3 cups cooked and shredded chicken (I used rotisserie chicken)
1 (14 ounce) can artichoke hearts, drained, chopped
1 (8 ounce) package shredded mozzarella cheese
1/2 cup grated parmesan cheese
1/2 cup sun-dried tomato, chopped and drained
1.5 (8 ounce) packages low-fat cream cheese
1 cup half-and-half
1 teaspoon minced garlic
1/4 cup fresh basil, chopped
12 lasagna noodles, cooked
12 slices whole milk mozzarella

Steps:

  • Preheat oven to 350F.
  • In a large bowl, combine chicken, artichokes, 1 cup mozzarella, grated parmesan, ½ the basil and tomatoes. Set aside.
  • In a separate bowl using an electric mixer, beat cream cheese, ½ and ½ and garlic until well combined. Using a spoon, stir in half the basil. Set half of the cream cheese mixture aside and stir the remaining half in with the chicken mixture.
  • Take half of the cream cheese mixture (without the chicken) and spread it into a 9x13 baking dish, covering the bottom. Lay 3 noodles on top and then top with ⅓ of the chicken mixture. Repeat the noodles and chicken mixture two more times, ending with a noodle layer.
  • Top with the last half of the cream cheese mixture.
  • Place the whole milk mozzarella slices on top in rows of three, like shown.
  • Sprinkle the shredded mozzarella over everything, and then top with more basil if desired.
  • Bake 25 minute or until heated through.
  • Slice and serve! Enjoy!

Two 9-ounce packages quattro formaggi agnolotti
1 1/2 cups heavy cream
1 shallot, minced
1/4 cup grated Parmesan, plus more, for serving
Kosher salt and freshly ground black pepper
8 to 10 plum tomatoes, thinly sliced
1 cup fresh basil leaves
8 ounces part-skim mozzarella, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the agnolotti according to package directions. Drain.
  • Meanwhile, bring the heavy cream and shallot to a boil in a large skillet over medium-high heat, stirring occasionally. Reduce the heat to medium-low and simmer to thicken slightly, about 2 minutes. Stir in the Parmesan and season with salt and pepper.
  • Layer half the agnolotti in a 9-by-11-inch baking dish. Top the pasta with the sliced tomatoes, basil and three-quarters of the mozzarella. Top with the remaining agnolotti and mozzarella. Pour the cream mixture over the top. Bake until golden and bubbly, 25 minutes. Cool slightly. Sprinkle Parmesan on top. Serve.

2 tablespoons olive oil
2 boneless, skinless chicken breasts, sliced or diced
1 tablespoon Italian seasoning or herbes de Provence
Salt
1 medium onion, diced
2 cloves garlic, minced
1 cup low-sodium chicken broth
1 jar good-quality marinara sauce (14 to 16 ounces)
1 teaspoon red pepper flakes
1 cup grated mozzarella cheese, plus more if needed
1/2 cup whole milk ricotta cheese, plus more if needed
1/4 cup grated Parmesan, plus more if needed and for serving
12 fresh basil leaves, cut into chiffonade or chopped, plus more if needed and for serving

Steps:

  • Cook the pasta according to the package instructions; drain and set aside.
  • Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
  • Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes.
  • Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Parmesan and a little basil on top.

4 (6 ounce) skinless, boneless chicken breast halves
1 cup Italian salad dressing
1 tablespoon Italian herb seasoning
1 tablespoon chicken seasoning (such as Grill Mates® Montreal Chicken Seasoning)
2 tablespoons canola oil
4 (1/2 inch thick) slices fresh mozzarella cheese
4 (1/2 inch thick) slices tomato
4 large fresh basil leaves
1 tablespoon balsamic vinegar

Steps:

  • Place chicken breasts, Italian salad dressing, Italian herb seasoning, and chicken seasoning into a resealable plastic bag, knead bag several times to coat chicken with marinade, and squeeze air from the bag. Seal and refrigerate 4 to 6 hours.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Pour canola oil into a large cast-iron or ovenproof skillet over medium-high heat. Heat the oil until a small droplet of water pops in the oil. Remove chicken breasts from marinade and discard used marinade. Place chicken breasts into hot oil, fry for 2 minutes, and flip chicken.
  • Place skillet into the preheated oven and bake until chicken is no longer pink inside and the juices run clear, about 12 minutes. Top each chicken breast with a slice of mozzarella cheese and a tomato slice.
  • Return to oven and bake until cheese has melted, 3 to 5 minutes. Transfer chicken breasts to a serving platter and top each with a basil leaf and a drizzle of balsamic vinegar.

