EASY BLEU CHEESE CHICKEN



Easy Bleu Cheese Chicken image

I made this up to get rid of some aging bleu cheese dressing, but it turned out absolutely delicious and it was so easy to make! You can use more or less bleu cheese dressing depending on how oily a dish you want this to be; I made it the first time with an entire bottle but that was a bit excessive.

1/2 cup bleu cheese salad dressing
1 cup Italian style breadcrumbs
4 chicken breast halves or 6 chicken thighs

Steps:

  • Preheat oven to 400°F
  • Skin and debone chicken if necessary.
  • Place bleu cheese dressing and breadcrumbs in separate, shallow containers.
  • Dip chicken pieces in bleu cheese; then dredge in bread crumbs until thickly coated.
  • Place in greased glass baking pan; pour any remaining bleu cheese dressing and bread crumbs over top.
  • Bake at 400°F for 20 minutes.

1 cup chicken, cooked and shredded
12 -16 phyllo dough, shells (I prefer Kataifi, which is shredded phyllo)
3 tablespoons blue cheese (or blue cheese dressing)
3 tablespoons green onions, sliced (or sliced leeks)
hot sauce (I like Sriracha) (optional)

Steps:

  • Bake your shells. I call them nests since I use the Kataifi.
  • Place 1 tablesppon of chicken in each shell.
  • Crumle blue cheese on top or drizzle if using dressing.
  • Garnish with green onions or leeks.
  • One variation I like is to drizzle Recipe #481797 on top and then place a slice of mango on top.
  • Make your own flavor variations!

Chef Pierre Franey: This dish, like so many I have created over the years, came about by accident. One day while cooking with Craig Claiborne, I asked our kitchen assistant to hand me some cheese, thinking we had some Gruyere. Instead, he handed me a quarter pound of blue cheese. My first reaction was negative, but on second thought I said, "Why not?" I was very pleased with the result.

4 boneless skinless chicken breast halves (about 1 1/2 pounds)
salt, to taste if desired (optional)
fresh ground pepper, to taste
3 tablespoons butter
1 tablespoon flour
1/2 cup canned chicken broth
1/2 cup milk
1/4 cup heavy cream
1/4 lb blue cheese
4 slices of thinly sliced cooked ham (about 1/4 pound)
1/4 cup finely chopped onion
1/4 cup dry white wine

Steps:

  • Sprinkle the breast halves with salt and pepper.
  • Heat 2 tablespoons butter in a heavy skillet large enough to hold the chicken in one layer over medium-high heat. Add the chicken and brown lightly on one side. Turn and continue cooking about 5 minutes or until cooked through. Remove the pieces and keep warm.
  • Meanwhile. Heat the remaining 1 tablespoon of butter in a saucepan and add the flour, stirring rapidly with a wire whisk. Add the broth and milk, and continue stirring rapidly. Add the cream and cook, stirring often, about 5 minutes. Add the cheese and stir until melted.
  • Add the ham slices to the skillet in which the chicken pieces cooked and saute briefly on both sides just enough to heat through. Transfer the slices to a heated serving dish and cover each slice with a piece of chicken breast.
  • Add the onion to the skillet and cook, stiffing until wilted. Add the wine and stir to dissolve the brown particles that cling to the bottom and sides of the skillet. Stir in the cheese sauce.
  • Place a sieve over a small saucepan and strain the sauce, stirring and pushing down with a plastic spatula to press through as much of it as possible. There should be about 1 1/3 cups of sauce.
  • Pour the sauce over the chicken pieces and serve hot.

For a request. This recipe is by Ana Sortun. I often make my own syrup by boiling 1 cup honey (I believe Greek thyme honey is the best, and if you can get it, go for it!), 1/2 cup sugar and 2 cups water with 1 stick of cinnamon for 10 minutes.

1/2 package shredded phyllo dough, also called kadafi
8 tablespoons melted butter
1 1/2 tablespoons milk
1/4 lb fresh buffalo mozzarella, grated
12 ounces ricotta cheese
1/2 cup ground pistachios
2 tablespoons confectioners' sugar
1/8 teaspoon grated fresh nutmeg
3 cups water
1 1/2 cups sugar
1 tablespoon lemon juice
3 -5 drops rose water

Steps:

  • Preheat oven to 375ºF.
  • Place kadafi in a food processor and chop up finely.
  • Add butter and milk and line a 8 inch square heavy baking dish with half of this mixture.
  • Mix the cheeses with the pistachios, sugar& nutmeg and spread onto shredded filo.
  • Top with the remaining shredded pastry.
  • Bake for 45 minutes.
  • Make a sugar syrup by boiling water with sugar and lemon juice.
  • Cook until reduced by a third and it becomes nice and thick.
  • Stir in rose water to taste.
  • When kunefe comes out of the oven, ladle 2/3 of the hot syrup over it and save the rest to pass while eating.
  • Serve hot.

These are simple, delicious and pefect for Super Bowl Sunday or any party! My family and friends always rave about them, sometimes I have to make an extra batch because they go so fast. You don't have to use a rotisserie chicken, but it sure cuts back on the time. If you don't like things too spicy, you can always cut back on the hot sauce and green onions.I like to use peanut oil for frying. They freeze well too. Making the dip ahead of time, then placing in fridge, allows the flavors to marry well. Bring it back to room temp to serve. This is adapted from a Food Network Show, Big Daddy's House. 1 store-bought rotisserie-cooked chicken
1/4 cup hot sauce (recommended Frank's Red Hot)
1 teaspoon ground black pepper
1 3/4 cups sharp cheddar cheese, grated
1/2 cup thinly sliced green onion, green tops as well
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups panko breadcrumbs
vegetable oil, for frying
1 1/2 cups mayonnaise
1/2 cup packed blue cheese, crumbled
1/2 teaspoon hot sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 lemon, juiced
1 teaspoon minced garlic

Steps:

  • Have oil heated to 350 degrees F.
  • Pick the meat from the chicken and discard the skin, then dice.Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and green onions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
  • Place the flour, eggs, and Panko crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
  • When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Drain on paper towels.
  • To make the dip, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

1 ½ (8 ounce) packages cream cheese, softened
1 cup crumbled blue cheese
1 egg
2 cups bread crumbs
2 skinless, boneless chicken breasts, halved and pounded into 1/2-inch thickness
3 cups cooked white rice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir cream cheese and blue cheese together in a bowl. Beat egg in a separate bowl. Pour bread crumbs into a third shallow bowl.

100 g blue cheese
1/3 cup brandy
2 tablespoons dill

  • Season the ckicken with salt and pepper. Add the olive oil and marinate chicken for 30 minutes.
  • Grill or broil the chicken until done. (15-20 minutes).

3 cups sugar
2 tablespoons fresh lemon juice
1 3/4 cups water
3 cups finely chopped walnuts (a combo of walnut, & almonds can be used)
1 lb butter, melted
1 teaspoon cinnamon (or to taste)
1 teaspoon freshly grated nutmeg (or to taste)
1 (1 lb) box shredded wheat pastry dough, thawed

Steps:

  • Oven at 350ºF.
  • Butter a 9x13" baking pan lined with foil to make removing the pastry easier.
  • Combine sugar, water & lemon juice in a
