1 lb boneless skinless chicken breasts
4 oz pepper jack cheese shredded (you can use up to 6 oz)
1 c frozen spinach thawed and drained (you can also use fresh cooked spinach)
2 tbsp olive oil
1 tbsp breadcrumbs (Italian style is good)
Sea salt to taste
Freshly ground black pepper to taste
Lots of toothpicks

Steps:

  • Preheat oven to 350 degrees Flatten the chicken to 1/4-inch thickness. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used! Brush each chicken breast with the olive oil. Sprinkle the seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through. Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallions.

2 Tbsp olive oil
1 Tbsp. breadcrumbs
2 Tbsp Cajun seasoning
Sea Salt (to taste)
Black pepper (to taste)
Lots of toothpicks

Steps:

  • Preheat oven to 350 degrees F.
  • Flatten the chicken to ¼ inch thickness
  • In medium bowl combine pepper jack cheese, spinach, salt and pepper.
  • Combine Cajun seasoning, and breadcrumbs together in a small bowl.
  • Spoon ¼ c. of spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. (Be sure to count the number of toothpicks you use for each chicken breast.)
  • Repeat for each chicken breast.
  • Brush each chicken breast with olive oil.
  • Sprinkle Cajun seasoning mixture evenly over all chicken.
  • (Optional) Sprinkle any remaining spinach mixture on top of chicken
  • Place chicken seam side up onto tin foil lined baking sheet.
  • Bake for 35-40 minutes or until chicken is cooked through.
  • When done, remove toothpicks before serving.
  • Can serve up with a salad and fruit for complete low carb meal!

1 lb boneless, skinless chicken breasts
4-6 oz pepper jack cheese, shredded
1 c frozen frozen spinach thawed and drained
2 Tbsp olive oil
1 Tbsp bread crumbs
sea salt to taste
cajun seasoning to taste
black pepper to taste
lots of tooth picks (secure breast together after stuffing)

Steps:

  • 1. Preheat oven to (350•)
  • 2. Flatten chicken breast to 1/4 inch thickness
  • 3. In a medium bowl combine pepper jack cheese, spinach, salt and pepper.
  • 4. In a small bowl combine Cajun seasoning and bread crumbs.
  • 5. Place a 1/4 cup spinach mixture onto each chicken breasts. Roll each chicken breast tightly and fasten with several tooth picks. You may need to use 8 tooth picks for each breast to ensure none of the filling seeps out. Be sure to keep track of how many you use. So you take them all out after cooking.
  • 6. Brush each breast with olive oil and sprinkle Cajun seasoning mixture evenly all over. Sprinkle any leftover spinach cheese mixture on top.(optional)
  • 7. Place chicken seam side up onto a tin foil lined baking sheet ( for easy clean up). Bake for 35 to 40 minutes or until chicken is cooked through.
  • 8. Remove the tooth picks before serving. Count to make sure you have removed every last toothpick! Serve whole or slice into medallions

6 oz Pepper Jack Cheese (Shredded).
2 cups Spinach (frozen or fresh depends on how you like it).
2 tbsp Olive Oil.
1 tbsp Bread crumbs.
2 tbsp Cajun Seasoning.
Salt as per your taste.
Black Pepper as per your taste.
Toothpicks.

Steps:

  • Preheat the oven at about 350 degrees F.
  • With the help of a Meat Mallet, flatten the chicken up to ¼ inches thickness.
  • Use a medium-sized mixing bowl, add Spinach, Pepper, Pepper Jack Cheese, and Salt. Mix them well.
  • Mix Bread-crumps and Cajun Seasoning in a small bowl.
  • This step can be a little technical, and some way finds it hard, but do not worry, try it out! Spoon small amounts of the mixture (Cheese/Spinach) onto the Chicken Breast. You can start from the smallest end, then tightly roll the Chicken Breast with the help of Toothpicks to keep the Chicken closed. Ready, Set, Cook! Hidden Valley Contest Entry. I love creating my own recipes and menus for people. I have been doing this since I was about 12 years old. I put together a birthday party with lots of freshly prepared food and cake that I prepared for my mom. I had help from my cousins and friends who were my assistants and servers. The party was a great success and I have been doing this ever since. I made this chicken dish 8 years ago and it was the only thing different my mom would eat so I made sure I perfected the dish just for her and of course others. I usually brine my chicken in a mixture of salt, brown sugar and water for at least 45 minutes

4 boneless skinless chicken breasts
2 tablespoons olive oil
1 Hidden Valley Original Ranch Seasoning Mix
1 lb fresh spinach
1/2 cup parmesan cheese
1/2 cup mozzarella cheese
1/2 cup seasoned bread crumbs
2 eggs, beaten
1 (6 ounce) can black olives, sliced (optional)

Steps:

  • Butterfly chicken breast and drizzle with olive oil.
  • Sprinkle chicken breast with Hidden Valley Seasoning and Dressing Mix and set aside.
  • In a saute' pan cook spinach until spinach has started to cook down. Remove spinach from heat and add to a medium bowl with Parmesan cheese, half of the mozzarella cheese, bread crumbs and beaten egg and olives. Mix all ingredients until well incorporated.
  • Place a large spoonful of spinach mixture in the middle of each chicken breast and fold over, covering the spinach mixture completely.
  • Sprinkle with remaining cheese and place on baking sheet and bake on 350 degrees for 20-25 minutes or until thermometer reaches 165 degrees when chicken is tested.

2 ounces monterey jack pepper cheese (can also use sliced deli cheese or cheese cubes)
4 boneless skinless chicken tenders or 4 chicken breast halves
1 teaspoon taco seasoning
1 tablespoon vegetable oil

Steps:

  • Cut cheese into two 2-1/4 in x 3/4 in strips.
  • Flatten chicken with a meat mallet.
  • Place a strip of cheese down the center of chicken.
  • Fold chicken over cheese and secure with toothpicks.
  • Rub seasoning over the outside of chicken.
  • In a large skillet brown chicken on both sides.(once the chicken has fried on one side you can remove the toothpick).
