250 g cut chicken (cut into thick cubes)
1 cup evaporated milk
1/4 cup condensed milk
2 sprigs curry leaves
2 chili padi (bird's eye chili)
1/4 cup + 1 tbsp corn flour
1/4 cup rice flour
1 tbsp unsalted butter
1 tbsp vinegar
1 egg
2 cloves garlic (finely chopped)
water
vegetable oil
salt
white pepper

Steps:

  • Marinate chicken. In a bowl, mix chicken cubes, ½ tbsp salt, and 1 tbsp white pepper, 1 tbsp vinegar until evenly coated. Set aside to marinate for an hour. After marinating, crack an egg into the chicken mixture and mix well.
  • Mix flour together. In separate bowl, combine ¼ cup corn flour with ¼ cup rice flour. Dip the marinated chicken pieces into the flour mixture until coated and dust off any excess flour. | To save time and add flavor, you can marinate the chicken one day in advance
  • Fry the chicken. Place a deep pan over high heat and heat up enough oil to fry the chicken. Fry the chicken pieces for 3 to 4 minutes until cooked through and is golden brown on all sides.
  • Fry butter, garlic and chili padi. In a separate pan on medium-high heat, fry 1 tbsp unsalted butter, chopped garlic and chopped chili padi for 1 minute until fragrant. | You can adjust the spiciness level of this dish by adding or removing the amount of chili padi, or just chop chili padi into smaller pieces
  • Make buttermilk sauce and cook chicken. Add curry leaves and fry until fragrant before adding 1 cup of evaporated milk and ¼ cup condensed milk. Season to taste with salt and white pepper. Mix 1 tbsp cornstarch with 1 tbsp water in a cup before pouring it into the pan. Stir well until the buttermilk sauce thickens. When the buttermilk sauce thickens, remove the pan from the heat and add the crispy fried chicken. Mix thoroughly so that the chicken is well coated with the savoury sauce.

1 teaspoon garlic salt

Steps:

  • Pour butter into two 13-in. x 9-in. baking pans. Pour 2 cups buttermilk into a shallow bowl. In another bowl, combine the flour, garlic salt, pepper and Creole seasoning. Dip chicken in buttermilk, then coat with flour mixture. Place bone side up in prepared pans. , Bake, uncovered, at 425° for 25 minutes. Turn; bake 10 minutes longer or until juices run clear. In a small saucepan, combine the soup and remaining buttermilk; cook and stir over medium heat for 5 minutes or until heated through. Serve with chicken.

1 (3 1/2 pound) chicken, cut into 8 pieces
2 cups buttermilk
Salt
Vegetable oil, for frying
1 cup self-rising flour
1/2 teaspoon sweet paprika
Freshly ground pepper
1/4 teaspoon garlic powder

Steps:

  • Toss the chicken, buttermilk and 1 teaspoon salt in a bowl. Cover and refrigerate, 1 hour.
  • Heat 1 inch of vegetable oil in a large deep skillet over medium-high heat until a deep-fry thermometer registers 360.
  • Mix the flour, paprika, 1/4 teaspoon pepper and the garlic powder in a shallow bowl. Remove the dark meat from the buttermilk, shake off the excess and roll in the flour mixture. Shake off the excess flour, place in the hot oil and fry, turning occasionally, until golden brown and cooked through, about 15 minutes (adjust the heat as needed). Drain on paper towels.
  • Reheat the oil to 360 degrees F. Repeat with the chicken breasts and wings, frying for about 15 minutes. Serve hot or at room temperature.

