A simple red wine sauce with brown sugar, garlic, paprika, salt, and pepper makes this dish simply yummy! Braised chicken breasts, brazenly good taste.

1 tablespoon olive oil
1 tablespoon minced garlic
3 pounds skinless, boneless chicken breast halves
1 tablespoon paprika
1 cup brown sugar
1 cup red wine
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium high heat. Cook garlic in oil until tender. Place chicken in the skillet, and cook about 10 minutes on each side, until no longer pink and juices run clear.
  • Drain oil from skillet. Sprinkle chicken with paprika and 1 cup brown sugar. Pour red wine around chicken. Cover, and simmer about 15 to 20 minutes; lightly baste chicken with wine sauce while cooking. Season to taste with salt and pepper.

This recipe comes from El Salvador, and is very similar to the Latin American dish "arroz con pollo". However, with arroz con pollo the rice is cooked with the chicken, where this dish does not have rice cooked in it. If you wish, you may serve it over rice.

2 1/2-3 lbs chicken pieces
2 tablespoons cooking oil
1 medium onion, chopped
3/4 cup dry red wine
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground coriander
1/8 teaspoon ground red pepper
1 large green pepper, chopped
12 dried prunes, pitted and halved
12 pimento stuffed olives
1/4 cup tomato paste
2 tablespoons capers

Steps:

  • Rinse the chicken pieces; pat dry with paper toweling. In a large skillet over medium heat, brown the chicken pieces in hot oil on all sides for 15 minutes. Remove the chicken from the skillet.
  • Add the onion to the drippings in the skillet; cook until tender but not brown. Drain off the fat. Return the chicken to the skillet.
  • Combine wine, vinegar, Worcestershire sauce, salt, garlic powder, coriander, and red pepper. Pour over the chicken in the skillet. Bring to a boil; reduce heat. Cover and simmer for 25 minutes.
  • After 25 minutes, stir in green pepper, prunes, olives, tomato paste, and capers. Cover and simmer about 20 minutes more or till the chicken is tender. Skim off the fat. Transfer chicken and sauce to a heated serving platter and enjoy!

This is a surprisingly easy Central American dish to create. My wife, one of my toughest critics, loves this simple chicken and sauce combo.

2 tablespoons butter
2 tablespoons olive oil
4 onions, thinly sliced
3 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1 dash hot pepper sauce
1/2 cup grape juice
1 teaspoon red wine vinegar
1 tablespoon Italian parsley
1/2 teaspoon dried mint
2 lbs chicken breast tenders

Steps:

  • In a big skillet, melt the butter and olive oil. Sauté the onion until soft and golden.
  • Blend the Worcestershire and hot sauces into the grape juice and vinegar. Add to the sautéed onions along with the tomato paste and herbs.
  • Simmer over very low heat until the flavors blend.
  • Grill or broil the chicken separately and mix with the sauce. Heat through and serve.

1 teaspoon plus 2 tablespoons butter, divided
1/2 cup sliced almonds
2 tablespoons all-purpose flour
3/4 teaspoon salt
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
4 boneless skinless chicken breast halves (6 ounces each)
1/2 cup white wine or reduced-sodium chicken broth

Steps:

  • In a large skillet, melt 1 teaspoon butter over medium-high heat; saute almonds until lightly browned, 2-3 minutes. Remove from pan., In a shallow bowl, mix flour and seasonings. Dip chicken in mixture to coat lightly. In same pan, heat remaining butter over medium heat; cook chicken, covered, until browned, 3-4 minutes per side., Add wine; bring to a boil. Reduce heat; simmer, covered, until a thermometer inserted in chicken reads 165°, 4-6 minutes. Sprinkle with almonds.

  • In a large skillet, heat 1 tablespoon of the olive oil. Season the chicken pieces with salt and pepper and cook in a single layer over moderately high heat, skin side down, until the skin is golden and beginning to crisp, about 5 minutes. Transfer the chicken to a plate.
  • Add the chicken stock, water and white wine to the skillet and cook over moderate heat, scraping up any browned bits from the bottom. Add the carrot, celery, leek, onion, garlic, bay leaves, clove and peppercorns and bring to a simmer. Return the chicken pieces to the skillet, skin side up. Cover, reduce the heat to low and simmer until the chicken is cooked through, 20 minutes. Transfer the chicken to a plate and cover loosely with foil.
  • Strain the cooking liquid into a small saucepan. Bring to a boil, then simmer over moderately high heat until reduced to 2/3 cup, about 20 minutes. Remove from the heat. Whisk in the crème fraîche and butter and season with salt and pepper. Keep warm.
  • In a medium skillet, heat the remaining 1 tablespoon of oil. Add the chicken, skin side down; cook over moderately high heat until the skin is crisp, 2 minutes. Transfer to plates, ladle the sauce on top and serve.
