1 pound dry penne pasta
1 tablespoon butter
6 skinless, boneless chicken breast halves - cut into 1 inch cubes
½ teaspoon ground black pepper
¼ teaspoon salt
1 (8 ounce) bottle Caesar salad dressing
¼ cup red wine vinegar
½ cup grated Parmesan cheese
1 head romaine lettuce - rinsed, dried and shredded
1 large tomato, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Add chicken, pepper and salt. Cook 10 minutes or until chicken is cooked through. Remove skillet from heat.
  • In a bowl, mix together salad dressing, vinegar and cheese. Toss together pasta, chicken, lettuce, and dressing mixture. Place in large serving bowl, and sprinkle with tomato. Garnish with croutons and Parmesan curls, if desired.

This One Pot Chicken Caesar Pasta recipe is so easy to make! Angel hair pasta and blackened chicken are tossed in a creamy Parmesan sauce with a hint of Caesar dressing, lemons, and capers.

½ cup Parmesan cheese
1 cup Caesar salad dressing (divided)
¾ cup milk
2 small boneless skinless chicken breasts (or 1 large)
3 teaspoons lemon pepper seasoning
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic (minced)
2 cups chicken broth
8 oz. angel hair pasta (equal to 1/2 lb.)
1 Tablespoon capers
2 Tablespoons lemon juice
Freshly cracked pepper
Fresh Parsley (roughly chopped)

Steps:

  • Slice each chicken breast in half to create two thinner pieces of equal size. Season each side with lemon pepper seasoning.
  • Place the chicken in a freezer Ziploc bag and add ¾ cup of Caesar dressing (save ¼ cup for the pasta sauce). Coat the chicken with the dressing and seal. Refrigerate for 20 minutes (or longer if time allows.)
  • Meanwhile, shred the Parmesan cheese and set it aside. It should be at room temp when added to the sauce.
  • Take ¼ cup of the Caesar dressing and whisk it with ¾ cup milk. Set it aside, it should also come down to nearly room temp. Don't worry if it's not completely uniform in consistency.
  • Heat the oil over medium-high heat in a large high-walled skillet or dutch oven.
  • Add the marinated chicken and let it sear, undisrupted, for 4-5 minutes per side. Decrease heat to medium if oil begins to splatter.
  • Set the chicken on a plate. Let it rest for 5 minutes, then cut it into strips. Transfer any juice left on the plate back to the pot.
  • Reduce the heat to medium and melt the butter. Add the minced garlic. Heat for one minute.
  • Add the chicken broth, and use a silicone spatula to "clean" the bottom of the pot. Slowly stir in the milk/Caesar dressing. Bring to a boil.
  • Add the angel hair pasta and use kitchen tongs to gently bend the noodles into the pan as they soften. (If preferred, you can also break them in half.)
  • Let the pasta simmer for 4-5 minutes, stirring occasionally to ensure the noodles don't stick together.
  • Once the pasta is softened and cooked through, add the capers and decrease heat to low.
  • Gradually sprinkle in the Parmesan cheese, use tongs to toss and combine. Add the chicken back to the pan along with the lemon juice. Stir to combine.
  • Garnish with freshly chopped parsley. Add freshly cracked pepper and serve.

2-1/2 cups uncooked tricolor spiral pasta
1-1/2 cups cut fresh asparagus (1-inch pieces)
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
2 teaspoons olive oil
2 large tomatoes, chopped
2/3 cup reduced-fat Caesar vinaigrette
3 green onions, chopped
3 tablespoons grated Parmesan cheese

Steps:

  • In a Dutch oven, bring water to a boil. Add pasta. Return to a boil; cook for 4 minutes. Add asparagus; cook 6-8 minutes longer or until pasta and asparagus are tender. , Meanwhile, in a large nonstick skillet, saute chicken in oil until no longer pink. Remove from the heat. , Drain pasta mixture. Add the chicken, tomatoes and vinaigrette; cook over low heat until heated through. Sprinkle with onions and cheese.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup Parmesan
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated garlic
8 ounces penne pasta
One 8-ounce boneless, skinless chicken breast
1 1/2 teaspoons olive oil, plus more for oiling the grill grates
1 1/2 cups shredded romaine lettuce
1/4 cup finely chopped celery
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add it to the large bowl and set aside.
  • Prepare a grill or grill pan for medium-high heat. Sprinkle the chicken breast with salt and pepper. Lightly oil the grill grates or grill pan. Grill the chicken, flipping once, until well-marked and the internal temperature registers 165 degrees F on an instant-read thermometer, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Add the grilled chicken, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3 -4 grilled chicken breasts
3 cups romaine lettuce, chopped
3 cups cooked penne
2 cups halved cherry tomatoes
1/4 cup grated parmesan cheese
1/3 cup caesar salad dressing
1 garlic clove, minced
pepper

Steps:

  • On a cutting board, cut all of the chicken breasts into strips; set aside.
  • In a large bowl, combine chicken strips, pasta, chopped romaine, halved cherry tomatoes, and garlic.
  • Finally when ready to serve, toss salad with Caesar salad dressing, Parmesan cheese, and pepper to taste.

This is a simple way to make pasta salad. This was originally a baked casserole dish that I though would be great as a pasta salad. I like to use a store-bought roasted chicken and a bag of assorted pasta that has penne, spiral, bowties and shells! You could also try tortellini! I hope you enjoy!

7 ounces cooked tri-colored pasta, rinsed with cold water
2 cups rotisserie-cooked chicken, shredded or 2 cups cooked chicken breasts, diced
1 cup caesar salad dressing, Creamy Style
1/2 cup chicken broth
1/3 cup green onion, finely sliced
1/4 cup red bell pepper, diced
1 1/2 cups Italian cheese blend, shredded
1/4 cup parmesan cheese, shredded
1 cup crouton (I use my Parmesan Garlic Croutons!)

Steps:

  • Combine all ingredients EXCEPT croutons in a large bowl.
  • Refrigerate until ready to serve.
  • Toss with croutons before serving.

8 cloves garlic
½ cup olive oil, plus
2 teaspoons olive oil
2 12-inch baguettes, cut into 48 1/2-inch thick slices
½ cup mayonnaise
1 teaspoon finely grated lemon zest
3 tablespoons lemon juice
1 teaspoon Worcestershire sauce
½ cup grated Parmesan cheese, plus shavings for garnish
3 cups shredded breast from a large rotisserie chicken
Salt and ground black pepper
4 cups baby salad greens, romaine, if possible

Steps:

  • Adjust oven rack to center position and heat oven to 425 degrees.
  • Mince garlic in a food processor or blender. With motor running, slowly add 1/2 cup of the olive oil. Continue to process for about 30 seconds, then strain oil through a fine-mesh strainer. Add 2/3 of the garlic back into the oil, and reserve remaining garlic for the dressing.
  • Arrange bread on a wire rack set over a baking sheet. Brush garlic oil over bread. Toast until crisp and golden, about 7 minutes. Meanwhile, whisk mayonnaise, lemon zest and 2 Tbs. lemon juice, Worcestershire, grated Parmesan, and reserved garlic in a small bowl. (It can be covered and refrigerated for several hours.)
  • When ready to serve, toss dressing with chicken; season to taste with salt and pepper. Toss salad with remaining 2 tsps. of olive oil, and salt and pepper to taste. Drizzle in remaining 1 Tb. lemon juice; toss again. Top each toast with a portion of greens, chicken and a Parmesan shaving. (Toasts can stand uncovered for up to 2 hours.)