A slightly odd but really fantastic combination that must be tried

4 ounces (115 grams) or 1 stick butter
1/2 cinnamon stick
1 good handful fresh sage, leaves picked
2 lemons, zested
6 garlic cloves, skin left on
1 pint (565 milliliters) milk
1 (3 pound/ 1.5 kilogram) organic chicken
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C/gas 5), and find a snug-fitting pot for the chicken. Season it generously all over with salt and pepper, and fry it in the butter, turning the chicken to get an even color all over, until golden. Remove from the heat, put the chicken on a plate, and throw away the butter left in the pot. This will leave you with tasty sticky goodness at the bottom of the pan, which will give you a lovely caramel flavor later on.
  • Put your chicken back in the pot with the rest of the ingredients, and cook in the preheated oven for 1 1/2 hours. Baste with the cooking juice when you remember. The lemon zest will sort of split the milk, making a sauce, which is absolutely fantastic.
  • To serve, pull the meat off the bones and divide it on to your plates. Spoon over plenty of juice and the little curds. Serve with wilted spinach or greens and some mashed potato.

1 teaspoon hot-pepper sauce

3/4 cup grated Parmesan cheese (2 1/2 ounces)

4 pounds chicken parts (preferably legs, thighs, and wings), rinsed and patted dry

Steps:

  • Preheat oven to 400 degrees. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.
  • In a large bowl, stir together buttermilk, hot-pepper sauce, 3/4 teaspoon salt, and 1/2 teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.
  • Place the chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly. Place coated chicken pieces on prepared baking sheet.

10 chicken pieces (about 1¼kg/2lb 12oz), on the bone, skin on (use a mixture of thighs and drumsticks)
300ml buttermilk (see tips to make your own)
1 large egg
1-2 litres groundnut oil
grilled corn on the cob, to serve (optional)
skinny fries, to serve (optional)
coleslaw, to serve (optional)
zest 2 lemons
1 tsp chopped thyme
1 tsp paprika
1 tsp onion salt
1 tsp garlic granules
1 tsp flaky sea salt
225g plain flour
2 ½ tbsp cornflour
2 ¼ tsp garlic granules
2 ¼ tsp salt
2 ¼ tsp chilli powder

Steps:

  • Put all the dry brine ingredients in a large dish. Add the chicken, toss to coat well, then cover and chill for 12-24 hrs.
  • Put all the spiced flour ingredients in another dish or a large bowl, add a good grind of black pepper and combine well.
  • Put the buttermilk and egg in another bowl and lightly whisk until well combined.
  • Start to coat the chicken. Using one hand, dip the pieces in the buttermilk, making sure they are completely coated.
  • Using your other hand, roll the chicken in the spiced flour until covered all over.
  • Place the chicken on a wire rack with a baking tray underneath. Now you're ready to start frying.
  • Fill a deep cast-iron frying pan or heavy- based medium saucepan half full with oil and heat until the temperature reaches 170C on a cooking thermometer. Put a wire rack on a second tray, ready to drain the fried chicken.
  • Heat oven to 160C/140C fan/gas 3. Place 3-4 pieces of chicken into the hot oil. Don't overcrowd the pan. Cook for 10-12 mins. Poke your thermometer into the meat next to the bone - it will be cooked when it reaches 73C.
  • The oil temperature will drop when you add the chicken - adjust the heat to keep it steady at 140C during the cooking process. Once cooked, transfer to the clean wire rack and keep warm in the oven. Bring the oil back to 170C before cooking the next batch. Serve with your choice of sides.

Frying chicken at home can make quite a mess. Instead of a large pot of hot splattering oil, all you'll need for this recipe is an oven. This delicious oven baked buttermilk chicken has great taste thanks to a good spritzing of olive oil and a crisping blast of heat to start the baking.

