Chicken fried rice, just like they serve in the restaurants! A stir fry with chicken, rice, soy sauce and veggies like peas, carrots, celery and bell peppers. This is something my sister just sort of whipped up one day. It's very good!

Steps:
- Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.
- Stir in carrots, celery, red bell pepper, pea pods and green bell pepper and stir-fry another 5 minutes. Then add rice and stir thoroughly.
- Finally, stir in scrambled eggs and 1/3 cup soy sauce, heat through and serve hot.

Easy, easy dinner. I make this a lot when my husband is gone and I don't feel like cooking anything complicated. Makes great leftovers for lunch the next day. I usually cheat and use a roasted chicken from the supermarket--I just heat the shredded meat in butter for a few minutes in step one instead of cooking it.

Steps:
- Melt butter in 10 inch skillet over high heat.
- Cook chicken in butter 3 to 5 minutes, stirring occasionally, until outside turns white.
- Stir in uncooked rice, sauce mix, and hot water.
- Heat to boiling, stirring occasionally.
- Reduce heat and cover.
- Simmer about 9 minutes, stirring occasionally, until most of the liquid is absorbed.
- Stir in soy sauce, brown sugar and peanut butter (I use more than the recipe calls for) and stir until peanut butter is melted.
- Stir in vegetables.
- Heat to boiling, stirring frequently.
- Stir before serving.

- Clean and rub chicken with salt. Clean the chicken and slice away the fatty parts at the rear end of the chicken. Set aside chicken fat. Pat dry and rub the chicken with 1 tbsp salt then rinse the chicken under running water to remove excess salt. | Rubbing chicken with salt will give the chicken skin a nice sheen.
- Add chicken to water. To the pot of boiling water, add chicken breast-side up. Leave the pot covered on the stove on medium heat, for about 45 to 50 minutes.
- Make chili sauce. With a blender, blend large red chili, chili padi, 8 cloves garlic, 10 g ginger, 2 tbsp chicken stock, 1 tbsp white vinegar, 2 tsp sugar and 4 tbsp water. Set aside.
- Make ginger garlic sauce and soy sauce. In a small pot on high heat, heat 3 tbsp vegetable oil. Once oil is hot, remove from heat and add 2 minced garlic cloves and 10 g minced ginger. Stir and let it sizzle for 3 minutes. Add ½ tsp salt and 1 tsp vinegar and stir for 5 minutes, until aromatic and lightly caramelized to a light brown color. Set aside. In a bowl, mix 3 tbsp soy sauce, 1 tbsp sesame oil and 1 tbsp chicken stock until well combined.
