CHICKEN & CHEESE NOODLE BAKE
This is the recipe my daughters and I often make for new parents when they come home from the hospital. With its creamy spaghetti filling and melted cheese topping, this casserole holds a nice cut and comforts hungry tummies. -Fancheon Resler, Bluffton, Indiana

- Preheat oven to 350°. Cook spaghetti according to package directions. , Meanwhile, in a Dutch oven, saute onions and peppers in butter until tender. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in chicken, soups, sour cream, celery salt and pepper., Drain spaghetti; add to sauce mixture and toss to coat. Transfer to 2 greased 11x7-in. baking dishes. Sprinkle with cheeses. Cover and bake 20 minutes. Uncover and bake 5-10 minutes longer or until bubbly. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake as directed, increasing covered time to 40 minutes or until heated through and a thermometer inserted in center reads 165°. Uncover; bake 5-10 minutes longer or until bubbly.

Transfer to two greased 11-in. x 7-in. baking dishes. Sprinkle with cheeses. Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350 degrees F for 20 minutes. Uncover and bake 5-10 minutes longer or until bubbly. To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 degrees F for 40 minutes. Uncover and bake 5-10 minutes longer or until bubbly.

- 1. Preheat oven to 350 degrees. Spray a 9x13 inch pan or casserole dish with vegetable spray. Cook noodles in boiling water until just done (al dente), and drain.
- 2. Melt 3 tablespoons butter in large fry pan and cook celery and onion until very tender. Stire in soup, milk, and cheese until cheese melts.
- 3. Add the noodles, peas, chicken and salt and pepper to the cheese sauce mixture. Spread mixture into the baking dish. (if you don't have a large enough pan, just combine everything in a large bowl, prior to spreading in baking dish)
- 4. Melt 2-3 Tablespoons butter in pan and add bread crumbs. Toss to brown evenly. Remove from pan and sprinkle buttery crumbs evenly over mixture in casserole pan.
- 5. Bake for 30 minutes,
CHICKEN NOODLE BAKE
This recipe uses no crust. You could if you want to though. It's a comfort food that will warm you innards up! You can add most anything to it. The mushrooms you can use fresh or canned. I like the fresh. Seasonings are to taste. Try more or different seasonings too! Try a different cheese. Try adding some left over ham or crumbled bacon to the dish too. Note: 15 minutes of the cook time is included in the cooking time.

- In large skillet, saute carrots, celery, and onions till tender.
- Stir in soups, milk, and cheese.

- Oven at 375f.
- Cook noodles as per package directions. Drain and set aside.
- In a small saucpan, melt butter and sautee onions and celery, until onions are tender. Add cream of mushroom soup and milk.
- Stir until bubbling. Add one cup of grated cheese and pepper. Stir until melted.
- In a casserole dish, combine noodles, chicken and cream of mushroom soup mix. Stir until blended. Top with 3/4 cup of cheese.
- Bake for 30-35 minutes.

Add mushrooms; cook 1-2 minutes longer or until tender. Remove vegetables with a slotted spoon; set aside. Add flour to the skillet; stir until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Gradually stir in half and half. Add the cream cheese; cook and stir until cheese is melted. Remove from the heat.
- In a large bowl, combine the chicken, salt, noodles, vegetable and cheese sauce; mix well. Transfer to an ungreased 3 qt baking dish. Combine topping ingredients. Sprinkle over top.
- Cover and bake at 350°F for 20 minutes. Uncover; bake 15-20 minutes longer or until hot and bubbly.
