CAMPFIRE FOIL PACKS
These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

Steps:
- In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
- Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
- Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

Steps:
- Light up the campfire or grill to medium high or preheat the oven to 400F / 200C / gas 6.
- Mix all the ingredients together in a bowl until everything is coated
- Split the chicken fajitas mix across 2 sheets of aluminium foil and fold edges of foil up around the food to form a closed foiled packet.

BBQ HAWAIIAN CHICKEN FOIL DINNER PACK
Hawaiian BBQ Chicken made in a foil pack over the campfire, grill or even in the oven!

Steps:
- Preheat grill to high heat.
- Drain juice from pineapple slices into a small mixing bowl.
- Whisk in barbecue sauce, minced garlic, and soy sauce; set aside.
- Place 6 pieces of foil (approx. 12"x18") on a clean working surface and spray with nonstick cooking spray.
- Place a chicken breast in the center of each piece of foil.
- Divide pineapple slices, peppers and green onions evenly on top of each chicken breast.
- Season with salt and pepper, to taste.
- Reserve 1/2 cup barbecue pineapple sauce; set aside.
- Drizzle remaining barbecue sauce evenly over foil packs.
- Fold the ends of the foil together and seal open ends closed tightly.
- Place foil packs on the grill and close lid.
- Cook for 15-20 minutes, turning over halfway through, until chicken is cooked through and peppers are tender.
- Carefully open foil packs and serve with reserved barbecue sauce, if desired.

Steps:
- Divide the peppers and mushrooms into four equal parts.
- Coat a small area in the center of each foil with butter then place a portion of peppers and mushrooms onto the greased area of foil.
- Top with a chicken breast and a pineapple slice.
- Season with garlic powder, salt, and pepper.
- Fold foil securely making sure there are no leaks.
- Place Chicken in Foil on coals or gas grill for 10 to 15 minutes per side.
- That's it! Enjoy.
SPICY CHICKEN IN FOIL
Fast, tasty and easy--can't beat that. This is my husband's absolute favorite baked chicken. I serve with plain rice to soak up the wonderful juices. An easy dish backed in the oven, but also a great recipe to try over the coals when camping.

- Preheat the oven to 400 degrees. Rip 4 long pieces of foil, and fold each piece in half to make it stronger and prevent leaks. Set aside.
- Place the cut Petite Red Potatoes in a large pot and cover with cold water. Bring water to a boil over medium-high heat and allow to cook for 6 minutes. Drain potatoes, return to pot, and let cool.
- Add chicken pieces, chopped onions, melted butter, minced garlic, smoked paprika, chipotle chili powder, salt, ground black pepper, and garlic powder. Toss to coat all pieces of chicken and potatoes.
