1 tsp garlic powder
1 tsp paprika
1/2 tsp cayenne pepper ((or sub with more paprika))
1 tbsp flour
1/2 tsp salt
Black pepper
4 large chicken thigh fillets ((about 5oz / 150g each), cut in half (Note 1))
8 pieces bacon (, streaky (Note 2))
2 tbsp brown sugar
1 tsp olive oil ((optional))

Steps:

  • Preheat oven to 200C/390F (fan forced / convection) (Note 3)
  • Line tray with baking paper.
  • Combine Seasoning in a small bowl. Place brown sugar in a separate bowl.
  • Coat chicken in Seasoning, shaking off excess. Place on one end of bacon and roll up, finishing with the seam side down. Repeat with remaining chicken.
  • Coat chicken in sugar - use your fingers to rub it on if required. Place on baking tray.
  • Drizzle with olive oil (helps make it brown faster, optional)
  • Bake for 25 minutes. If the bacon is not golden enough for your taste, switch on the broiler for a few minutes.
  • Brush the juices on the tray onto the bacon to make it glossy and juicy. Serve on mashed potatoes, drizzled with extra pan juices if desired!

6 slices bacon (- see note 1)
2 chicken breasts (large) (- see note 2)
¼ cup all-purpose flour
½ tsp salt
½ tsp black pepper
¼ cup all-purpose flour
1 tbsp butter
2 tbsp butter
1 onion (finely chopped) (- see note 3)
½ tsp dried thyme
2 tbsp dry sherry - optional ( - see note 4)
¾ cups chicken broth/stock
1 ¼ cups heavy cream
½ tsp Dijon mustard (- see note 5)
¼ tsp salt
¼ tsp black pepper

Steps:

  • Chop the bacon into small dice.6 slices bacon
  • Place a large skillet or frying pan over medium heat, add the bacon and cook for 8-10 minutes until crispy. Use a slotted spoon to remove the bacon from the pan, leaving behind the bacon fat/grease.
  • Pat the chicken breast dry to stop it sliding about the board.2 chicken breasts
  • Lay the chicken breast flat on a chopping board.
  • Use a large sharp knife to cut sideways through the breast.
  • Continue to cut through the chicken breast, keeping the knife flat and parallel to the chopping board.
  • Carefully cut through until you have two plump fillets. Repeat with the second chicken breast.
  • If you find they are not an even thickness, you can use a meat mallet (or a heavy pan) to bash the plumper end down.
  • Add the flour to a shallow dish.¼ cup all-purpose flour

1 cup panko bread crumbs
2 tablespoons plus 1 teaspoon minced fresh thyme, divided
1/2 teaspoon salt, divided

4 bacon strips, cut into 1/2-inch pieces

  • Preheat oven to 425°. In a shallow bowl, mix bread crumbs, 2 Tbsp. thyme, and 1/4 tsp. each salt and pepper. Place flour and egg in separate shallow bowls. Dip chicken in flour; shake off excess. 1/2 small yellow onion, minced
2 cloves garlic, minced
6 ounces cream cheese, at room temperature
2 tablespoons finely chopped chives
1 1/2 teaspoons Worcestershire sauce

Four 6- to 8-ounce boneless skinless chicken breasts
12 slices bacon (not thick-cut)

Steps:

  • Preheat the oven to 375 degrees F. Heat the olive oil in a medium skillet over medium heat. Add the onion and cook, stirring, until golden brown, about 6 minutes. Stir in the garlic and cook 30 seconds more. Remove the pan from the heat and add the cream cheese, chives and Worcestershire sauce and stir until evenly combined.   • Halve each chicken breast horizontally, leaving it attached at one side so it opens like a book. 6 rashers smoked streaky bacon, chopped
8 skinless, boneless chicken thighs
2 garlic cloves, thinly sliced
1 bunch spring onions, roughly chopped
300ml hot chicken stock
250g frozen peas
1 Little Gem lettuce, roughly shredded
2 tbsp crème fraîche

Steps:

  • In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  • Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  • Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

2 chicken breasts
50g soft goat's cheese
4 rashers streaky bacon
handful of fresh sage leaves
1 tbsp olive oil

Steps:

  • Skin 2 chicken breasts, then cut a pocket in each side and stuff each with 25g/1oz soft goat's cheese.
  • Wrap each breast in 2 rashers rindless streaky bacon, tucking in a few fresh sage leaves, then put the breasts in a baking dish and season. Spoon over 1 tbsp olive oil.
  • Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). To check if they are done, insert a sharp knife into the centre of a parcel and leave it for a few seconds, if the chicken is cooked the tip should feel very hot when you pull it out and touch it. The chicken should also feel very firm when pressed with the back of a fork.
  • Serve with a gratin of potatoes and leeks.

Steps:

  • With a sharp knife cut a slit about 4-5cm across the chicken, but dont cut all the way through the chicken, only go half way down. Do this in both chicken pieces.
  • Take 2 tsp of the pesto and open the slit and spoon it in. Use 2 tsp in each chicken breast. If using cheese do exactly the same but carefully stuffing the chicken with the cheese.
  • Then take one of the rashes of bacon and wrap it around the chicken, where the incision is, making sure the ends of the bacon end up underneath the chicken.
  • Using a cocktail stick pierce through the bacon and chicken to hold it all togther. (the filling may ooze out a little bit depending on how much you've stuffed the chicken with) Do this with the other chicken breast.
  • Then put on a baking tray and cook in the oven for 20 minutes on 180-200 degrees (fan oven/electric)
  • Take out and serve with any veg, mash potato or spicy cabbage.
