1 ½ cups plain yogurt
3 tablespoons lemon juice
¾ teaspoon curry powder
¾ teaspoon onion powder
¾ teaspoon salt
¾ teaspoon garlic powder
1 pound skinless, boneless chicken breast halves - cut into 1 inch strips
¾ cup dry bread crumbs
¼ cup all-purpose flour
½ cup unsalted butter

Steps:

  • In a large bowl, mix the yogurt, lemon juice, curry powder, onion powder, salt, and garlic powder. Set aside 1 cup of the mixture to use as a dipping sauce. Place the chicken in the bowl, and coat with the mixture. Marinate in the refrigerator 8 hours or overnight.
  • In a bowl, mix the breadcrumbs and flour. Dredge the coated chicken in the breadcrumb mixture.
  • Melt the butter in a skillet over medium-low heat. Discard remaining yogurt mixture. Fry the coated chicken in the skillet 15 minutes, or until juices run clear. Serve with the reserved dipping sauce.

2 garlic cloves (, minced)
2 tsp ginger (, grated)
1/2 onion (, finely chopped)
500g / 1lb chicken thighs, sliced ((Note 1))
2.5 tbsp curry powder ((Note 2))
270 ml / 1.25 cups coconut milk (, full fat (9 oz) (Note 3))
1.5 cups (375 ml) chicken stock low sodium
1/2 tsp salt
3/4 cup frozen peas
1/4 cup coriander / cilantro leaves (, chopped)

Steps:

  • Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
  • Add chicken and cook until it it changes from pink to white.
  • Add curry powder and cook for 2 minutes.
  • Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
  • Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
  • Serve over rice, noodles or mashed potato!

700 - 800 gms Chicken (measured after cleaning)
4 small - medium Onion (sliced)
1 - 1.5 tbsp, each Crushed ginger & garlic
1.5 tbsp Kashmiri chilli powder
2 tsp Coriander powder
1/2 tsp Fennel powder
1/2 tsp Turmeric powder
2 medium - big Tomatoes (sliced)
8 - 10 Small / pearl onion (sliced)
2 Green chilli, slit lengthwise (optional)
Curry leaves
Salt
Oil (I used Coconut oil)

Steps:

  • Heat 1 tbsp oil in a pressure cooker. Add sliced onion and cook till it browns.
  • Add crushed ginger & garlic. Cook for 3-4 mins, till the raw smell goes.
  • Add kashmiri chilli powder, coriander powder, turmeric and fennel powder. Cook for 3-4 mins, till the raw smell goes and oil starts appearing. You may add 1-2 tbsp water to bring together the masala.
  • Add sliced tomatoes and salt. Cook till it becomes soft.
  • Add cleaned chicken pieces and mix well. Make sure the chicken pieces are coated with masala.
  • Add 1 1/4 cup water, bring it to boil. Close the cooker and put the weight on. Pressure cook till 1 whistle, on highest flame. Reduce flame to lowest and cook for 5 more mins. Switch off the gas and let pressure drops completely.
  • Separate the gravy and chicken pieces. In a deep and wide pan, heat 2 - 3 tbsp oil. Shallow fry the chicken pieces, till it becomes a golden brown color.
  • In the same pan (add oil, if required), add sliced small onion, green chilli (if using) and curry leaves. Fry it till it becomes golden.
  • Add the gravy to this and cook it for 5-7 mins, till it reduces a bit.
  • Add fried chicken pieces to this and mix well. Make sure the chicken pieces are covered with gravy. Cover and cook on lowest flame for 5 mins. Switch off the gas and let the curry rest for half an hr, before serving.

1 lb fingerling potatoes (sliced in half lengthwise)
Olive oil
Salt (to taste)
Black pepper (to taste)
1 can of coconut milk (I use full fat Chaokoh)
3 teaspoon masaman curry paste
2 teaspoon curry powder
3 ½ teaspoon fish sauce
½ teaspoon honey

Steps:

  • Preheat oven to 400 degrees and adjust rack to lower 3rd of oven. Line baking sheet with parchment.
  • Combine potatoes, salt, and pepper in a large mixing bowl. Drizzle olive oil generously over potatoes until well coated.
  • Bake potatoes in oven for 30-40 minutes, turning once. Best if potatoes are roasted skin-side down for 1st half of roasting time, and center-side down for second half.
  • Meanwhile, heat a 1-2 tablespoons of olive oil in a small sauce pan. Add curry paste and saute briefly. Whisk in coconut milk. Bring to a simmer. Whisk in remaining ingredients.

