A delicious and healthy chicken caesar salad wrap that is perfect for an easy meal or on the go!

3/4 cup lite Caesar Salad Dressing
1/4 cup parmesan cheese (grated)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 Tablespoon lemon juice
2 cups chicken breast (cubed cooked, Tyson grilled and ready worked great!)
2 cups romaine lettuce (I used the premium with shredded carrots)
3/4 cup salad croutons (chopped)
4 whole grain whole grain wraps (or tortillas)

Steps:

  • In a medium bowl, combine caesar dressing, parmesan cheese, garlic powder, pepper, and lemon juice. Add the romaine lettuce, cubed chicken and salad croutons. Toss until coated well.
  • Place about 2/3 of the chicken mixture into each wrap and roll up.

My girlfriend made these for a wedding shower and they were a huge hit. We ask her to bring them for dinner group and finally she gave us all the recipe. You can use light dressing and fat free tortillas to lighten the recipe!

2 boneless skinless chicken breasts (about 12 oz)
2 garlic cloves, minced
1/4 cup red onion
1/4 cup chopped olive (optional)
1/4 red bell pepper, chopped
1/4 cup fresh grated parmesan cheese
4 cups romaine lettuce, chopped
3/4 cup seasoned croutons
1/2 cup caesar salad dressing
6 flour tortillas

Steps:

  • Slice chicken and place it in a pan sprayed with non stick spray. Mince garlic and place in pan with chicken. Cook for 15 minutes or until no longer pink in the center. Occasionally turning the chicken.
  • Remove chicken to cutting board and let cool. When cool slice into bite sized pieces and place in a bowl.
  • Chop onion, olives and bell pepper. Chop or tear lettuce.
  • In a large bowl mix chicken, onion, olives, bell pepper and lettuce. Drizzle with dressing and toss lightly to coat.
  • For each wrap, place about 3/4 c of mixture in a line in the center of the tortilla. Roll up tightly. Repeat with remaining 5 tortillas.
  • Cut them diagonally in the center making 12 halves.

This is a quick and easy lunch - chicken Caesar wraps are one of my favorites! If you don't already have croutons, whip up a batch in the oven in just a few quick minutes. Homemade croutons make this wrap extra tasty.

1 slice bacon
1 cup chopped romaine lettuce
½ cup cooked, shredded chicken
¼ cup croutons
1 tablespoon Caesar's Salad Dressing
1 tablespoon grated Parmesan cheese
1 large flour tortilla

Steps:

  • Place bacon slice in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slice on paper towels, cool slightly, and crumble.
  • Combine bacon, lettuce, shredded chicken, croutons, dressing, and Parmesan cheese for the filling a a bowl. Toss gently to combine and everything is evenly coated with dressing. Adjust dressing amount to your personal preference - for me 1 to 1 1/2 tablespoons is about right.
  • Warm tortilla in the microwave for about 15 seconds to make it more pliable.
  • Lay filling ingredients down the center, and roll your wrap up! Enjoy!

4 slices cooked and crumbled bacon

1/4 cup crouton (flavored or not)
1/2 cup caesar salad dressing (we use Kraft Classic)
4 flour tortillas (8 inch)

Steps:

  • Place first 5 ingredients in large bowl.
  • Add dressing.
  • Toss lightly. (I cover the bowl with wrap and literally toss;).
  • Spoon onto (heated) tortillas.
  • Roll tortillas.
  • Enjoy.
