Steps:
- MIX together all the ingredients, carefully to not overmix.
- CREATE approximately 16 (2) ounce patties (flattened for even cooking)
- FRY patties in cooking oil over medium heat. Take care to cover your skillet during the process to ensure they cook through. The amount of oil will vary depending on the fat content of the meat and seasoning on your skillet.
- COOK through, checking with a thermometer until the internal temperature reaches 165
CHICKEN SAUSAGE PATTIES WITH APPLES & SAGE
These versatile sausage patties are a welcome addition to any meal. Serve alongside eggs in the morning, or as a burger at supper.

- Grate the apple with skin on and mix with onion, sage, allspice, garlic, salt, pepper, and beaten egg in a large bowl. Add in ground chicken and stir until very well combined.
- Shape mixture into eight ½ inch (1.2 cm) thick patties. To make cooking easier, refrigerate patties, covered in wax paper, for at least 2 hours or overnight. This helps the patties hold their shape.
- Pan fry patties in a non-stick skillet for about 6 minutes per side. Alternately, put patties on a sheet of foil sprayed with non-stick spray. Place on a preheated barbecue and grill for about 6 minutes per side at medium heat or until a meat thermometer inserted into the chicken pieces reads 165°F (74°C).

- Sear the sausages in the oil in a large skillet over medium-high heat until the internal temperature is 150 degrees F, about 5 minutes per side. Remove the sausages from the skillet and set aside. Return the skillet to medium-low heat and add more oil if the pan is dry. Add the onions and salt to taste and cook the onions until translucent and just beginning to brown, about 5 minutes.
- Deglaze the skillet with the vinegar, scraping the bottom to get all the brown bits (fond), which equals flavor. Add the cabbage and apples and stir to combine. Let it cook down a bit, stirring occasionally, about 4 minutes. Season with salt and sugar and cook until the cabbage and apples start to soften, another 5 minutes. Return the sausages and any juices that have collected to the skillet. Cover and cook to heat through. Sprinkle in some sage and cook until the internal temperature of the sausages is 165 degrees F, about 5 minutes more. Garnish with additional sage. Adjust the salt if needed, then serve with crusty bread.
SAGE, SAUSAGE AND APPLE DRESSING

- Preheat the oven to 325 degrees F.
- Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
- Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Loosely pack the dressing in the prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle about 2 tablespoons of turkey pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more.
OTTO'S CHICKEN APPLE SAUSAGE

- Par-freeze meat for 30 minutes. Have a meat grinder and stuffing attachments ready and assembled.
- In a small bowl, combine the salt, cinnamon, cloves, coriander, ginger and granulated onion so they will evenly disperse when adding to the ground meat. Slice the meat into 1-inch cubes. Grind the meat and apples together using the coarse disc on your grinder.
- In a large bowl, combine meat and apple mixture with the seasonings. Using your hands, mix the meat and seasonings well. This process may take a few minutes to get the seasonings well dispersed. Stuff the forcemeat firmly into the casings. Twist the finished sausage into 6-inch links.
- Poach the sausages in in 160 degree F water for 20 minutes. Cooked sausages keep, refrigerated, for up to 3 days.
CHICKEN AND APPLE SAUSAGE

- In a small nonreactive saucepan, boil down the cider almost to a syrup, about 2 to 3 tablespoons. Cool and reserve.
- If using chicken thighs, coarsely grind the boned chicken and skin or chop coarsely in batches in a food processor. Add the apple cider and the remaining ingredients to the ground chicken in a large bowl or plastic tub and blend thoroughly with your hands. Fry a small patty until done and taste for salt, pepper, and other seasonings.
- Divide sausage into 7 or 8 portions (each about 1/2 pound), wrap tightly in plastic wrap or aluminum foil, and refrigerate or freeze for later use. Or, if desired, stuff the sausage into casings.
CHICKEN SAUSAGE PATTIES WITH APPLE AND SAGE

- Prepare grill for cooking.
- Stir together all ingredients in a large bowl until combined well.
- Form rounded 3/4 cups of sausage mixture into 2-inch-diameter patties using moistened hands. When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill patties on lightly oiled grill rack, turning once, until cooked through, about 6 minutes.
HOMEMADE CHICKEN AND APPLE SAUSAGE
I got this recipe from my mom's Joy Of Cooking book. It is very easy, and only has half the fat of regular sausage! Also, you know what's in it (no lips and hooves)! To me, that is a major plus!

