The introduction of nut pastes into North Indian cooking is a wonderful Mughlai influence. My husband loves almond or cashew based chicken dishes such as this. (I have adjusted the typo for the quantity of the water in the recipe - you should get a fairly viscous sauce, which thickens as it stands)

1 lb chicken breast fillet, cubed
8 ounces mushrooms
1/3 cup cashew nuts
2 tablespoons golden raisins (sultanas)
1 large onion
2 tablespoons tomato puree
1 teaspoon garam masala
1 teaspoon garlic paste
1 teaspoon chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon coriander powder
1 teaspoon salt
1 tablespoon lemon juice
1 tablespoon plain yogurt
1/4 cup water
2 tablespoons vegetable oil

Steps:

  • Puree onions in blender till just smooth.
  • Add tomato puree, cashews, garam masala, garlic, chili powder, coriander powder, lemon juice, turmeric, salt and yoghurt and blend for a minute.
  • In a large pan, heat oil on medium heat, and pour the onion-spice mixture into it.
  • Saute gently for 2 minutes, adjusting the heat if needed.
  • Add the chicken cubes and golden raisins and continue to stir-fry for a minute.
  • Add the mushrooms, pour in the water, and allow to simmer covered over medium-low heat for 10-12 minutes.
  • When chicken is cooked and sauce has thickened, remove to serving dish, garnish with chopped cilantro if desired, and serve.

2 medium onions
2 tablespoons tomato paste
1/3 cup cashew nuts
1 1/2 teaspoons garam masala
1 teaspoon garlic, pulp
1 teaspoon chili powder
2 tablespoons lemon juice
1/4 teaspoon ground turmeric
1 teaspoon salt
1 tablespoon low-fat plain yogurt
2 tablespoons oil
2 tablespoons fresh coriander
1 tablespoon sultana
1 lb boneless skinless chicken, cubed
2 1/2 cups button mushrooms
1 1/4 cups water

Steps:

  • Cut the onions into quarters, place in a food processor or blender and process for about 1 minute.
  • Add the tomato puree, cashew nuts, garam masala, garlic, chili powder, lemon juice, turmeric, salt and yogurt to the processed onions.
  • Process all the spice ingredients in the food processor for a further 1-1 1/5 minutes.
  • In a heavy-based saucepan, heat the oil, lower the heat to medium and pour in the spice mixture from the food processor. Fry for 2 minutes lowering the heat if necessary.
  • When the spice mixture is lightly cooked, add half the chopped fresh coriander, the sultanas and the chicken cubes and continue to stir fry for a further 1 minute.
  • Add the mushrooms, pour in the water and bring to a simmer. Cover the saucepan and cook over a low heat for about 10 minutes.
  • After this time, check that the chicken is cooked through and the sauce is thick. Cook for a little longer if necessary and serve garnished with the remaining fresh coriander.

¾ cup roasted, unsalted cashews
¼ cup water
2 teaspoons cornstarch
4 tablespoons hoisin sauce, best quality such as Kikkoman or Lee Kum Kee
1 tablespoon soy sauce
1½ pounds boneless, skinless chicken breasts or tenderloins, cut into 1½ inch pieces
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons vegetable oil
6 medium garlic cloves, minced
8 scallions (1 bunch), white and green parts separated, each cut into 1-inch pieces
2 tablespoons rice vinegar
¼ teaspoon Asian sesame oil

Steps:

  • Preheat the oven to 350°F.
  • Place the cashews on a baking sheet in a single layer. Toast in the oven until fragrant, about 5 minutes. Set aside; they will crisp up as they cool.
  • Meanwhile, prepare the sauce: in a small bowl, whisk together the water, cornstarch, hoisin sauce, and soy sauce. Set aside.
  • Place the chicken pieces in a large bowl. Sprinkle with the salt and pepper and toss to coat evenly.
  • In a large nonstick skillet, heat 1 tablespoon of the vegetable oil over high heat until very hot. Add half of the chicken to the skillet and stir-fry until lightly browned but not cooked through, about 3 minutes. Transfer to a plate.
  • Add the remaining tablespoon vegetable oil to the skillet; then add the remaining chicken, garlic and white parts of the scallions. Stir-fry until the chicken is lightly browned but not cooked through, about 3 minutes. Return the first batch of chicken to the pan. Turn the heat down to medium and add the rice vinegar; cook until evaporated, about 30 seconds.
  • Add the sauce mixture to the chicken; cook, tossing, until the chicken is cooked through and the sauce is nicely thickened, about 1 minute. Remove from the heat. Stir in the scallion greens, cashews and sesame oil. Serve immediately.

