EASY CHICKEN ALFREDO LASAGNA
A twist on traditional lasagna, this recipe uses cooked chicken breast and alfredo sauce. My picky little eaters love it, as well as any adult that's sampled it. It's quick and easy to make, and can be doubled for large gatherings!

- Preheat oven to 375. Cook noodles. In small bowl combine alfredo, milk and oregano.In another bowl mix cooked chicken, peppers, onion, garlic, and cheese. Mix well. In a 9x13 pan, spread 2/3 cup of alfredo sauce mixture over bottom of dish, top with half of the noodles, and half the spinach, then the chicken mixture. Repeat layers and finish off by pouring remaining sauce on top. Cover with foil, bake for 45 minutes, then remove foil and bake another 10-15 minutes. Sprinkle extra mozzarella cheese on top, if desired.

- Heat the olive oil in a large saucepan over medium heat. Add the sausage and cook for about 3 minutes, until no longer pink. Add the onion, garlic, and red pepper flakes and continue cooking for about 5 minutes, until the onion is soft and translucent. Add the tomatoes and simmer for 15 minutes. Season with salt and pepper. Preheat the oven to 350°F. Combine the ricotta and milk in a mixing bowl. In a 9" x 9" baking pan, lay down a layer of 4 noodles. Cover with a quarter of the ricotta mixture and a quarter of the sausage mixture, then a few basil leaves and a quarter of the mozzarella. Repeat three times to create a four-layer lasagna. Cover with aluminum foil and bake for 25 minutes, until the cheese is melted and the pasta cooked through. Remove the foil and increase the temperature to 450°F. Continue baking for about 10 minutes, until the top of the lasagna is nicely browned.

CHICKEN AND ITALIAN SAUSAGE ALFREDO LASAGNA

- Preheat oven to 375 - makes 1 13×9″ pan.
- In a frying pan on medium heat add 1 T Olive Oil. When heated, add 1 clove garlic and half of the chopped onions and cook until translucent (about 2 minutes). Add chicken, bulk sausage, 1 tsp Italian Seasoning, and Paprika. Cook until meat is cooked thoroughly.
- Meanwhile, cook lasagna noodles according to package directions. Drain and set aside in single layer so they don't stick together.
- In a small bowl combine Ricotta Cheese, egg, and 1 T Italian Seasoning - set aside.
- In a saucepan over medium heat - use remaining Olive Oil (1T), 1 clove garlic, and remaining onions. Heat until translucent. Add heavy whipping cream. When warmed, add 2-1/2 cups shredded Parmesan. Cook stirring constantly until cheese melts but DO NOT ALLOW TO BOIL - turn the heat down if it gets too warm.
- Assembly: Put a thin layer of white sauce on the bottom of your 13×9″ pan. Top with enough noodles for a single layer. I use wide-lasagna noodles so it takes 3 to do each layer for a total of 9 noodles.
- Top the noodles with 1/2 of the Ricotta Cheese mixture.
- Add 1/2 of the meat.
- Add 1/3 of the Mozzarella Cheese and sprinkle with scant tsp Italian Seasoning.
- Repeat and finish with white sauce, reserved Parmesan, Mozzarella, and sprinkle with scant tsp of Italian Seasoning.
- Bake at 375 degrees for 45 minutes. If the top starts to brown too much, cover in foil. Remove from oven and let sit 15 minutes before cutting.

CHICKEN ALFREDO LASAGNA

- For the chicken: Preheat the oven to 350 degrees F.
- Sprinkle the chicken breast with the Italian seasoning, salt and pepper. Heat the oil in a pan and cook the chicken on medium heat until it registers 165 degrees F in the middle, about 5 minutes on each side. Cube the chicken and set aside.
- For the alfredo sauce: In the same pan that the chicken was cooked in, melt the butter over low heat. Add the minced garlic and cook until the garlic has softened, about 2 minutes. Add the flour and whisk until smooth. (Be careful not to brown the roux.) Add the milk and heavy cream a little at a time, making sure to whisk until smooth after each addition, and let thicken, about 5 minutes. Add the nutmeg and pepper. Whisk to combine. Turn off the heat and mix in 2 1/2 cups Parmesan. Stir until all the cheese is melted. Add salt and pepper to taste.
- Layer 1 cup of the alfredo sauce on the bottom of a 9-by-13-inch baking pan. Add 3 lasagna noodles. Spread another cup of alfredo, a third of the chicken, a sprinkle of parsley and a quarter of the mozzarella. Then add 3 more noodles and repeat the layering two more times, ending with alfredo sauce, the remaining mozzarella and 1/2 cup shredded Parmesan.
- Bake until browned on top, 40 to 50 minutes. Remove the lasagna from the oven and sprinkle with parsley. Let the lasagna rest for 10 minutes before cutting into it.
ITALIAN SAUSAGE AND CHICKEN

Steps:
- In a nonstick skillet brown the sausage (apprx 8 minutes).
- Then remove onto a plate.
- Then put in chicken and cook for 5 minutes, turning once.
- Put on plate with sausage.
- Heat oil in the skillet and add the garlic and rosemary and saute for 1 minute.
- Then add potatoes and water and cover and cook for 15 minutes.
- Then push potatoes over to the side of skillet and add back in the chicken and sausage.
- Add in the salt, pepper, wine, vinegar, and red peppers.
- Cover and cook an additional 35 minutes, when chicken registers 170*.
- Take chicken and sausage back out onto plate, and cover.
- Cover skillet back up and cook potatoes, until they are tender (apprx 8 minutes).
- Pour over chicken.