- Boil cider down to 2 or 3 tablespoons syrup in a small saucepan.
- Remove the bones from the chicken thighs, leave the fat on.
- Cut into 1" dices.
- Coarsely chop in food processor with dried apples.
- Mix the syrup, chicken and apple mixture with remaining ingredients, and squeeze the mixture with your hands until well blended.
- Will be a little sticky.
- Mold into patties and cook over medium heat until done, turning once.
- Use immediately or freeze for up to 2 months!

CHICKEN APPLE BREAKFAST SAUSAGE
This was not my favorite dish of the class, but it was a very close second. The best breakfast sausage I have ever tried! Eating raw meat is a HUGE NO NO - so to make sure you have added enough salt and/or seasoning, fry up a small piece of the sausage mixture to taste before you make the whole batch. This recipe will make 8 good sized patties or 16 small patties. These patties can be seared in a skillet, placed on a baking sheet lined with parchment paper and popped into a 400ºF oven for 10 min or so to finish the cooking.

- In a large, heavy skillet heat 2 Tbs of olive oil over medium-high heat.
- Add the onions and apples.
- Cook, stirring for 3-4 min or until onions have softened.
- Add the garlic and cook for 30 sec to 1 minute.
- Remove from the heat and cool.
- In a large bowl combine the chicken, pork, thyme, sage, salt and pepper.
- Add the cooled onion mixture and mix well.
- At this point take a small piece of the mixture and cook in a skillet with a little vegetable oil, taste to test the salt and seasoning - add more is necessary.
- On a plastic-covered surface, form the mixture into 8 good sized patties or 16 smaller patties.
- Heat 2 Tbs of vegetabel oil in a 12-inch skillet over high heat.
- Add 4 patties (or more if smaller) to the pan and cook until golden brown, about 3-4 min per side.
- Place cooked patties in a warm oven while you cook the rest of the patties.
- Add more oil if necessary and continue cooking patties in the same manner.

- Grind the dried apple or chop into small pieces.
- Grind chicken through KitchenAid grinder or food processor.
- Add the apple cider and remaining ingredient to the ground chicken in a large bowl.
- Blend thoroughly with clean hands.
- Divide the sausage into 7-8 portions(about 1/2 lb. each) place in freezer bags and freeze for later. May also stuff the sausage into casings if you desire to make 20 links.
- Use for breakfast or in salads.

- Coat a medium nonstick skillet with cooking spray.
- Heat over medium-high heat.
- Sprinkle chicken with salt.
- Place chicken in skillet.
- Cook for 8 to 10 minutes or until chicken is done (170 degrees F), turning once.
- Remove from skillet cover and keep warm.
- Add sweet pepper, apple juice, onion, dried sage (if using),garlic, and black pepper to skillet.
- Bring to boiling; reduce heat.
- Simmer, covered, for 2 minutes.
- In a small bowl combine water and cornstarch; stir into apples. Add to the sweet peppers, apple juice,onion, sage and pepper mixture.
- Cook and stir until thickened and bubbly.
- Cook and stir for 2 minutes more.
- IF using, Stir in FRESH SAGE.
- Return chicken to skillet; heat through.

- In a 12", extra deep skillet with a lid, heat oil over medium heat.
- Peel onion, slice into 1/8th inch thick slices, adding to skillet as you slice. Stir and cook.
- Meanwhile, slice each sausage unto 1/2" pieces; set aside.
- Core (but do not peel) the apples; chop into bite sized pieces.
- Add apples and sausage to the skillet; stir well and cook over medium heat.
- Thinly slice cabbage no larger than 1/4" wide slices for quick cooking; add to skillet.
- Add water, butter, and honey; stir to mix well.
- Bring liquid to a boil, cover skillet, and steam until cabbage is crisp tender, approx 5-6 minutes.
- Uncover the skillet and sprinkle with pepper and vinegar; toss to mix.
