1/2 cup creamy peanut butter
1-1/2 cups sugar
1 cup all-purpose flour
2 large eggs, room temperature, lightly beaten

Steps:

  • In a microwave-safe bowl, melt butter and peanut butter; stir until smooth. Combine sugar and flour; gradually add to butter mixture and mix well. Beat in eggs and vanilla. , Spread into a greased 13x9-in. baking pan. Bake at 350° until lightly browned and edges start to pull away from sides of pan, 28-32 minutes. Cool on a wire rack.

Cooking spray
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2/3 cup creamy peanut butter
2 teaspoons pure vanilla extract
2 cups bittersweet chocolate chips (about 12 1/2 ounces)
1/2 cup chopped salted peanuts (about 2 ounces)

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. Fold in the flour mixture until just combined (be careful not to over mix the dough or the bars will be tough). Fold in the chocolate chips and the peanuts.
  • Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
  • Lift up on the foil overhang to remove the bar from the pan, and transfer it to a cutting board. Use a ruler to cut it into 2-inch squares.

  • In a bowl, combine flour and sugar; cut in the butter until mixture is crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until lightly browned. , In a large bowl, beat the eggs, corn syrup, sugar, peanut butter and salt until smooth. Fold in coconut and chocolate chips. 1 egg
1/3 cup peanut butter

3/4 cup raisins (or chocolate chips)

Steps:

  • Cream butter and sugars well. Blend in beaten egg, peanut butter and vanilla.

1 cup brown sugar, firmly packed
2/3 cup butter, softened (equals 10 2/3 tbls)
1/3 cup light corn syrup
1 teaspoon vanilla
4 cups quick oats, uncooked
1 cup semi-sweet chocolate chips
2/3 cup creamy peanut butter
1/2 cup unsalted peanuts, chopped

Steps:

  • Preheat oven to 350°F Grease at 13x9" baking pan.
  • In a large mixer bowl, beat brown sugar and butter together until creamy.
  • Beat in corn syrup and vanilla; then stir in uncooked oats.
  • Press dough into bottom of the prepared pan.
  • Bake 15 minutes. Cool slightly (about 10-15 minutes).
  • While this is cooling, in a small saucepan, combine chocolate chips and peanut butter. Cook over low heat, stirring constantly until smooth.
  • Spread this mixture over the crust. Sprinkle with chopped peanuts and then cool completely. Refrigerate 10 minutes to set chocolate mixture after letting it cool on its own to set chocolate mixture.

18 Reese's Peanut Butter Cups, cut in quarters
½ cup peanut butter-flavored chips (85g)

  • Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with non-stick cooking spray. See note*
  • Combine the flour, salt, baking powder, and grated nutmeg in a bowl and whisk to combine.

These peanut butter cookie bars are soft, chewy and filled with a combo of chocolate chips and peanut butter chips. Made in a 9x13 inch pan, or you can easily half the recipe for an 8x8 inch pan.

3/4 cup unsalted butter (softened)
3/4 cup brown sugar (light or dark)
3/4 cup white sugar
1 cup smooth peanut butter* (do not use homemade or natural)
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chocolate chips*
3/4 cup peanut butter chips* (or replace the peanut butter chips with more chocolate chips)

Steps:

  • Preheat the oven to 350F degrees.
  • Lightly spray a 9x13 inch (23x28 cm) pan non-stick cooking spray and then with parchment paper, leaving an overhang around the edges. Lightly greasing the pan first stops the parchment from sliding around.
  • In a large bowl beat together the butter, brown sugar and white sugar until no lumps remain.
  • Beat in the peanut butter until smooth. Then mix in the eggs and vanilla extract.
  • Turn the mixer down to low speed and mix in the flour, baking powder and salt. Turn of the mixer and scrape down the sides of the bowl as needed.
  • Stir in the chocolate chips and peanut butter chips.
  • Spoon the batter into the prepared pan and smooth the top.
  • Place in the preheated oven in the middle rack and bake for 30 minutes, or until an inserted toothpick comes out clean or with a few crumbs. It may take anywhere between 25-35 minutes, depending on your oven.
  • Remove from the oven and place the pan on a wire rack to cool, keeping the bars in the pan. Cool for at least 45 minutes, or cool the pan is room temperature for clean cuts (what's pictured).
  • To slice the bars, lift them out of the pan using the parchment paper overhang. Place on a cutting board and slice. Store cooled bars in an airtight container for up to 4 days at room temperature.

One 10-ounce bag marshmallows

  • Preheat the oven to 350 F. Line a 8X8 pan with parchment paper along the bottom up the sides and with a 1-2" overhang. This makes it easier to lift the cookies out of the pan without breaking them. My preferred way to do this is to measure out/cut a piece of parchment to fit from one side to the opposite side. If you want, you can repeat to fit the exposed sides of the pan.
  • In a stand mixer with paddle attachment/ hand mixer with beaters, beat the sugar and butter on medium speed until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, beating each one on low for about 20 seconds before adding the next.
  • Add the dry ingreidents to the wet and mix by hand or on the lowest setting until JUST combined. Once the dough is mostly combined, add in the chopped PB cup and chocolate pieces. Work into the dough until mostly combined. While the dough is still in the bowl, use your hands to incorporate any stray pieces that didn't get worked into the dough. Starting at the edges, working in to the center, evenly press the dough into the prepared pan.
