"SMELLS LIKE SUNDAY" CHICKEN FRICASSEE WITH MEATBALLS
Like many family recipes, this one was created out of the need to stretch ingredients. One day when there was just a little chicken, and even less ground beef in the house, an old Aunt of mine decreed that the two should be cooked together to make a meal large enough for the whole family. The result was a wonderfully tasty dish that smelled just like Sunday dinner, but it wasn't, because on Sundays we always made sure to have enough of either chicken or meat. This is one of my absolute favorite ways to cook chicken. I hope that you enjoy it as well.

- First of all make the meatballs by combining all the meatball ingredients in a bowl, mixing well.
- Shape mixture into 1 1/2 inch balls and brown in a single layer in the oil, over medium high heat, turning occasionally, until well browned on all sides, about 7 to 8 minutes.
- Alternatively meatballs can be browned in a hot oven (I just spray a baking pan with PAM and brown them for about 10 minutes at 425*C).
- Remove from the skillet and drain on paper towels.
- Wipe the skillet clean.
- Wash chicken and pat dry.
- In a shallow bowl, combine the 3/4 cup flour, seasonings and mix well.
- Dredge the chicken in this mixture to coat, shaking off any excess flour.
- In skillet, heat oil over medium high heat until hot but not smoking.
- Add the chicken and brown on all sides about 4 minutes per side.
- Remove and set aside.
- Pour off the oil from the skillet, leaving only a thin layer.
- Add the chopped onion and saute over medium high heat until tender and lightly browned, about 8 minutes.
- Stir in the 2 tsp flour and mix well.
- Add the stock and wine, stirring gently to blend.
- Cook until thickened.
- Return the chicken and meatballs to skillet.
- Cover and braise over moderate heat, stirring occasionally, for 45 minutes until chicken and meatballs are cooked through.
- Adjust seasoning and serve with rice or little noodles.
- Alternatively, chicken, meatballs and sauce can be layered in a covered casserole and cooked in a slow oven for several hours.

- Combine flour, salt, pepper, sage, marjoram, and paprika in a bowl; mix well.
- Set aside the back, neck, and giblets of the chicken to be used for soup or frozen for later use.
- Dredge remaining chicken pieces in flour.
- Shake off excess flour and place on a rack. Reserve any remaining flour.
- Heat oil to 325ºF in a large skillet with a tightly-fitting lid.
- Add dredged chicken and fry 10 to 15 minutes until golden brown, turning occasionally.
- Remove chicken to platter and keep warm.
- Reduce heat to medium.
- Pour off all except 2 tablespoons of the oil from the skillet.
- Add 2 tablespoons of the reserved flour mixture to the skillet and cook, stirring frequently, until the flour turns golden brown.
- Add the onions and mushrooms and continue to cook, stirring constantly, until the onions are translucent.
- Pour in the chicken broth and white wine.
- Bring back to a boil while scraping cooked-on bits from the bottom of the pan with a spatula.
- Continue to cook, stirring constantly, until sauce starts to thicken.
- Use a whisk to remove lumps if necessary.
- Return the chicken to the pan and reduce heat to low.
- Cover and simmer for for 1 hour.
- Just before serving stir in sour cream and parsley.
- Serve over rice, mashed potatoes, or egg noodles.

- In a resealable plastic bag, combine 2-1/4 teaspoons flour, salt, pepper and thyme. Add chicken and shake to coat. In a small skillet, brown chicken in butter. Remove chicken and set aside. In same skillet, saute the mushrooms, onion and celery until crisp-tender. Return chicken to the pan. Add water and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until chicken juices run clear, turning occasionally., Place remaining flour mixture in a bowl; stir in milk until smooth. Stir into pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Sprinkle with parsley.

