Steps:
- Set 1 chicken breast on a cutting board. Hold a sharp knife parallel to the cutting board and along one long side of the breast; cut chicken breast almost in half, leaving breast attached at one side. Open breast so it lies flat like a book and cover with plastic wrap. Lightly pound with the flat side of a meat mallet to 1/4-inch thickness. Repeat with remaining chicken breast.
- Season each chicken breast with salt and pepper. Spread Dijon mustard on top. Place 1 slice of cheese on each breast. Top each with 2 slices of ham and 1 slice of cheese. Roll each breast up and secure with a toothpick.
- Place flour in a shallow bowl. Place egg in a second bowl. Mix panko bread crumbs and grated Parmesan in a third bowl.
- Preheat an air fryer to 350 degrees F (175 degrees C).
- Dip chicken first in flour, followed by egg, and finally roll in the bread crumb mixture. Spray chicken rolls with nonstick spray and let sit for 5 minutes while the air fryer preheats.
- Place chicken in the basket of the preheated air fryer and cook for 10 minutes. Spray any chalky spots with nonstick spray again. Cook until chicken is no longer pink in the center, 8 minutes more.

- Preheat air fryer to 365°. Sprinkle chicken breasts with salt and pepper. Place on greased tray in air-fryer basket. Cook 10 minutes. Top each with 1 slice of ham and a 1/2 slice of cheese, folding ham in half and covering chicken as much as possible. Sprinkle with bread crumbs. Carefully spritz crumbs with cooking spray. Cook until a thermometer inserted in chicken reads 165°, 5-7 minutes longer., For sauce, in a small saucepan, whisk flour and milk until smooth. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened., Reduce to medium heat. Stir in wine and cheese; cook and stir 2-3 minutes or until cheese is melted and sauce is thickened and bubbly. Stir in salt and pepper. Keep warm over low heat until ready to serve. Serve with chicken.

Found this online -- looks simple to put together and yummy! Original recipe requires frying -- but I wonder if it could not be completly done in the oven. If someone tries this before me and wants to be brave and skip the frying step and bake longer, let me know your changes and I will edit the recipe. Thanks!!

- Preheat oven to 350 degrees.
- Combine the chicken, ham, and egg in a large bowl until well blended.
- Gradually add bread crumbs until the mixture loses its stickiness and can be easily formed into balls.
- Form the chicken mixture around the cheese cubes, forming 2 inch balls. Place on a plate.
- Heat 1 1/2 inches of oil in a deep skillet to 350 degrees. Fry the balls until the outsides are golden brown, about 4 minutes. Drain on paper towels, and place in baking dish.
- Bake in preheated oven until cooked through and cheese is soft, about 20 minutes. Cool briefly before serving.

- Combine chicken, almond flour, salt, garlic powder, onion powder, and egg in a bowl. Form a small portion of chicken mixture into a 1 1/2-inch ball around a cube of ham and place onto a plate. Repeat with remaining chicken mixture and ham, making 20 meatballs total.
- Heat olive oil in a large skillet over medium-high heat. Brown meatballs for 3 minutes, turn, and cook an additional 3 to 4 minutes. Transfer meatballs onto a clean plate.
- Return skillet to medium heat and melt butter. Whisk in chicken broth and Dijon mustard and bring to a simmer for 3 to 4 minutes. Stir in heavy cream and whisk until sauce begins to simmer. - Heat oven to 400ºF.
- Reserve 1-1/2 tsp. mustard for later use. Mix remaining mustard with chicken, cheese and ham just until blended. Shape into 24 meatballs, using about 1 Tbsp. meat mixture for each.
- Empty coating mix into shallow dish. Add meatballs, 1 at a time; turn to evenly coat meatball. Place on foil-covered rimmed baking sheet sprayed with cooking spray.
- Bake 15 min. or until done (165ºF). Meanwhile, mix mayo and reserved mustard until blended.

- Combine first 8 ingredients in a large bowl and mix well.
- Cover a cookie sheet with foil.
- Press chicken mixture into a 8x10 rectangle.
- Place cheese slices on chicken mixture, then top with ham slices.
- Begin rolling from short side of the rectangle (using the foil will help shape the roll and make it easier to roll up).
- Press ends of roll together and place on greased baking sheet with the seam side down. Bake at 350 degrees for 60 -75 minutes or until roll is golden brown and chicken is cooked through.