  • Preheat oven to 400 degrees.
  • In a medium sized bowl mix together buttermilk, 1 tablespoon paprika, 2 teaspoons cayenne, 1 tablespoon garlic powder and 1 tablespoon of salt.
  • Add chicken to the buttermilk mixture. Mix to make sure the buttermilk is coating all of the chicken. Cover and refrigerate for at least one hour.
  • In a casserole dish mix together whole wheat flour, 1 tablespoon paprika, 2 teaspoons cayenne, 1 tablespoon garlic powder and 1 tablespoon of salt.
  • Remove the chicken from the buttermilk, draining any excess. Coat the chicken with the whole-wheat flour, making sure the chicken is completely covered.
  • Place on a wire rack on top of a baking sheet. Spray the rack with cooking spray thoroughly. Put the chicken on the rack and generously drizzle with the olive oil.
  • Bake the chicken for 15 minutes at 400 degrees, then turn the oven down to 300 degrees and bake it for another 10 minutes. Remove and serve.

This is a down home recipe that I have used for years, and thought I would share it! The buttermilk marinade is terrific and is such a comfort food. However this is not a recipe that can be done quickly, but the wait is WELL worth it!

1 ½ cups raw cashews (see notes)
2 tablespoons oil (divided)
1 lb. chicken thighs or breasts
1 medium onion (chopped)
5 cloves garlic (chopped)
2 inch piece of ginger (peeled and chopped)
28 ounce can of crushed tomatoes
2 tablespoons brown sugar or coconut sugar (omit for Whole30)
Sea salt (to taste)
1 tablespoon garam masala
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
¼ to 1 teaspoon chili powder
Seeds from 4 cardamom pods

Steps:

  • Place the cashews and 1 ½ cups of water into your blender or food processor and blend on high until completely smooth. Pour into a bowl and set it aside. Don't clean your blender yet - you'll need it again.
  • Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Add the chicken and cook until brown on both sides, about 10 minutes total. You don't need to cook the chicken all the way through. Chop the chicken into bite-sized pieces.
  • While the chicken is browning, start cooking the curry. Add the remaining tablespoon of oil to a large skillet over medium-high heat. Add the onion to the pan and cook until it is soft, about 5 minutes. Add the garlic and ginger and let it cook for 5 minutes more. Add all the spices to a small bowl while the onions are cooking.
  • Add the spices to the onions and let them cook for a minute, stirring the whole time. Pour the tomatoes into the pan and scrape the bottom of the pan. Carefully transfer to your blender and blend on high until smooth.
  • Pour the curry back into the pan, add the blended cashews, the chopped chicken, ½ cup of water, and (if using) the brown sugar. Bring the curry to a boil then reduce the heat to low, cover the pot, and let it cook for 10 minutes. Season to taste with sea salt.

THE ULTIMATE CHICKEN IN MILK



The ultimate chicken in milk image

This is one of my absolute favourite dishes, it's a real treat - you've got the lovely nutty, savoury flavours from the burnt butter, and citrussy, almost wine-gumminess of the slow-cooked lemon. It's certainly not an everyday meal, but it's just beautiful for a weekend lunch or a special occasion.

1 x 1.8 kg whole free-range chicken
1 teaspoon fennel seeds
200 g unsalted butter
1 bulb of garlic
2 onions
2 bulbs of fennel
1 lemon
1 large bunch of fresh sage (30g), mixed-colour, if possible
1- inch stick of cinnamon
1-1.5 litres whole milk

Steps:

  • First up, if you're jointing the chicken yourself, break the knuckles and chop them off with a sharp knife, through the joint.
  • Pull out the wings and cut them off at the base, cutting slightly into the breast so you get a generous meaty portion. Lightly cut through the skin between the chicken leg and breast, so that the leg falls to the side.
  • Bend the leg backwards to disjoint it, and turn breast-side down. Cut between the leg and breast, removing the whole leg, then repeat.
  • Find the joint in between the drumstick and thigh, tap the heel of the knife and cut through the bone, separating the drumstick and thigh, then repeat.
  • Leaving the breasts on the bone, carefully cut between the breasts and backbone to separate the front and back of the bird.
  • Slice between the breasts on the bone to separate, then use the heel of the knife to cut across each breast through the bone, leaving you with two large chunks, then slice each chunk into four pieces. Season the chicken with sea salt, black pepper and 1 teaspoon of fennel seeds. Pop the carcass in a bag and put in the freezer for tasty cooking another day - it makes an amazing stock.
  • Put a large non-stick pan on a medium-high heat with 50g of butter. Add the chicken wings, legs and thighs skin-side down to brown in the pan for around 3½ minutes, or until golden all over, turning occasionally. Once the butter is dark brown and almost burnt, transfer the chicken to a plate and throw away the oil and butter left in the pan. This will leave you with tasty sticky goodness at the bottom of the pan, which will give you a lovely caramelly flavour later on.
  • Return your chicken to the pan with another 50g of butter, and repeat the process, turning the chicken for another 3½ minutes, or until the butter is dark brown, then throwing away the almost burnt butter.
  • Go in with the breast meat and another 50g of butter, and return the browned meat to the pan for a final time along with the bulb of garlic, turning the meat occasionally to get an even golden colour.
  • Meanwhile, peel, quarter and add the onion. Finely slice the fennel stalks, stopping when you hit the bulb, finely slice the leafy tops, and cut the bulb into quarters, adding to the pan as you go.
  • Scrape up any sticky bits from the bottom of the pan, then make a well in the middle and add the final 50g of butter.
  • Use a speed-peeler to peel big chunks of lemon zest into the butter, pick in a large handful of sage leaves and add the cinnamon stick. Fry for a couple of minutes, or until the veg is softened, stirring occasionally.
  • Pour in around 1 litre of milk (half of the chicken should be submerged) and scrape up all the lovely sticky bits. Squeeze in the lemon juice. The lemon zest will sort of split the milk, making a sauce which is absolutely fantastic. Reduce the heat, cover with a cartouche (greaseproof-paper disc) and simmer for 50 minutes, removing for the final 20 minutes. Taste and check the seasoning and remove the cinnamon stick.
  • To serve, pull the meat off the bones and divide between plates. Spoon over plenty of juice and the little curds. Delicious served with Parmesan polenta and lemony greens.

  • Dip chicken breast in evaporated milk. Roll chicken mixture in flour, salt and pepper. Melt butter in large shallow baking dish. Place floured chicken in baking dish.
  • Bake uncovered at 425°F for 30 minutes.
  • Turn chicken over and pour mixture of soup, milk & water over chicken. Bake for another 30 to 45 minutes longer.

3 garlic cloves, peeled
284-300ml/approx. ½ pint buttermilk
10g/⅓oz fresh flatleaf parsley (optional)
1 tbsp chopped fresh rosemary or 2 tsp dried rosemary
1 tbsp soft light brown sugar or runny honey
1 tsp flaked sea salt or ½ tsp fine salt
1 tsp coarsely ground black pepper
4 chicken thighs
4 chicken drumsticks

Steps:

  • Flatten the garlic cloves with the end of a rolling pin, the side of a knife, or in a pestle and mortar. (If you chop or fully crush the garlic it could burn when the chicken is baked.) Put in a large bowl and add the buttermilk.
  • Roughly chop the leaves from half the parsley, if using, and return the rest to the fridge.
  • Stir the chopped parsley, rosemary, sugar, salt and pepper into the buttermilk. Add the chicken and turn to coat in the marinade. Cover the bowl and leave in the fridge for at least 8 hours, or overnight.
  • Preheat the oven to 200C/180C Fan/Gas 6. Line a large baking tray with foil and place a rack on top. Take the chicken out of the marinade, gently shaking off excess buttermilk and garlic. Place on the rack, with the thighs skin-side up. Discard the marinade.

1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder

Kosher salt and freshly ground black pepper, to taste
8 bone-in, skin-on chicken thighs
2 tablespoons unsalted butter
1 cup buttermilk
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat oven to 400 degrees F. In a small bowl, combine cumin, paprika, chili powder, oregano, garlic powder and onion powder; season with salt and pepper, to taste. Season chicken thighs with spice mixture, rubbing in thoroughly on all sides. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Remove from heat and stir in buttermilk. Place into oven and roast until completely cooked through, reaching an internal temperature of 175 degrees F, about 25-30 minutes. Serve chicken immediately, garnished with cilantro, if desired.