- Brown chicken over high heat in a deep saute pan or dutch oven coated with nonstick spray.
- Remove chicken to a platter.
- Add onion, mushrooms, and garlic to same pan and cook for at least 3 minutes, or until vegis are soft.
- If you are using wine, add it now and cook over high heat 1 minute.
- Add 3 cups of broth, and bring to a boil.
- Reduce the heat to a simmer.
- Combine the cornstarch with the remaining cup of broth mixing thoroughly.
- Add to pan and stir until broth thickens slightly.
- Return chicken to pan and cook until chicken is cooked through, about 15 minutes.
- Removed from heat and add the spices and sour cream.
- Sprinkle with parsley.
BELGIAN CHICKEN FRICASSEE (VOL-AU-VENT)
This delicious, creamy chicken fricassee is a classic Belgian recipe. My father used to make this regularly for Sundays and other festive occasions. Often served as a starter, but it is great as a main course as well, accompanied by plain rice or potato puree, for example. Freezes well. Its Flemish name is "Koninginnenhapje", which could be translated as "Queen's Nibble"... nice, isn't it?

- Cook the chicken breasts or the chicken in the chicken stock, until tender (breasts should take about 30 minutes, a whole chicken 45 minutes or more). Drain, but keep the stock. Let the chicken cool down a bit.
- In the meanwhile, make tiny meatballs (max. 1 cm across) from the minced meat. Cook the meatballs in chicken stock or water until they are done -- this usually takes just a few minutes, the meatballs will drift to the top when ready. Drain them as well.
- Make a "blonde" sauce: melt most of the butter in a medium-sized pot (don't let it become brown), add flour and mix well. Keep the pot on medium heat. Then, very gradually, add splashes (think 2-3 tablespoons) of chicken stock to this mixture. Each time you added some stock, stir very well so that the mixture doesn't become lumpy. You can start adding increasing amounts of stock when your sauce becomes liquidish. Make a sauce that is somewhat thicker than cream; you will probably use most of your chicken stock in this process. This is fine.
- Quickly add the raw egg yolk, the lemon juice and the grated cheese to your sauce.
- In a large pot, melt the remaining lump of butter and add the mushrooms. Stir-fry the mushrooms on medium heat until they start to "sweat" (release their juices). Season with salt and pepper.
- Add the sauce and the ham dices to the mushrooms. Add the meatballs as well. Put on low heat.
- With your hands or a knife, pull apart the chicken and make bite-sized pieces (about 1 inch long, 1/2 inch across, or smaller). Add the chicken pieces to your mixture as well.
- Ready! Do check if the dish needs a bit more salt or pepper. You can eat the Vol-Au-Vent as it is, with potatoes or rices; you can also pour it in Vol-Au-Vent shells (puff pastry) or even make a chicken fricassee pie (in a puff pastry pie shell).

- The chicken should be cut and disjointed into 8 pieces. The breast and thighs can also be cut in half again, if you prefer small pieces. Clean and singe, if necessary. Prepare the meatballs using 1 pound of ground beef and doubling the other ingredients in the recipe.
- In a 2½-quart Dutch oven, slowly sauté the chopped onion in 3 tablespoons of the fat until the onion is soft and yellow; do not let it brown. Remove and reserve. Add more fat to the pot if needed and brown the chicken pieces lightly until all sides are pale golden brown. Do this in several batches, as the chicken will not brown if crammed into the pan. Remove the chicken, sprinkle with salt and pepper, and reserve.
- Return the onions to the pot and sprinkle with paprika. Sauté for a minute or two, until the paprika loses its raw smell. Add the tomato juice and 1 cup water.
- Return the chicken to the pot and add the garlic cloves. The liquid should come about halfway up the chicken. Cover and simmer gently but steadily for 20 minutes. Gently and carefully add the meatballs to the pot, moving the chicken aside to make room and shaking the pot intermittently to separate the meatballs. These will be fragile while raw, but once cooked they will become firm and will not crumble or stick together.

- Heat oil in a Dutch oven or large casserole pan over medium heat. Season the chicken, giblets, and extra wings with salt and pepper and sauté until cooked through. Remove from the pan and set aside.
