1 egg, beaten
2 cups panko breadcrumbs
salt
pepper
4 tablespoons soy sauce
4 tablespoons honey
4 cloves garlic, crushed
2 tablespoons hoisin sauce
1 tablespoon sriracha
1 tablespoon grated ginger
spring onion, for garnish
sesame seed, for garnish

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut the chicken breasts into small bite-size pieces.
  • Dip chicken pieces into egg mixture then coat with panko.
  • Place the breaded chicken onto a baking sheet and season with salt and pepper.
  • Bake 20 minutes until golden brown and cooked through.
  • Mix together soy sauce, honey, garlic, hoisin sauce, sriracha and grated ginger in a saucepan and bring to boil, remove from heat.
  • Toss chicken bites in the sauce until thoroughly coated.
  • Serve immediately with chopped spring onion and sesame seeds.

The easiest 15 minute recipe that requires minimal prep and a few basic ingredients, yet it wows with flavor! A new weeknight dinner staple!

1 1/4 lbs. boneless skinless chicken breasts, (cut into 1 1/4-inch pieces)
2 Tbsp all-purpose flour
1 1/2 tsp Italian seasoning
Salt and freshly ground black pepper
1 Tbsp olive oil
3 Tbsp unsalted butter, (divided)
1 1/2 Tbsp minced fresh garlic ((4 cloves))
2 Tbsp finely chopped fresh parsley*

Steps:

  • Preheat a 12-inch non-stick skillet over medium-high heat.
  • Dab chicken on all sides dry with paper towels.
  • Sprinkle flour, Italian seasoning, and desired amount of salt and pepper (I use about 3/4 tsp salt and 1/2 tsp pepper) over chicken. Toss well to evenly coat (all flour should stick to chicken and not be left behind on cutting board, keep tossing if needed).
  • Add 1 Tbsp olive oil and 1 Tbsp butter to skillet, butter should melt quickly. Tilt pan to evenly coat.
  • Add chicken in an even layer, work to leave some space between pieces so they'll brown rather than steam.
  • Let cook until nicely golden brown on bottom, about 3 minutes then flip to opposite side and cook 2 minutes longer, or until nearly cooked through.
  • Add remaining 2 Tbsp butter in small pieces, along with garlic and parsley. Cook 1 minute longer (chicken should be 165 in center and no longer be pink).
  • Serve right away.

1 1/2 pounds boneless, skinless chicken breast halves, cut into 2-inch pieces
3 tablespoons dried parsley
2 tablespoons garlic powder
2 tablespoons dried dill
2 teaspoons onion powder
1/4 cup olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Toss the chicken with the parsley, garlic powder, dill, onion powder, 2 tablespoons of the olive oil, 1 1/2 teaspoons salt and a few grinds of pepper until evenly coated.
  • Heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the chicken and cook undisturbed until just starting to turn white, about 1 minute. Reduce the heat to low, cover and cook undisturbed until the chicken is cooked through, about 5 minutes.
  • The chicken will keep up to 4 days. Let cool completely before refrigerating.
  • Ranch Style: Serve with ranch dressing for dipping and smashed potatoes and green beans alongside.
  • Pesto Noodles: Toss the chicken with store-bought pesto and serve on top of buttered egg noodles.

Number Of Ingredients 4

4 boneless chicken breast fillets
6 tbsp red pesto
3 large handfuls breadcrumbs , frsh or dried (about 300g/10oz)
olive oil

Steps:

  • Cut the chicken breasts into small chunks, each about the size of a marble (you should get roughly 15 pieces per breast). Put the pesto in a bowl and mix together with the chicken until coated all over. Tip the breadcrumbs into a large freezer bag.
  • Add the chicken pieces in batches to the bag and give it a good shake to coat. Place a piece of greaseproof paper on a baking sheet, then lay the chicken pieces on the sheet, making sure none of them are touching. Put in the freezer and, when frozen solid, take off the baking sheet and store in a container or freezer bag.
  • To cook, heat oven to 220C/fan 200C/ gas 7. Pour a little oil onto a shallow baking tray, just enough to cover it. Put the tray in the oven and let it heat up for 5 mins. Tip the chicken onto the sheet and return to the oven for 10-15 mins until crisp and cooked through.
