SAUTEED CHICKEN LIVERS
Chicken livers have always been a staple on my diet, from when I was a little girl.I have combined a few recipes with my own and I came up with this one. I hope you enjoy them as much as I do They are comfort food for me!.;)

Steps:
- Season livers with 3 Tablespoons of the flour and salt and pepper, to taste.
- Saute chicken livers in 2 Tablespoons butter, 5 minutes or until brown but still pink inside.
- Remove livers, and drain on paper towels, reserving drippings in skillet.
- Add other tablespoon butter, if necessary.
- Saute mushrooms, onions and celery in drippings until golden brown.
- Stir in flour(I guessed at the amount - use little by little) salt & pepper with broth.
- Add Sherry, parsley and wocesterhsire sauce; bring to a boil.
- Add more flour if necessary, but remember to mix it with some liquid first, so that there won't be any lumps.
- Reduce heat to a simmer and cook for 5 minutes, stirring often.
- Add chicken livers, simmer 3-5 additional minutes.
- Serve over fluffy white rice (sprinkled with bacon) or.
- Basmatti rice, sprinkled with chopped parsley (sprinkled with bacon) or.
- Buttered broad noodles with peas*.
- *Broad buttered noodles: boil noodles according to package instructions, drain and coat with butter, salt & pepper and combine with 1/4 cup frozen peas (defrosted).
CHICKEN LIVER TURNOVERS
Shortly after I bought some pocket cutters to make turnovers (cuts on one side and then you use the other side to seal the turnovers), I created this recipe as a tasty way to eat chicken livers...which I love. Feel free to subsitute your favorite pie crust for the store bought mix.

Steps:
- In a bag, combine flour, salt and pepper.
- Shake chicken livers, a few at a time, in bag to coat with seasoned flour.
- Melt butter in medium skillet, then saute livers, turning until browned and insides are no longer pink (about 10 minutes).
- Remove livers and chop.
- In the same skillet, saute onion until tender, about 3 minutes. Remove from heat.
- Add cheese, rosemary and liver, stirring to combine.
- Preheat oven to 400 degrees.
- Make piecrust as package label directs (or your own favorite piecrust).
- On a lightly floured surface, roll pastry 1/8 inch thick.
- Use medium pocket cutter to cut dough (or a round doughnut sized cookie cutter).
- Place 1-2 tablespoons of liver mixture in center of dough, fold over dough and seal edges.
- NOTE: If you want a golden crust, brush top with beaten egg before baking.
- Bake on an ungreased cookie sheet for 20 minutes or until lightly browned.
- NOTE: These turnovers freeze really well. Place in a ziplock storage back in freezer and remove the turnovers as you want to make them. Place frozen turnovers on a cookie sheet or low sided pan and bake in a 350-400 degree oven for 20-30 minutes until hot. I usually throw them into the oven with whatever else I am cooking, so the temperature & time varies.

- Preheat oven to 350°F.
- In a large mixing bowl combine softened cream cheese, milk, salt, pepper, pimento, green onion and chopped chicken.
- Separate rolls into 4 6-inch squares.
- Spoon 1/4 of the mixture into each square.
- Bring corners together and seal.
- Place on ungreased cookie sheet.
- Brush with melted butter and sprinkle with seasoned bread crumbs.
- Bake for 20-25 minutes.

EASY CHICKEN TURNOVERS
I adopted this recipe from the Recipezaar account as I am always on the look out for make ahead recipes. I think these will freeze well and I look forward to trying that. Steps:
- Heat oven to 375°F.
- Mix soup, chicken, cheese, and salt and pepper in small bowl.
- Roll or pat each biscuit into 5inch circle and place about 1/4cup filling on each circle.
- Wrap dough around chicken and press the edges to seal.
- Place on ungreased cookie sheet and top with butter and bread crumbs.
- Bake at 375 for 20-25 minutes, or until golden brown and enjoy!
CHICKEN LIVERS WITH ONION
Chicken liver and onions sautéed in butter. A simple dish from my Polish grandma's recipe book.

Steps:
- Melt one third of the butter in a skillet over medium heat. Chop the onion and add it to the pan. Sautée the onion until soft, about 3 minutes. Lower the heat to medium-low, add the water and cover the pan. Let the onion swell.
- In the meantime, prepare the chicken livers. Trim off any spleens if present. Cut the larger chunks to make all the pieces about the same size. Coat in flour all the livers.
- Add the remaining butter to the pan, return the heat to medium-high and add the floured liver. Turn the livers often to ensure they get cooked through. Liver will release a reddish liquid while cooking, make sure to cook it all off. When it has stopped "bleeding" it should have cooked through - check one of the thickest pieces by cutting it in half.
- When completely cooked through, remove from the heat and serve with a sprinkle of salt flakes on top.

- Sauce:.
- Mix together Sauce ingredients above, EXCEPT chicken broth and cornstarch.
- Bake 3lbs chicken breasts, with bones, in the sauce at 425 for 30 minutes.
- Separate sauce and save it aside.
- Cube chicken (should have ~ 3 cups).
- Turnovers:.
- Roll out pastry sheets and cut into triangles.
- Fill in center with chicken mixture.
- Fold closed and pinch edges tightly.
- Mix egg with some water.
- Brush each pastry top with mixture of egg and water.
- Bake 425 for about 18 minutes.
- Sauce, part two:.
- Add chicken broth to the sauce that the chicken was cooked inches.
- Mix a bit of water with cornstarch and add to sauce to thicken as desired
- Serve with sauce.

- Prepare all ingredients before starting to cook. Clean livers by separating into lobes, then trim off all fat and connective tissue. Rinse, then pat dry.