Steps:

  • In a bowl, combine the vinegar, brown sugar, oyster sauce, sesame oil, 1/4 cup of the soy sauce and 1 tablespoon of the ginger. Set aside.
  • Season the chicken with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and saute until cooked through, 5 to 7 minutes.
  • In the same skillet, stir-fry the garlic, bell peppers and remaining 2 tablespoons ginger, keeping them crisp-tender. Deglaze the skillet with the sherry and scrape up any brown bits. Add the reserved soy mixture and cook until the mixture boils, about 1 minute. Whisk together the cornstarch and remaining 1/4 cup soy in a small bowl, then stir the slurry into the skillet. Add the cashews and water chestnuts. Add 1/4 cup water to thin the sauce. Cook for another minute.
  • Serve garnished with the scallions and cilantro.

1/4 cup vegetable oil
2 onions, grated
8 garlic cloves, crushed

2 teaspoons garam masala
salt

Steps:

  • Cut the chicken into pieces. I generally go for very slender, flat pieces perhaps an inch or so in diameter.
  • Heat the oil in a large saucepan. Add the onions, garlic, ginger and chilies/pepper and fry over medium heat until the onions are browned.
  • Add the curry powder, garam-masala, salt, turmeric, paprika, and cashew paste and stir thoroughly. Cook for 5 minutes, until the oil separates from the masala.
  • Add the stock, mix, and cook for 3 minutes. Mix in the non-dairy cream (Riches or equivalent), margarine, tomatoes and chicken and stir thoroughly.
  • Cover and simmer for 40 minutes, until the chicken is tender, stirring occasionally and checking to be sure the sauce does not stick to the bottom of the pan.

1/2 lb chicken breast, diced
1 egg
1 tablespoon cornstarch
1 tablespoon dark soy sauce
1 tablespoon dry sherry
1/2 teaspoon salt
1 cup vegetable oil, about
1/2 cup diced water chestnut
1/2 cup diced green pepper
1/2 cup diced fresh mushrooms
2 tablespoons hoisin sauce
1/2 cup toasted cashews
chicken stock, as needed
3 -5 drops sesame oil

Steps:

  • *Hoisin sauce is available in Asian markets.
  • It's made with beans, flour, garlic, etc.
  • This is the stuff they serve with mu shu pork that they call plum sauce.
  • It is, in fact not plum sauce and doesn't look or taste anything like plum sauce.
  • Marinade (10- 20 minutes).
  • Sub other vegetables if you want.
  • Heat the oil in wok; carefully add chicken and stir unti just cooked.
  • (This shouldn't take more than 90 seconds to two minutes).
  • Remove to a sieve and let the oil drain into a bowl.
  • Reheat the wok and add a tablespoon or two of the oil.
  • Stir fry the vegetables until just cooked.
  • Return chicken; stir in hoisin adding a little chicken stock if too dry.
  • Stir in nuts& sesame oil.
  • Serve immediately with steamed rice.
  • Note: this dish doesn't have a lot of gravy, just the hoisin that coats the chicken and vegetables.

Cashew chicken dishes have long been a classic of American Chinese cuisine. But Andrew Chiou and Tim Ma, the co-owners of Lucky Danger in Washington, D.C., have noticed it fading from menus in the area. According to Mr. Chiou, the dish is all about textural contrast: the crisp, battered chicken that's been tossed in a thin, sweet-and-savory sauce; crisp-tender vegetables like celery, as well as softer straw mushrooms; and, of course, the satisfying crunch of cashews. Their version is similar to the famous, deep-fried cashew chicken dish popularized by the chef David Leong in Springfield, Mo., in the 1960s. Enjoy it alongside other dishes as part of a multicourse meal, or just with steamed rice.