- Combine ground beef and sausage with your choice of seasoning and cook over medium heat until brown. While the meat mixture is cooking, mix together ricotta and parmesan with eggs. Stir until blended, set aside.
- When the meat is browned, drain as much grease as possible from it before stirring into egg and cheese mixture.
- Spray a bread pan or casserole with non-stick cooking spray. Pour in enough sauce to cover the bottom of the pan, layer in a noodle. In the bread pan, one noodle fills the bottom and makes layering a snap.
- Next, layer on meat mixture and top with shredded mozzarella. Repeat layering process with sauce, noodle, meat and cheese. Pour a final layer of sauce and then top off with cheese. Cover with foil and bake about 35 minutes, until mixture is bubbly, then remove foil and bake another 10-15 minutes until cheese is melted and edges are brown.
- Remove from oven, let cool a few minutes before plating. Serve with warm, crusty bread and a green salad for a lovely and simple meal.
ALFREDO LASAGNA WITH SAUSAGE
My son is allergic to tomatoes and peppers, so I'm always trying new recipes. He misses pasta, so I came up with this. It came out delicious and includes all the food groups! Any vegetables you have on hand will work.

- Preheat oven to 350°.
- Make your alfredo sauce by first melting butter and sauteeing garlic in a medium saucepan.
- Don't brown the garlic. Add two cups of half and half and bring to a simmer.
- Add parmesan cheese, and add oregano,salt and pepper to taste.
- Stir until cheese is melted and set aside.
- Peel sausage links, if necessary and brown sausage in a little bit of oil in a saute pan. Add sliced onions and mushrooms and cook while stirring, until onions are soft.
- Cut up your vegetables into bite size pieces and rinse.
- Spray a 13 x 9 pan with cooking spray and place a couple of large spoonfuls of sauce into the bottom .
- Lay in four or five of your cooked noodles and top with sausage mixture.
- Top with alfredo sauce, and add another layer of noodles.
- Sprinkle in your vegetables and top with alfredo sauce and half of the mozzarella cheese.
- Top with remaining lasagna noodles and cover with remaining alfredo sauce.
- Sprinkle top with mozzarella cheese and sprinkle top with parmesan cheese, if desired and cover with non stick aluminum foil (or spray foil with cooking spray).
- Bake at 350° for about an hour.
- If you want to brown the cheese, take the foil off for the last 10 minutes.

SAUSAGE-SPINACH ALFREDO LASAGNA
You can make this into a lower-fat version by using lower-fat cheeses and alfredo sauce. Italian sausages may be replaced for the turkey sausage. Purchase a good-quality alfredo sauce for this, it will make all the difference to this recipe, really you can use as much sauce as desired, the amount listed is only a guideline. This can be completely prepared up to 24 hours in advance, covered and refrigerated, or you can prepared the ricotta/spinach mixture up to a day ahead. This lasagna is *delicious* :)

- Grease a 13 x 9-inch baking dish.
- In a large skillet brown the turkey sausage meat in 1 tablespoon oil along with the onion, garlic and cayenne pepper; cook breaking up the sausage meat while browning.
- Cook until browned then add in the chopped red peppers; cook for another 2 minutes; drain fat and set aside.
- Place the spinach in a small saucepan, cover with water and bring to a boil simmer over low heat for about 10 minutes; place in a small colinder, rinse under cold water then hand-squeeze very dry.
- Place the spinach in a large bowl, then add in the cottage cheese, ricotta cheese, fresh garlic, 1 egg, 1/2 cup Parmesan cheese, 1-1/2 cups mozzarella cheese, seasoned salt and black pepper; mix with a wooden spoon until well combined.
- Spread 1 cup alfredo sauce onto the bottom of prepared baking dish, then top with 4 cooked lasagna noodles, then HALF of the ricotta/spinach mixture, then sprinkle HALF of the sausage mixture on top.
- Place about 1 cup (or more) of shredded mozzarella cheese on top of the sausage.
- Repeat the layers (using 1 cup sauce, 4 lasagna noodles, remaining HALF of the spinach/ricotta mixture and then remaining HALF of the sausage mixture).
- Top with remaining 4 lasagna noodles, then 1 cup shredded mozzarella cheese ( can use more cheese).
- Drizzle remaining alfredo sauce over the shredded cheese, then sprinkle with about 3/4 to 1 cup Parmesan cheese (or to taste).
- Cover with foil and bake at 350 degrees for 50 minutes.
- Remove the foil and bake uncovered for another 10-15 minutes.
- Let stand for 20 minutes (or more) before slicing.

- Preheat oven to 350 degrees F (175 degrees C).
- In a skillet over medium heat, cook the sausage until evenly brown. Drain, and mix in the spinach and Alfredo sauce. Season with pepper. Continue cooking until spinach and sauce are heated through.
