- In a microwave-safe bowl, melt butter and peanut butter; stir until smooth. Combine sugar and flour; gradually add to butter mixture and mix well. - Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
- Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. Fold in the flour mixture until just combined (be careful not to over mix the dough or the bars will be tough). Fold in the chocolate chips and the peanuts.
- Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
- Lift up on the foil overhang to remove the bar from the pan, and transfer it to a cutting board. Use a ruler to cut it into 2-inch squares.

Found in a Nestle booklet. It has been a while since I've made these but my notes say they stay chewy & moist for a while if kept tightly covered. Pretty sweet so cut into smaller bar sizes (2"x1"). A little bite goes a long way.

- Preheat oven to 350°F Grease at 13x9" baking pan.
- In a large mixer bowl, beat brown sugar and butter together until creamy.
- Beat in corn syrup and vanilla; then stir in uncooked oats.
- Press dough into bottom of the prepared pan.
- Bake 15 minutes. Cool slightly (about 10-15 minutes).
- While this is cooling, in a small saucepan, combine chocolate chips and peanut butter. Cook over low heat, stirring constantly until smooth.
- Spread this mixture over the crust. Sprinkle with chopped peanuts and then cool completely. Refrigerate 10 minutes to set chocolate mixture after letting it cool on its own to set chocolate mixture.

- Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with non-stick cooking spray. See note*
- Combine the flour, salt, baking powder, and grated nutmeg in a bowl and whisk to combine.
- In another mixing bowl, whisk eggs. Add brown, cooled melted butter, and vanilla. Whisk until smooth.

- Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9x13-inch baking dish with nonstick cooking spray; set aside.
- In a medium bowl, mix together the flour, oats, baking soda and salt.

These peanut butter cookie bars are soft, chewy and filled with a combo of chocolate chips and peanut butter chips. Made in a 9x13 inch pan, or you can easily half the recipe for an 8x8 inch pan.

- Preheat the oven to 350F degrees.
- Lightly spray a 9x13 inch (23x28 cm) pan non-stick cooking spray and then with parchment paper, leaving an overhang around the edges. Lightly greasing the pan first stops the parchment from sliding around.
- In a large bowl beat together the butter, brown sugar and white sugar until no lumps remain.
- Beat in the peanut butter until smooth. Then mix in the eggs and vanilla extract.
- Turn the mixer down to low speed and mix in the flour, baking powder and salt. Turn of the mixer and scrape down the sides of the bowl as needed.
- Stir in the chocolate chips and peanut butter chips.
- Spoon the batter into the prepared pan and smooth the top.
- Place in the preheated oven in the middle rack and bake for 30 minutes, or until an inserted toothpick comes out clean or with a few crumbs. It may take anywhere between 25-35 minutes, depending on your oven.
- Remove from the oven and place the pan on a wire rack to cool, keeping the bars in the pan. Cool for at least 45 minutes, or cool the pan is room temperature for clean cuts (what's pictured).
- To slice the bars, lift them out of the pan using the parchment paper overhang. Place on a cutting board and slice. Store cooled bars in an airtight container for up to 4 days at room temperature.
