Sesame Chicken Dumplings in Spicy Broth with Garlic Crisps image

Best for nights when you're craving Chinese but want a healthy made at home meal.

Provided by Tieghan Gerard

Time 50m

Number Of Ingredients 16

1 pound ground chicken or pork
2 tablespoons fresh grated ginger
1 clove garlic, minced or grated
2 cups roughly chopped spinach or bok choy
2 tablespoons plus, 1/4 cup low sodium soy sauce or tamari
black pepper
24-26 round dumpling or wonton wrappers
1/4 cup plus, 1 tablespoon raw sesame seeds
3-4 medium shallots, thinly sliced
3 cups low sodium chicken broth
2 tablespoons rice vinegar
5 tablespoons sesame or olive oil
1/2 cup Panko breadcrumbs
4 cloves garlic, thinly sliced or smashed
crushed red pepper flakes (use to your taste)
green onions for serving

Steps:

  • 1. In a medium bowl, combine the raw chicken, bok choy, 1 tablespoon ginger, garlic, 2 tablespoons soy sauce, and a pinch of black pepper. 2. To assemble, spoon 1 tablespoon of filling onto each wrapper. Brush water around the edges of the wrapper. Fold the edges of the wrapper up and around the filling and pinch in the center to seal. Repeat with the remaining wrappers. Place the sesame seeds in a shallow bowl. Brush the bottoms of the dumplings with water and then dredge them in the sesame seeds.3. Heat 2 tablespoons of oil in a medium pot. When the oil shimmers, add the shallots and cook until fragrant and caramelized, about 4 minutes. Add 1 tablespoon ginger and cook another minute. Add the broth, 1/4 cup soy sauce, and the rice vinegar. Season to taste with pepper. Bring to a simmer over medium heat. Keep warm.4. Heat a few tablespoons of oil in a large skillet set over medium heat. When the oil shimmers, add the dumplings and cook until the bottoms are golden brown, about 2-3 minutes. Carefully pour 1/4 cup of water into the skillet, it will splatter, so stand back. Immediately cover with a tight-fitting lid. Turn heat to medium-low and let the dumplings steam for 5-6 minutes. Remove the dumplings from the skillet to a plate. 5. In the same skillet, add the remaining 2 tablespoons oil, the Panko, thinly sliced garlic, 1 tablespoon sesame seeds, and a large pinch of red pepper flakes. Cook until lightly toasted, 3 minutes. Watch closely. Spoon the crumbs out of the skillet onto a plate. 6. Arrange the dumplings in shallow bowls. Ladle the steaming broth over top. Top with garlic crisps, green onions, and chili oil. Enjoy!

Time 8h36m

Yield 5 servings

Number Of Ingredients 34

1 small minced onion
3 cloves minced garlic
One 1/4-inch piece peeled fresh ginger
6 ounces lemon juice
6 ounces olive oil
3 ounces soy sauce
3 ounces dark rum
1 tablespoon crushed red pepper
2 tablespoons sugar
2 tablespoons salt
5 chicken breasts
1 cup toasted sesame seeds
2 cups all-purpose flour
Sesame Noodles, recipe follows
Soy-Ginger Vinaigrette, recipe follows
Mesclun Greens
Spicy Apricot Sauce, recipe follows
1 pound fresh angel hair pasta
1/2 bunch cilantro, leaves chopped
1 bunch chopped scallions
2 tablespoons olive oil
2 tablespoons toasted sesame oil
1/4 cup soy sauce
1/4 cup lemon juice
1 tablespoon minced ginger
1/2 cup olive oil
1/2 cup canola oil
1 ounce boiling water
2 cups apricot glaze
1 cup balsamic vinaigrette
2 tablespoons soy sauce
1 tablespoon red pepper flakes
1 tablespoon grated ginger
1/2 cup mirin

Steps:

