last 3 tablespoons of butter and minced garlic to the pan. Cook for about 1 to 2 minutes, or until the butter is completely melted and the garlic is fragrant, whisk to combine. Stir in the heavy cream and bring to a simmer. Keep at a simmer for 5 minutes. Reduce the heat to low then add the parmesan cheese to the pan and whisk quickly to combine, just heating through.
  • Stir in the cooked pasta, then return the chicken and mushrooms to the pan. Stir to combine until just heated through. Transfer to a serving dish and garnish with fresh parsley and extra cheese if you would like. Serve hot and enjoy!

2 pounds boneless skinless chicken breasts, cut into thin strips, divided

1 cup Marsala wine

1 cup grated Parmesan cheese
1 cup 2% milk
1 envelope creamy pesto sauce mix
1 tablespoon minced fresh basil
1 tablespoon minced fresh parsley

Steps:

  • Cook pasta according to package directions. In a Dutch oven, heat 1 tablespoon oil over medium-high heat. Add half of the chicken; cook and stir until no longer pink; remove from the pan. Repeat with remaining oil and chicken; remove from the pan., Add garlic and lemon zest to the same pan; cook and stir for 30 seconds. Add wine and lemon juice, stirring to loosen browned bits from the pan. Bring to a boil; cook until liquid is reduced by half. Stir in the cheese, milk and sauce mix. Add chicken; cook until sauce is slightly thickened., Drain pasta; add to chicken mixture and toss to combine. , Sprinkle with herbs.

¼ cup all-purpose flour
salt and ground black pepper to taste
2 pounds chicken tenders
2 tablespoons olive oil
2 tablespoons butter
½ cup Marsala wine
½ cup chicken stock
1 cup heavy whipping cream
1 teaspoon ground mustard

Steps:

  • Mix flour, salt, and pepper in a shallow dish. Press chicken tenders in the flour to coat completely; shake gently to remove any excess flour.
  • Heat olive oil in a large skillet over medium, tilting the pan to coat the cooking surface in oil. Melt the butter in the skillet. Cook the chicken tenders in the hot butter until evenly browned, 7 to 8 minutes.
  • Pour the Marsala wine into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon; cook until the wine is hot, about 30 seconds. Pour chicken stock into the skillet.
  • Stir heavy cream and mustard together in a bowl; add to the skillet. Bring the mixture to a simmer and cook another 10 minutes.

I got this recipe from my roommate who had grown up with it. I try not to eat much meat but the sauce alone over rice or pasta is to die for. It is such a great mixture of savory, earthy, salty and a tiny bit sweet.

1 3/4 cups reduced-sodium chicken broth (14 oz)
2 tablespoons finely chopped shallots
5 tablespoons unsalted butter
10 ounces mushrooms, trimmed and thinly sliced
1 1/2 teaspoons finely chopped sage
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup all-purpose flour
4 skinless chicken breast halves (2 lbs total)
2 tablespoons olive oil
1/2 cup plus 2 tablespoons dry marsala wine
2/3 cup heavy cream
1 teaspoon fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 200°F.
  • Bring broth to a boil in a 2 quart saucepan ver high heat then boil, uncovered, until reduced to about 3/4 cup, about 20 minutes.
  • Cook shallot in 3 T butter in a 8-10 inch heavy skillet over medium heat, stirring, until shallot begins to turn golden, about 1 minute Add mushrooms, 1 tsp sage, salt and pepper and cook, stirring occasionally until liquid mushrooms give off is evaporated and they begin to brown, 6-8 minutes. Remove from heat.
  • Put flour in a wide shallow bowl. Gently pound chicken to 1/4 inch thick between 2 sheets of plastic wrap using the flat side of a meat pounder or a rolling pin.
  • Pat chicken dry and season with salt and pepper, then dredge in flour, 1 piece at a time, shaking off exess.
  • Heat 1 T each of oil and butter in a 10-inch heavy skillet over medium-high heat until foam subsides, then saute half of the chicken, turning over once, until golden and just cooked through, about 4 minutes total. Transfer cooked chicken to a large ovenproof platter, arranging in one layer, then put platter in oven to keep warm. Wipe out the skillet and cook remaining chicken in same manner, then transfer to oven, arranging in one layer.
  • Without cleaning, add 1/2 cup wine to skillet and boil over high heat, stirring and scraping up brown bits, about 30 seconds. Add reduced broth, cream and mushrooms, then simmer, stirring occasionally, until sauce is slightly thickned, 6-8 minutes. Add lemon juice and remaining 2 T wine and 1/2 tsp sage.
  • Serve chicken on top of rice or pasta with sauce poured over.