8 skinless chicken thighs, bone-in or boneless
½ cup sour cream, not fat free
1 tbsp curry paste
2 tsp liquid honey, (optional)
¾ cups panko breadcrumbs

¾ cups unsweetened coconut, shredded

¾ cups panko breadcrumbs

¾ cups breadcrumbs, dry, fine
1 tbsp curry powder

Steps:

  • Preheat oven to 375ºF (180ºC). Line a baking sheet with parchment paper or foil. Oil or spray foil if using. Remove all visible fat from chicken.
  • In a dish just large enough to hold a single piece of chicken, combine sour cream, curry paste and honey if using. Use a fork to mash curry paste until no lumps remain and to evenly blend. Combine crumbs, coconut and curry powder in a medium size plastic bag or dish. Shake or stir to mix.
  • Open up one piece of chicken so it is as flat as possible. Place in the curried sour cream. Turn to evenly coat. It should not be heavily coated. Use your finger to make sure the coating is light and even. Flatten out the chicken again and place it in the crumb mixture. Gently shake to evenly coat or press chicken into the crumbs, then turn chicken and press in the other side. Shaking off any excess crumbs, place chicken on the parchment or foil. Repeat with remaining pieces. If crumbs are left and there are areas on the chicken that are skimpily coated, lightly sprinkle crumbs over the bare areas and gently press onto the chicken. For extra crispiness, lightly spray the chicken with oil.
  • Bake in the centre of the preheated 375ºF (180ºC) oven until golden and crispy looking, from 40 to 45 minutes or until meat thermometer reaches internal temperature of 165ºF (74ºC). A cucumber or avocado salad, sliced tomatoes and brown rice are perfect companions.

1/4 teaspoon cayenne pepper, optional for heat, add an extra 1/4 teaspoon for medium-spicy
6 medium cloves garlic, peeled
A 1-inch cube of fresh ginger, peeled
1 medium onion, roughly chopped
1 1/2 cups water
3 tablespoons vegetable oil or use ghee
2 tablespoons tomato paste
4 tablespoons full-fat plain unsweetened yogurt
1 teaspoon Garam Masala, see notes
3 tablespoons heavy cream
Handful cilantro leaves, chopped, optional for serving

Steps:

  • Cut the chicken into 1-inch pieces, and then add to a bowl. If you'd like to leave the chicken uncut or if you are using bone-in chicken pieces, the chicken can be left whole.
  • Scatter 1/2 teaspoon of the salt, 1/2 teaspoon ground cumin, 1/4 teaspoon ground coriander, 1/4 teaspoon ground turmeric, 1/4 teaspoon black pepper and 1/4 teaspoon cayenne pepper over the chicken. Toss well and set aside to marinate for at least 20 minutes.
  • Make ahead: The chicken can be left to marinate up to 24 hours, keep it covered and stored in the refrigerator.

  • Heat the oil or ghee in a wide skillet (with lid) over medium-high heat. Arrange the marinated chicken into the pan so that it is in one layer and brown on both sides. Remove the chicken from the pan and place the skillet back onto the heat.
  • Add the onion-ginger mixture and cook, stirring often, until all of the water has evaporated, about 5 minutes.
  • Stir in the remaining 1/2 teaspoon ground cumin, 1/2 teaspoon coriander and 1/4 teaspoon turmeric over the onion-ginger mixture, and cook for about 20 seconds. Stir in the tomato paste, turn the heat down to medium-low and then cook another minute.
  • Add the yogurt, a tablespoon at a time, stirring it into the sauce before adding anymore.
  • Return the chicken pieces and any accumulated juices to the pan along with the remaining cup of water and 3/4 teaspoon of salt. Bring to a boil, turn the heat down to a simmer, and then cover with a lid. Simmer, covered, for 20 minutes.
  • Remove the lid and stir in the Garam Masala and cream. Taste the sauce and add the final 1/4 teaspoon of salt if you feel that it is needed (we almost always add it).
  • Turn the heat back up to medium-high and cook, stirring gently every now and them, until the sauce has reduced a bit and thickened, 3 to 5 minutes. Serve with fresh cilantro scattered on top.

Chicken curry in the air fryer is a fun and tasty recipe that will surprise you!

1/2-1 pound chicken (cubed)
2 tomatoes (sliced in half)
1/2 medium onion (sliced or diced)
1 teaspoon ginger (grated)
1 teaspoon garlic (minced)
1 tablespoon salted butter
2 teaspoons curry powder
1/2 teaspoon cumin
1/2 teaspoon coriander
1/4 teaspoon smoked paprika (plus a little more for the chicken)
1/3 teaspoon chili powder
2/3 cup heavy cream
fresh coriander (for topping)

Steps:

  • With an air fryer cake barrel or other similar oven-safe dish, place the tomatoes (sliced side up) and onion. Cook at 320°F/160°C for 25 minutes, or until they are soft and charred.
  • Once the tomatoes and onions are cooked, add and mix in the garlic, ginger, butter, curry powder, cumin, coriander, smoked paprika, and chili powder. Cook for an additional 5 minutes in the air fryer.
  • Puree everything with the heavy cream using an immersion blender or food processor. Cover and set aside.
  • Place the cubed chicken in the air fryer basket. Lightly spray the chicken with oil and sprinkle with paprika. Cook in the air fryer at 380°F/190°C for 5-8 minutes, or until cooked through. (The chicken will be done once it reaches an internal temperature of 165°F/74°C with an instant read food thermometer).
  • Once the chicken is finished, combine it with the sauce. Warm up the sauce by placing the curry in the air fryer basket and cooking for a final 3-5 minutes.
  • Enjoy this recipe with rice and/or naan. Top with the fresh coriander.
