1 can (11 ounce) corn
1 can (4 ounces) jalapeños
1 cup red bell pepper
1 package butter lettuce
12 ounces chicken
2 tomatoes

pepper

Steps:

  • In a medium bowl, combine the chicken, beans, corn, tomatoes, jalapeños, and toss with enough of the dressing to lightly coat.
  • Chill covered for 30 minutes.
  • Arrange the lettuce in a single layer on a platter or in a salad bowl. Serve garnished with the red pepper and seasoned with salt and freshly ground pepper.

Steps:

Steps:

  • Brush the chicken breast with the olive oil and season to taste
  • Grill the chicken breast at 325 for 10 minutes on each side, or until juices run clear and the breast is grill marked
  • Combine all the ingredients for the salad as described
  • Whisk together the dressing and serve on the side in a bowl to drizzle on the salad as desired
  • When the chicken is done remove from heat, cool to handling and slice into strips, as desired

1/4 cup tortilla strips
1/3 cup Jalapeno Lime Ranch Dressing
1/4 cup Ortega Chipotle Taco Sauce

  • Marinate chicken in Mojo Criollo marinade in the refrigerator
  • Mix together Jalapeno Lime Ranch Dressing and add Chipotle Taco Sauce and refrigerate overnight