1/2 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/3 cup cornstarch
2 tablespoons all-purpose flour
2 tablespoons Shaoxing rice wine
1/2 cup cornstarch
1/3 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
2 cups canola or peanut oil
1/2 yellow onion, cut into 1-inch pieces (about 1/2 cup)
1 small carrot, peeled and cut into 1/2-inch dice
1 celery stalk, cut into 1-inch dice
4 ounces (drained) canned whole water chestnuts or peeled jicama, cut into ½-inch dice
2 ounces (drained) canned whole straw mushrooms
1 tablespoon minced rehydrated garlic (or 4 fresh garlic cloves, minced)
1/2 cup granulated sugar
1/4 cup soy sauce
1 tablespoon oyster sauce
1 cup whole roasted cashews
1 tablespoon cornstarch mixed with 2 tablespoons water
1 teaspoon sesame oil
1 pinch MSG (optional), such as Aji-No-Moto brand seasoning
Steamed rice (optional), for serving

Steps:

  • In a medium bowl, combine the chicken, batter ingredients and 2 tablespoons water. Mix them by hand until the dry ingredients are evenly distributed.
  • In a separate medium bowl, sift together the breading ingredients.
  • Working with one piece of chicken at a time, drop each battered piece into the breading and lightly toss it to coat. (Do not press the breading onto the chicken.) Shake the excess breading off, then place the breaded chicken onto a wire rack-lined baking sheet, leaving space between each piece.
  • Heat the oil in a large wok or skillet to 325 degrees. Gently drop the chicken into the oil one piece at a time, spacing them out evenly. Let them fry, undisturbed, for 7 to 8 minutes, until the pieces are deeply golden brown, then remove them with a spider or slotted spoon and transfer to a paper towel-lined tray to drain.
  • Turn off the heat and carefully pour out oil into a heatproof container or pot to discard once it cools. Carefully scrape out any specks from the wok or pan with a paper towel held by tongs. Do not rinse the wok.
  • Heat the wok over medium-high. Add the onion, carrot, celery, water chestnuts, mushrooms and garlic. Stir-fry until the garlic and celery become aromatic, about 2 minutes.
  • Push the vegetables to one side of the wok. Add the sugar to the center of the wok and don't stir it for several seconds, to encourage it to caramelize a little. Then add the soy sauce and oyster sauce, and stir until the sugar has dissolved into the liquids. Toss the vegetables into the sauce. Let the sauce come up to a full boil and stir occasionally for 2 minutes, allowing it to slightly reduce and thicken.
  • Stir in the fried chicken and cashews. Give the cornstarch-slurry a stir and add it to the sauce, stirring as it thickens. Remove from heat.
  • Stir in the sesame oil and MSG (if using), and transfer to a serving platter. Serve with rice, if desired.

  • In a small to medium size pot, combine the sesame oil and minced garlic over medium heat. Cook for about 30 seconds. Then add the remaining sauce ingredients: oyster sauce, soy sauce, brown sugar, onion powder, red pepper flakes (if using), and cornstarch. Start with two tablespoons of cornstarch and you can add more later if you think it needs to be thicker.
  • Give that a good whisk. Then slowly add the vegetable stock. The mixture may appear very thin at first, but keep cooking over medium heat and it will thicken up (like gravy). If it doesn't, add another tablespoon of corn starch. If it gets a little too thick, add a little more vegetable stock. Once it reaches the desired thickness, remove from heat. Taste and add salt or more soy if you think it needs it.
  • Use right away or store in a container with a lid in the refrigerator for up to two weeks and rewarm as needed. I will use this sauce over two pounds of chicken (or whatever I'm cooking) for four servings. So you can divide the sauce in half if you only need two servings at a time, like we do.
