4 chicken breasts (thinly sliced, skinless boneless)
salt
1 tablespoon chili powder
8 oz corn (drained (half of 15 oz can))
15 oz black beans (from the can (washed and drained)
1 tablespoon chili powder
4 oz cotija cheese (crumbled (or use Feta cheese))
3 green onions (chopped)

Steps:

  • Preheat oven to 375 F.
  • Add chicken breasts to the medium casserole dish. Note: Make sure to use thinly sliced chicken breasts. If you bought large chicken breasts, you can slice each large chicken breast in half horizontally to make two thin chicken breasts.
  • Sprinkle the chicken with salt and chili powder.
  • Top the chicken with corn kernels and black beans.
  • Sprinkle with more chili powder. Top with crumbled Cotija cheese.
  • Bake for about 20-25 minutes or until the chicken is completely cooked through. Remove from heat. Top with chopped green onions.

1 cup chicken broth ($0.15)
1/2 Tbsp chili powder ($0.10)
1/2 tsp dried oregano ($0.03)
2 chicken breasts (about 1.5 lbs. total) ($2.99)
1 cup shredded cheddar cheese ($0.94)
2 green onions, sliced ($0.17)

Steps:

  • Preheat the oven to 375 degrees. Drain and briefly rinse the black beans. Add the dry rice, black beans, corn, salsa, chicken broth, chili powder, and oregano to an 8×8 inch casserole dish. Stir until everything is evenly combined.
  • Cut the chicken breasts into three pieces each. Push the chicken pieces down into the rice salsa mixture in the casserole dish. Try to push them down as far into the liquid as they'll go. Cover the casserole dish tightly with foil. Bake for one hour.
  • Take the casserole dish out of the oven, test the rice with a fork to make sure it is tender. If it is not, recover the dish, return it to the oven, and bake for 10-15 minutes more. When the rice is tender, sprinkle the cheese over top and return the casserole to the oven for a few minutes, or until the cheese has melted. Add the sliced green onions on top after baking and serve hot.

1 large green pepper (chopped)
2 cloves garlic (chopped)
1 bottle (15oz) chunky salsa
1 tablespoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 pound boneless, skinless chicken breast meat (chopped into bite size pieces)
2 cans black beans (drained and rinsed)
1 package 8-10 flour tortillas
4 cups shredded Mexican blend cheese
1 can 28 oz diced tomatoes

Steps:

  • Saute onion, green pepper and garlic in olive oil for about 5 minutes. Add cumin, salt, pepper, red pepper flakes, beans, salsa, tomatoes and chicken. Simmer on medium to low heat for 10 minutes.
  • Spoon some of this mixture into a 13 x 9 baking pan or two 8x8 pans.
  • Cut the tortillas in half.
  • Line the pan with the tortillas by placing the flat cut side against the sides allowing the center to overlap.
  • Sprinkle about 1/3 of the cheese on top of the tortilla layer.
  • Spoon half of the chicken and bean mixture on top.
  • Place another layer of tortillas on next followed by cheese and the remaining chicken & beans.

Steps:

  • Place chicken breasts in the bottom of the Instant Pot.
  • Pour black beans, corn, salsa, and taco seasoning on top of chicken.
  • Add water to Instant Pot (pour on the side so it doesn't wash seasoning off of chicken).
  • Place the lid on top of the Instant Pot and move the valve to SEALING. Press the MANUAL (PRESSURE COOK) button and set timer for 25 minutes if chicken is frozen (or 18 minutes if chicken is thawed).

1 tablespoon butter
2 ¼ cup water
1 Zatarain's® Spanish Rice
1 ½ cup salsa (divided (I used medium heat and the end result was a flavorful but mild dish, adjust heat to suit your preference!))
15 ounces black beans (rinsed and drained)
⅔ cup frozen corn
2 cups rotisserie chicken (shredded)
1 cup cheddar cheese (shredded)

Steps:

  • Preheat oven to 375°F and lightly grease an 11"x7" casserole dish with butter. Set aside.
  • Place a large skillet over medium-high heat and cook onions and peppers in olive oil until tender (about 3-5 minutes). Add garlic and butter and cook until fragrant and butter is melted.

I developed this quick and easy recipe through trial and error. I used to garnish it with sour cream, too, but I eliminated it in order to lighten the recipe. My friends all love it when I cook these chimichangas, and they're much healthier than deep-fried. -Rickey Madden, Clinton, South Carolina

1-1/2 cups cubed cooked chicken breast
1-1/2 cups picante sauce, divided
1/2 cup shredded reduced-fat cheddar cheese
2/3 cup chopped green onions, divided
1 teaspoon ground cumin
1 teaspoon dried oregano
6 flour tortillas (8 inches), warmed
1 tablespoon butter, melted
Sour cream, optional

Steps:

  • Preheat oven to 375°. In a small bowl, combine chicken, 3/4 cup picante sauce, cheese, 1/4 cup onions, cumin and oregano. Spoon 1/2 cup mixture down the center of each tortilla. Fold sides and ends over filling and roll up. Place seam side down in a 15x10x1-in. baking pan coated with cooking spray. Brush with butter. , Bake, uncovered, until heated through, 20-25 minutes. If desired, broil until browned, 1 minute. Top with remaining picante sauce and onions. If desired, serve with sour cream., Freeze option: Cool baked chimichangas; wrap and freeze for up to 3 months. Place chimichangas on a baking sheet coated with cooking spray. Preheat oven to 400°. Bake until heated through, 10-15 minutes.