28 oz (800g) boneless and skinless chicken thighs or breasts (cut into bite-sized pieces)
1/2 cup plain yogurt
1 1/2 tablespoons minced garlic
1 tablespoon minced ginger ((or finely grated))
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon red chili powder
1 teaspoon of salt
2 tablespoons olive oil
2 tablespoons ghee ((or 1 tbs butter + 1 tbs oil))
1 large onion, (sliced or chopped)
1 1/2 tablespoons garlic, (minced)
1 tablespoon ginger, (minced or finely grated)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garam masala
1 teaspoon ground coriander
14 oz (400 g) crushed tomatoes
1 teaspoon red chili powder ((adjust to your taste preference))
1 1/4 teaspoons salt ((or to taste))
1 cup of heavy or thickened cream ((or evaporated milk to save calories))
1 tablespoon sugar
1/2 teaspoon kasoori methi ((or dried fenugreek leaves))

Steps:

  • In a bowl, combine chicken with all of the ingredients for the chicken marinade; let marinate for 30 minutes to an hour (or overnight if time allows).
  • Heat oil in a large skillet or pot over medium-high heat. When sizzling, add chicken pieces in batches of two or three, making sure not to crowd the pan. Fry until browned for only 3 minutes on each side. Set aside and keep warm. (You will finish cooking the chicken in the sauce.)
  • Heat butter or ghee in the same pan. Fry the onions until they start to sweat (about 6 minutes) while scraping up any browned bits stuck on the bottom of the pan.
  • Add garlic and ginger and sauté for 1 minute until fragrant, then add ground coriander, cumin and garam masala. Let cook for about 20 seconds until fragrant, while stirring occasionally.
  • Add crushed tomatoes, chili powder and salt. Let simmer for about 10-15 minutes, stirring occasionally until sauce thickens and becomes a deep brown red colour.
  • Remove from heat, scoop mixture into a blender and blend until smooth. You may need to add a couple tablespoons of water to help it blend (up to 1/4 cup). Work in batches depending on the size of your blender.
  • Pour the puréed sauce back into the pan. Stir the cream, sugar and crushed kasoori methi (or fenugreek leaves) through the sauce. Add the chicken with juices back into the pan and cook for an additional 8-10 minutes until chicken is cooked through and the sauce is thick and bubbling.
  • Garnish with chopped cilantro and serve with fresh, hot garlic butter rice and fresh homemade Naan bread!

1 1/2 tablespoons salt
1 1/2 teaspoons paprika
1/4 teaspoon black pepper
3 lbs chicken parts
vegetable oil
4 tablespoons melted butter
4 tablespoons milk

Steps:

  • Combine first four ingredients and dredge chicken it it.
  • Allow to dry for about 5 minutes.
  • Unused flour mixture can be used to make gravy.
  • Brown chicken in about 1/2" of hot oil.
  • Place browned chicken in shallow baking pan.
  • Do not stack or crowd.
  • Mix melted butter with milk and drizzle over chicken.
  • Bake uncovered at 350° for about 40 minutes or until done.
  • If chicken looks dry during baking, pour a little additional milk on it.

1 (10 3/4 ounce) can cream of chicken soup
1/4 cup water

Steps:

  • Preheat oven to 425.
  • Dip chicken in milk, then roll in seasoned flour.
  • Melt butter in 9 x 13 baking dish.
  • Place chicken, skin side down, in butter.
  • Cook 30 minutes.
  • Mix water, remaining milk and soup together.
  • Turn chicken and pour soup mixture over it.
  • Bake 30 minutes more.
  • Remove chicken and stir gravy.