1/2 cup butter, cubed
1 garlic clove, minced
1/2 cup all-purpose flour

1 teaspoon dried basil

Steps:

  • In a large saucepan, saute onion in butter until tender. Add garlic; cook 1 minute longer. Stir in flour and salt until blended; cook until bubbly. Gradually stir in broth and milk. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in 2 cups mozzarella, 1/2 cup Parmesan cheese, basil, oregano and pepper; set aside. , In a large bowl, combine the ricotta cheese, parsley and remaining mozzarella; set aside. 1 package (10 oz) frozen spinach, thawed, squeezed to drain
1 jar (15 oz) Alfredo pasta sauce
9 uncooked lasagna noodles
3 cups shredded mozzarella cheese (12 oz)
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix ricotta cheese, eggs, 1/2 cup of the Parmesan cheese, 1/4 cup of the basil, the garlic and salt. In another medium bowl, mix chicken, spinach and remaining 1/2 cup Parmesan cheese.
  • Spread 1/4 cup of the pasta sauce in bottom of baking dish; top with a layer of 3 noodles. On top of noodles, spoon half of ricotta mixture, half of chicken mixture, 1 cup of the mozzarella cheese and 1/2 cup of the pasta sauce. Repeat.   • Bake 45 to 50 minutes or until noodles are tender and casserole is bubbly. Let stand uncovered 10 minutes; sprinkle with remaining 1/4 cup basil.

2 boneless, skinless chicken breasts
olive oil
salt, to taste
pepper, to taste
8 oz mozzarella cheese, 1 package
1 cup tomato, diced
1 tomato, sliced
15 leaves fresh basil
1 cup balsamic vinegar
¼ cup honey

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a saucepan, heat balsamic vinegar and honey over high heat. Stir until sauce reduces to ⅓ cup (80 ml). Set aside.
  • On a cutting board, slice the chicken breasts in half horizontally.
  • Cover chicken with a piece of plastic wrap. Using the rough side of a metal mallet, pound the chicken until ½-inch (1 cm) thick. Repeat with remaining breasts.
  • Drizzle olive oil over pieces of chicken and season with salt and pepper.
  • Place 2 slices of mozzarella on each piece of chicken. Spoon ¼ cup (50 g) of diced tomatoes on each piece of chicken. Place 3 pieces of basil on each piece of chicken.
  • Roll up the chicken, making sure the ingredients are tucked under the breast and not pushed out the sides.
  • Place the roll-ups in a greased baking dish. Drizzle each roll-up with more olive oil and sprinkle with salt and pepper.
  • Bake for 15 to 20 minutes, until internal temperature reaches 160˚F (71˚C).
  • Place one slice of mozzarella on each roll-up. Broil for 5 to 10 minutes until the mozzarella has melted over the chicken.
  • Let chicken rest for 10 minutes. Place a basil leaf and slice of tomato on each piece of chicken. Drizzle with balsamic reduction.
  • Enjoy!

1/2 cup white wine
3 tablespoons garlic, minced, divided
1 1/2 cups heavy cream
3 1/2 teaspoons italian seasoning, divided
1 cup parmesan cheese, grated
1 1/2 teaspoons salt, plus
1 tablespoon salt, divided
1 cup vegetable oil
2 cups mozzarella cheese, shredded
1 1/2 cups flour, plus
1 tablespoon flour, divided
1 lb dry capellini (angel hair)

Steps:

  • Tomatoes and Basil Preparation:.
  • Core and cut Roma (plum) tomatoes into 1-inch pieces. Chef's Note: To preserve juices and seeds, use a paring knife to remove just the top of the core on each tomato.
  • Cut basil leaves into 1-inch pieces (no stems).
  • Combine Roma tomatoes, basil, 2 tablespoons of extra virgin olive oil, 2 tablespoons of minced garlic, 1½ teaspoons of Italian seasoning and 1½ teaspoons of salt in a large bowl and blend thoroughly.
  • Cover, set aside and refrigerate for at least 1 hour.
  • Chicken Preparation:.
  • Preheat oven to 350 degrees Fahrenheit.
  • Coat a large, non-stick skillet with vegetable oil and heat over medium-high heat.
  • Combine 1½ cups of flour, 1 tablespoon of salt, black pepper and 2 teaspoons of Italian seasoning in a shallow dish.
  • Dredge chicken in the mixture, shaking off any excess.
  • Place chicken in skillet and sauté for about two minutes on each side, or until just golden brown. If skillet is not large enough, sauté the chicken in batches.
  • When finished, transfer chicken to a large baking dish and place in oven to cook for approximately 10 minutes or until chicken is cooked through and the internal temperature reaches 165 degrees Fahrenheit.

  • Cook pasta according to package directions.
  • Drain and set aside until needed.
  • Sauce Preparation:.
  • While pasta is cooking, heat 2 tablespoons of extra-virgin olive oil in a medium sauce pan over medium heat.
  • Add 1 tablespoon of minced garlic and sauté for approximately 1 minute. Do not brown.
  • Slowly add 1 tablespoon of flour and stir to combine.
  • Add white wine and bring to a boil. Boil for approximately 1 minute.
  • Remove marinated tomato and basil mixture from refrigerator. Drain tomatoes and basil from liquid and set aside until needed. Add ½ cup of the marinade liquid and sauté for approximately 1 minute.
  • Add heavy cream. Lower heat and bring to a simmer.
  • Add grated Parmesan cheese.
  • Assembling Chicken Caprese:.
  • Preheat broiler.
  • Remove chicken from baking dish and set aside until needed.
  • Transfer pasta to baking dish and partly coat with sauce.
  • Pour desired amount of the remaining sauce on pasta and evenly distribute tomatoes and basil over pasta.
  • Place chicken on top of pasta.
  • Sprinkle shredded mozzarella cheese evenly over chicken.
  • Place baking dish under broiler for approximately 2-3 minutes or until mozzarella cheese has melted.
