This is a favorite at ladies' luncheons. Even people who think they don't like curry rave about this dish! I got the recipe from a friend and love to make it.

1 can (11 ounces) mandarin oranges, drained
3/4 cup pineapple tidbits, drained
1 can (8 ounces) water chestnuts, drained
4 cups cubed cooked chicken
2 cups seedless red or green grapes, halved
1 cup chopped celery
Lettuce leaves
Sliced almonds
DRESSING:
1-1/2 cups mayonnaise
1 tablespoon soy sauce
1 tablespoon lemon juice
1-1/2 teaspoons curry powder

Steps:

  • In a large bowl, combine the oranges, pineapple, water chestnuts, chicken, grapes and celery. , In a small bowl, combine dressing ingredients. Pour over salad; toss well to coat. Chill for 1 hour. Serve on a bed of lettuce; sprinkle with almonds.

2 celery ribs, diced
1 cup seedless red grapes, halved
1 medium apple, peeled and diced
1 small red onion, diced
1 cup fat-free mayonnaise
1 tablespoon orange marmalade
2 teaspoons lime juice
1 teaspoon curry powder
1/2 cup lightly salted cashews
1/2 cup chow mein noodles

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine the mayonnaise, marmalade, lime juice and curry. Pour over chicken mixture and toss to coat. Cover and refrigerate for at least 1 hour., Just before serving, sprinkle with cashews and chow mein noodles.

1 tablespoon fresh lemon juice
1 teaspoon ground curry powder
1 teaspoon soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups cubed cooked chicken
1 can (8 oz) whole water chestnuts, drained, quartered
1 1/2 cups seedless red grapes, halved (about 1/2 lb)
1 cup honeydew melon cubes (about 1/2 lb)
1 cup cantaloupe melon cubes (about 1/2 lb)
6 lettuce leaves
1/3 cup sliced almonds, toasted*

Steps:

  • In large bowl, mix all dressing ingredients with whisk until smooth. Stir in remaining ingredients except lettuce leaves almonds.
  • Place 1 lettuce leaf on each of 6 salad plates. Divide salad over lettuce leaves. Top each salad with almonds.

½ cup orzo pasta
½ cup light mayonnaise (such as Light Miracle Whip®)
2 tablespoons Dijon mustard
2 tablespoons light sour cream
½ cup orange juice
½ teaspoon curry powder
salt and ground black pepper to taste
1 (20 ounce) can pineapple tidbits, drained
2 cups cubed cooked chicken
2 stalks celery, diced
1 Fuji apple, cored and diced
1 cup seedless green grapes, halved
6 small green onions, minced
1 (11 ounce) can mandarin oranges, drained
2 tablespoons shelled salted pumpkin seeds, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain and transfer to a bowl; refrigerate until chilled.
  • Whisk mayonnaise, Dijon mustard, sour cream, orange juice, curry powder, salt, and pepper together in a bowl until dressing is smooth; cover with plastic wrap and refrigerate until chilled, at least 30 minutes.
  • Mix pineapple, chicken, celery, apple, grapes, and green onions together in a bowl. Stir orzo and dressing into pineapple mixture. Gently fold oranges into salad and top with pumpkin seeds.

16 small red potatoes
¾ cup mayonnaise
1 tablespoon curry powder
6 boneless chicken breast halves, cooked and diced
2 small red onions, diced
2 (14 ounce) cans artichoke hearts, drained and chopped
1 head lettuce - rinsed, dried and torn
salt and pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • In a large bowl, whisk together the mayonnaise and curry powder. Add the potatoes, chicken, onion and artichoke hearts and mix together until evenly coated.
  • Refrigerate until chilled. To serve, arrange over a lettuce bed and sprinkle with salt and pepper.

1 store bought rotisserie chicken, skin discarded, meat removed from bone and diced
1 head Romaine lettuce, washed and leaves torn into bite-size pieces
1 cup cashews, toasted
2 stalks celery, finely-chopped
4 green onion(s), chopped
½ cup green seedless grapes, halved
½ cup red seedless grapes, halved
1 cup mandarin orange segments
or
1 cup orange segments
or
1 cup clementine segments
1 cup strawberries, hulled and sliced
1 ½ cup light mayonnaise
1 clove garlic, minced
2 tbsp lemon juice
¼ tsp white pepper
1 tsp curry powder
¼ cup parsley, fresh, chopped

Steps:

  • Combine chicken, lettuce, cashews, celery, green onion, grapes, orange segments and strawberries in large salad bowl.
  • In smaller glass bowl, combine mayonnaise, garlic, lemon juice, pepper, curry powder and parsley and mix together well with a fork or whisk to make dressing.
  • Add dressing to salad bowl and mix dressing into salad evenly. Serve.

It works as a sandwich or wrap filling, and I also enjoy serving it over some fresh greens. Adjust the curry powder to your taste - I have found that different brands have different strengths.

The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!
