- Spray a 2-quart casserole dish with cooking spray and set aside.
- In a large bowl, combine first 7 ingredients.

- Preheat oven to 400 F degrees
- Add all rice ingredients to casserole dish. Stir to combine, then tightly cover with a lid or aluminum foil. Bake in oven for 20 minutes.
- While the rice cooks, slice chicken breasts from the side to create 2 thin breasts. Season with the salt, pepper, garlic powder, and oregano. Lay the chicken flat on a plate or cutting board. Layer 1 slice of ham folded on top of the chicken. Layer the swiss cheese slice folded on top of the ham.
- Make the breadcrumb topping by mixing the ingredients together in a small bowl
- After 20 minutes, take the rice out and add the chicken slices layered to the top in a line. Cover and bake for another 20 minutes.
- Remove the cover and sprinkle the breadcrumb topping on top. Put it back in the oven with the broiler setting on low for 5 minutes to brown the topping. Watch to make sure it doesn't burn.
- To serve, use a spatula to scoop out the rice, chicken and topping. Enjoy!

- Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Mix rice, contents of seasoning packets and water in baking dish. Place ham over rice. Place chicken tenders over ham. Spoon pasta sauce over each chicken tender; sprinkle with paprika.
- Cover with aluminum foil and bake 40 minutes. Uncover and bake about 20 minutes longer or until rice is tender and chicken is no longer pink in center. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted. Sprinkle with parsley.

- Heat oven to 400°F. Lightly grease 10-inch round baking dish with olive oil; set aside.
- In 10-inch skillet, heat 2 tablespoons olive oil over medium-high heat. Add onion; cook until tender and translucent, stirring occasionally. Add flour; stir to make a roux. Cook roux 1 to 2 minutes or until lightly golden. Gradually beat in broth with whisk, followed by milk, and simmer until slightly thickened into a gravy.
- In large bowl, mix chicken, gravy, ham, rice and 1 cup of the cheese. Spread evenly in baking dish.
- In another bowl, mix bread crumbs and butter to coat well. Add remaining 1/2 cup cheese. Top casserole with bread crumb mixture; bake about 20 minutes or until top is crisp and golden and casserole is bubbling.

- Add water, carrots, butter, and rice mix to baking dish. Place chicken on rice mixture and top with ham.

- Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 to 1/2 inch thick.
- Heat oven to 375°F. Grease 13x9-inch (3-quart) glass baking dish with butter.
- In food processor, place cereal, garlic salt and basil. Cover; process until finely ground like flour. Set aside. In small bowl, beat egg and milk; set aside. Layer 1 piece of ham and 1 piece of cheese on each chicken breast. Roll up and secure each with a toothpick so that cheese and ham is enclosed within chicken. Coat each rolled chicken breast with Bisquick mix, then egg mixture, and then cereal mixture. Place in baking dish.
- Bake 35 to 40 minutes. Serve with cheesy mashed potatoes and your favorite vegetable or salad.

- Prepare stuffing mixes according to package directions. Meanwhile, in a large bowl, combine soup and milk; set aside. Divide chicken between two greased 13 x 9 inch baking dishes. Sprinkle with pepper. Layer with ham, Swiss cheese, 1 cup cheddar cheese, soup mixture and stuffing. Sprinkle with remaining cheddar cheese.
- Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350 degrees for 30 minutes. Uncover; bake 10-15 minutes longer or until cheese is melted.
- To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 degrees for 45 minutes. Uncover; bake 10-15 minutes longer or until heated through and cheese is melted.
- Each casserole serves 6.
CHICKEN CORDON BLEU CASSEROLE (COOKING WITH PAULA DEEN MAGAZINE)

This is how the magazine described the dish: This casserole has all the flavors of Chicken Cordon Bleu--chicken, ham, and cheese--without all that messy rolling and stuffing! We liked the dish, though it wasn't as creamy as we expected. I followed the recipe as written (copied original recipe below) but added a handful of shredded cheddar cheese to the top of the casserole when it was done and baked for another couple of minutes until the cheese was melted. I also used more ham than the recipe called for because I needed to use up the leftovers. Cook time in my over was about 1 hour for the rice to be tender (recipe calls for 45 minutes).

We took two of our favorite meals and put them together for a weeknight dinner mash-up. Creamy, cheesy sauce, lasagna noodles, Swiss cheese, chicken and ham give this lasagna huge flavor.

- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In small microwavable bowl, microwave 2 tablespoons of the butter uncovered on High 20 to 40 seconds or until melted. Add bread crumbs to bowl, and stir until mixed well; set aside.
- In 4-cup glass measuring cup, mix broth, milk, mustard, thyme and pepper; set aside. In 4-quart saucepan, melt remaining 1/3 cup butter over medium heat. With whisk, stir in flour until smooth. Cook and stir 1 to 2 minutes or until mixture is smooth and bubbly. Gradually stir broth mixture into saucepan. Increase heat to medium-high; heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat to medium. Stir in cream cheese and Swiss cheese. Cook, beating mixture with whisk, until cheeses are melted and mixture is smooth. Remove from heat.
- Spread 1 cup of the sauce in bottom of baking dish; top with a layer of 3 noodles. On top of noodles, spoon 1 cup of the chicken, 1/3 cup of the ham, 1 cup of the sauce and 1/2 cup of the Monterey Jack cheese. Repeat two more layers, starting with noodles. Top with remaining noodles, sauce and cheese. Spray piece of foil with cooking spray; cover sprayed side down. Bake 35 minutes.
- Remove from oven; uncover, and top with bread crumb mixture. Bake uncovered 10 to 15 minutes or until bread crumbs are lightly browned, noodles are tender and edges are bubbly. Let stand 20 minutes before serving. Garnish with additional thyme.
