SOUTHWEST CHICKEN STROMBOLI

I prefer Italian food, but my brother is a big fan of Mexican cooking. I combined my preferences with his and came up with this recipe. He loved it. If you prefer a spicier flavor, just use hotter salsa. -Carly Curtin, Ellicott City, Maryland

3/4 cup water (70° to 80°)
1 tablespoon canola oil
1 tablespoon nonfat dry milk powder
1 tablespoon sugar
1 teaspoon salt
2-1/4 cups bread flour
1/4 cup yellow cornmeal
1 teaspoon active dry yeast
FILLING:
1 small onion, finely chopped
1 small sweet yellow pepper, finely chopped
1 tablespoon canola oil
1-1/2 cups shredded cooked chicken breast
3/4 cup salsa
2/3 cup shredded Mexican cheese blend
1/2 cup refried beans
3/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon dried oregano
EGG WASH:
1 large egg white, beaten
1 tablespoon water
Sour cream, optional

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , Meanwhile, for filling, in a large skillet, saute onion and pepper in oil until crisp-tender. Stir in the chicken, salsa, cheese, beans and seasonings; heat through. Remove from the heat; set aside., When cycle is completed, turn dough onto a lightly floured surface. Roll dough to a 14x12-in. rectangle. Spread filling over half of dough to within 1/2 in. of edges. Fold dough over filling; pinch seams to seal and tuck ends under. Combine egg white and water; brush over dough. Cut slits in top., Place on an ungreased baking sheet. Bake at 350° for 25-30 minutes or until golden brown. Let stand for 5 minutes before cutting. Serve with sour cream if desired.

1 (10-oz.) can chunk white and dark chicken in water, drained
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
4 oz. 1/3-less-fat cream cheese (Neufchâtel), softened
1/4 cup chopped roasted red bell peppers (from 7.25-oz. jar)
1 tablespoon honey
Dash salt
Dash pepper
1 can (11 oz) refrigerated Pillsbury™ Original French Bread
1 egg
1 teaspoon water
Dash dried parsley flakes
6 thin strips roasted red bell peppers (from 7.25-oz. jar)
1 tablespoon butter, melted
Dash garlic powder

Steps:

  • Heat oven to 350°F. Grease cookie sheet. In medium bowl, combine chicken, chiles, cream cheese, 1/4 cup roasted peppers, honey, salt and pepper; mix well.
  • Remove dough from can; place on lightly floured surface. Carefully unroll dough. Spread chicken mixture evenly over dough to within 1 inch of edges. With lightly floured hands, carefully but firmly reroll dough. Gently press edges to seal; fold ends under. Place loaf on greased cookie sheet.
  • In small bowl, combine egg and water; beat well. Brush over top of loaf; sprinkle with parsley. Arrange roasted pepper strips about 2 inches apart on top of loaf. With sharp knife, cut 5 or 6 diagonal slices, 1/2 inch deep, on top of loaf.
  • Bake at 350°F. for 25 to 30 minutes or until edges are deep golden brown. In small bowl, combine butter and garlic powder. Brush over warm loaf. Cut into slices.

8 slices part-skim mozzarella cheese
1/3 cup shredded Parmesan cheese
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon pepper
Marinara sauce, warmed

Steps:

  • Prepare chicken tenders according to package directions. Preheat oven to 400°. Unroll pizza dough onto a parchment-lined baking sheet. Layer with mozzarella, chicken tenders and Parmesan to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal and tuck ends under. Combine olive oil, garlic powder, oregano and pepper; brush over top., Bake until crust is dark golden brown, 18-22 minutes. Let stand 5 minutes before slicing. 1 basic pizza dough
1 (8 ounce) package Perdue Short Cuts original roasted carved chicken breasts, diced
3/4 cup cheddar cheese, shredded
3/4 cup mozzarella cheese, shredded
1/2 cup onion, chopped
garlic salt
1/2 cup parmesan cheese
1 egg
3 tablespoons water

Steps:

  • Let dough rise in warm place until doubled in size.
  • Roll dough out on a floured surface. Shape into a 12"x14" Rectangle. Place diced chicken, cheddar cheese, mozzarella cheese, chopped onion, 1/4 cup Parmesan Cheese and sprinkle with Garlic Salt, leaving 1/2" without the filling so you can pinch and seal it closed. Roll up jelly roll style (start with long side) and fold ends and pinch to seal. Place onto a greased baking sheet seam side down. Cover and let rise 45 minutes.
  • Beat egg and add water to make an egg wash. Brush egg wash onto dough and sprinkle with remaining Parmesan Cheese and sprinkle with Garlic Salt. Bake at 350 for 30 minutes or until it is golden brown.

1/4 cup Buffalo wing sauce

  • Heat oven to 425 degrees F. Lightly spray cookie sheet with cooking spray.
  • Unroll dough; place on cookie sheet. Starting at center, press out dough into 14x10-inch rectangle.

Enjoy a pizza, calzone and focaccia all rolled into one with this stromboli stuffed with salami and mozzarella. It can be made ahead and frozen

400g strong white flour plus extra for dusting
5g fast-action dried yeast
1 tbsp olive oil, plus extra for brushing
20 slices Milano salami (about 100g)
150g grated mozzarella
handful of basil leaves

Steps:

  • Tip the flour into a large bowl, then stir in the yeast and 1 tsp salt. Pour in 250ml warm water and the olive oil, and bring together with a wooden spoon to make a soft dough. Tip onto a surface and knead for 10 mins until smooth. Put the dough back in the bowl, cover with a tea towel and set aside for 40 mins or until doubled in size.
  • Roll the dough out on a lightly floured surface to a rectangle roughly 35 x 20cm. Layer over the salami (leaving a bit of a border), then scatter over the mozzarella and finally the basil leaves. Tuck the shorter edges in and roll the whole thing up like a swiss roll. Will keep frozen, tightly wrapped in foil, for up to one month. Can either be defrosted and baked, or baked from frozen (see step 3).
  • Leave the loaf to rest for 20 mins on a baking tray. Meanwhile, heat the oven to 200C/180C/gas 6. Brush all over with olive oil and sprinkle with sea salt. Bake for 40 mins until puffed up and golden. If cooking from frozen, bake for 1 hr. Leave to cool for 10 mins before slicing and serving with salad.

2 cups shredded chicken breasts
2 cups shredded mozzarella cheese
28 ounces spaghetti sauce
2 tablespoons parmesan cheese
1 tablespoon fresh parsley, chopped
1 lb bread dough

Steps:

  • Preheat oven to 400 degrees.
  • In a medium bowl, mix the chicken, mozzarella, 1/2 cup spaghetti sauce, Parmesan cheese and parsley. Set aside.