  • In a food processor, combine the onion, garlic, and ginger and pulse to mince. Place in a bowl and combine with the lemon juice, olive oil, soy sauce, rum, crushed red pepper, sugar, and salt. Shake, or stir well, before use. Cut the chicken breast into 2-inch strips. Put in plastic bag or tub with marinade. Marinate in the refrigerator overnight.
  • Preheat the oven to 400 degrees F.
  • Combine sesame seeds with the flour. Dredge marinated chicken strips in the flour-sesame mixture. In a skillet, heat enough canola oil to lightly coat the bottom of the skillet until hot, but not smoking. Cook chicken strips, on both sides until golden brown. Transfer to a shallow roasting pan and finish in the oven.
  • To assemble:
  • Toss the Sesame Noodles with some Soy-Ginger Vinaigrette and some fresh mesclun greens. Place the noodle salad on a plate and top with the cooked sesame chicken. Drizzle some Spicy Apricot Sauce over the chicken. Garnish with pickled ginger and a side of the apricot dipping sauce.
  • Cook angel hair pasta in boiling, salted water for 2 minutes or until al dente. Drain and rinse with cold water to stop the cooking. Add the cilantro, scallions, olive, and sesame oils. Combine well.
  • Combine all ingredients, except for the water, in a blender. Blend for 30 seconds. Then add the water and blend for another 10 seconds.
  • Put all ingredients in a saucepan, and heat until the glaze melts. Whisk until smooth, and serve at room temperature. Add water if it gets too thick.

PAN-FRIED CHICKEN DUMPLINGS WITH SWEET AND SPICY DIPPING SAUCE

Pan-Fried Chicken Dumplings with Sweet and Spicy Dipping Sauce image

Provided by Sandra Lee

Time 40m

Yield 6 servings

Number Of Ingredients 8

1/2 cup ponzu (available in the Asian section of most markets)
1 teaspoon hot sauce
1/2 teaspoon stir-fry seasoning mix
1/2 pound ground chicken
1 scallion, chopped
1 tablespoon stir-fry seasoning mix
1 (12-ounce) package round wonton wrappers
2 tablespoons vegetable oil

Steps:

  • For the dipping sauce: In a small bowl, stir together the ponzu, hot sauce and stir-fry seasoning.
  • For the wontons: In a bowl, add the chicken, scallions and stir-fry seasoning. Mix with a spoon until well combined.
  • Put a wonton wrapper onto your work surface. (Keep the wonton wrappers covered with a damp towel so they don't dry out.) Place 1 heaping teaspoon chicken mixture in the center of the wrapper. Coat the edges of the wrapper with a little water using your finger or a brush. Fold the circle to form a half moon, pressing out any air bubbles Set aside, covered with a damp towel, while you make the rest.
  • When you are ready to cook, place a large, nonstick skillet fitted with a lid over medium-high heat and add the vegetable oil. When the oil is hot, place the wontons in a single layer in the pan; they should be close together but not touching. Depending on the size of the skillet, you may need to cook the dumplings off in 2 or 3 batches. Cook, uncovered, until the bottoms are browned, about 4 minutes. Lower the heat to medium-low, carefully pour in 2 tablespoons water and immediately cover the pan with a lid. Cook until the wontons are tender, about 5 minutes. Remove from the pan and serve hot with the dipping sauce.

CHINESE STEAMED DUMPLINGS WITH DIPPING SAUCE

Chinese Steamed Dumplings with Dipping Sauce image

I used to love this Chinese-restaurant appetizer so much that my mother reverse-engineered the recipe. These dumplings have an interesting taste and are great for parties. They also freeze well. Hope you enjoy them--it's worth the work involved.

Categories     Lunch/Snacks

Time 1h20m

Yield 15 dumplings

Number Of Ingredients 14

2 cups flour
1 egg
1/2 teaspoon salt
water (enough for a thick, bread-like dough)
1/2 lb ground pork
2 scallions, finely chopped
1 (1 inch) piece fresh ginger, finely-chopped
1/4 cup peas (thawed if frozen)
1 teaspoon chili pepper flakes (optional)
2 tablespoons soy sauce
1/2 tablespoon rice vinegar (rice vinegar)
1 tablespoon honey
1 teaspoon sesame oil (optional)
1/2 teaspoon sesame seeds (optional)

Steps:

  • Mix ingredients for dipping sauce and set aside.
  • Lightly oil a large bowl.
  • Put the flour and salt in another large bowl, piled up.
  • Make a dent in the top of the pile, and crack the egg into it.
  • Mix the egg into the flour.
  • Add enough water to the mixture to make a thick dough.
  • The consistency should be like bread dough.
  • In any case, don't add too much water--it shouldn't be like batter at all!
  • Turn the dough out onto the flour-dusted counter, and form into a ball.
  • (It helps to flour your hands first).
  • Place the dough into the oiled bowl and cover with plastic wrap (cellofane).
  • Let stand 1 hour.
  • Meanwhile mix all ingredients for filling and place in the fridge.
  • Next, remove dough and place on flour-dusted counter (or work surface).
  • Knead a bit and flatten until very thin (but not see-through or falling apart).
  • Using a large, round cookie-cutter (or bottom of coffee can or top of glass) cut three-inch rounds.
  • Don't place them on top of each other, as they could stick together!
  • Knead the leftover pieces together again and cut more rounds until there's no dough left.
  • Spoon a bit of the filling into the center of each round and fold in half (to make a semi-circle shape).
  • Seal edges with a bit of water, and use tongs of a fork to decorate the edge.
  • To prepare, either steam the dumplings (if you have a steamer) for 15 mins, or boil for 10 mins.
  • If you boil, add some oil to the water and don't overcrowd the pan--make them in batches.
  • If you like, you can fry the dumplings in a skillet or wok to brown them before serving.
  • Handle gently!

SESAME ENCRUSTED CHICKEN BREASTS WITH GINGER-SOY SAUCE

Sesame Encrusted Chicken Breasts With Ginger-soy Sauce image

Serve this on a bed of steamed rice or couscous. Be careful when browning the chicken, not to let it burn. That's why it's finished off in the oven. Enjoy this wonderful recipe from Cooking with Caprial-American Bistro Fare!

Categories     Chicken Breast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 15

4 boneless skinless chicken breasts, 6 ounces each
salt and black pepper
1 cup sesame seeds
1/2 teaspoon chili flakes
1 tablespoon vegetable oil
1 teaspoon vegetable oil
4 garlic cloves, chopped
1 tablespoon chopped gingerroot
1/2 cup wine, mirin (or any good rice wine)
1 cup chicken stock
1 tablespoon hoisin sauce
2 tablespoons Asian chili sauce
1/2 teaspoon dark sesame oil
1 teaspoon fresh basil, chopped
soy sauce

Steps:

  • Preheat oven to 350*F. For the chicken breasts, season chicken with salt and pepper. In a small bowl, mix sesame seeds and chile flakes and then dredge the chicken breasts in the mixture to coat them. Heat vegetable oil in a large saute pan until smoking hot. Add chicken brests and brown each side well, about 2 minutes per side.
  • Remove chicken from pan and transfer to a baking pan. Bake for another 3 to 5 minutes until the chicken breasts are just cooked through.
  • For the sauce, while the chicken breasts are baking, heat veg. oil in the same pan you removed them from. Add the garlic and gingerroot and saute until you can smell the aroma, 1 to 2 minutes over high heat. Add mirin wine and boil over high heat until reduced by half, 2 to 3 minutes. Add chicken stock and boil over high heat to reduce a bit, 2 to 3 minutes.
  • If the chicken breasts are finished cooking by this time, remove them from the oven and allow to stand. Add hoisin sauce and chile sauce to saute pan and bring to a boil. Season with sesame oil, basil, and soy sauce.
  • Serve chicken breasts over steamed rice or couscous. Serve half of the sauce over the chicken and the remainder on the side. This will not be a very thick sauce; it is meant to be thin and light. Enjoy!

  • Combine the flour, water, and salt in the bowl of your stand mixer. With the dough hook attachment, knead the dough together until it forms a smooth ball, around 2-3 minutes.
  • Combine the shredded cabbage and water chestnuts in a colander with 2 teaspoons of salt and place it over a bowl. Leave it to stand for about 30 minutes to allow the salt to extract the moisture from the cabbage and water chestnuts.
  • Split the dough in half. Roll one half of the dough on a floured surface until it is thin, about 1/16th of an inch thick. Cut the dough into rounds (mine were 3 ½ inches in diameter).
  • Combine all the sauce ingredients in a small bowl. The sauce will build more flavor the longer it sits. Dip the cooked dumplings in the bowl of sauce and enjoy!
