HOMEMADE GRANOLA BARS
Make Homemade Granola Bars with this easy Ina Garten recipe from Barefoot Contessa on Food Network, perfect for breakfast or for a quick, high-energy snack.

Steps:
- Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
- Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
- Reduce the oven temperature to 300 degrees F.
- Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
- Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.
GRANOLA BARS

- Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350 degrees F.
- Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
- In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
- Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.
CHEWY CHOCOLATE CHIP GRANOLA BARS
These homemade granola bars are supremely chewy and have no weird ingredients. They are great for breakfast, snack, or sack lunch treat!

- Butter an 8x8 baking pan and set aside. In large bowl, combine oats and cereal only.
- In a saucepan, melt brown sugar, honey, and butter over medium heat, stirring, until it reaches a low boil. Immediately reduce to simmer, and stir another 2 minutes. Remove from heat, and stir in cinnamon and vanilla extract until fully incorporated.
- Carefully pour melted honey mixture over the cereal mixture. Mix until fully incorporated. Press granola mixture into the buttered pan, pressing down to pack the granola tightly and evenly into pan. Sprinkle mini chocolate chips evenly over top of granola, using back of spoon or slightly wet hands. (Mini chips may melt if you try to fully mix into the granola rather than sprinkle on top)
- Allow granola to fully cool before cutting. Store in airtight container.
- Note: If your granola bars break apart, it may help to chill the bars prior to cutting.
SOFT & CHEWY GRANOLA BARS
This recipe is from my daughter's Home Ec class. She brought a sample home after they made them. They are nice and soft, a little chewy, and very tasty. I would think you should be able to change it up to suit your family. Try craisins with white chocolate chips, nuts, raisins, other dried fruits. Don't add too much or your granola bars will not have enough "glue" to hold together! They will stay soft for a few days if well wrapped.

- Line an 8x8 inch pan with parchment paper. Spray lightly with nonstick cooking spray.
- In a mixing bowl, combine oats, salt and cinnamon.
- In small saucepan, combine honey and coconut oil. Cook over medium heat until bubbly. Turn the heat off and stir in the vanilla.
- Pour honey mixture into the oats and stir until well combined.
- Stir in pepitas and dried cranberries if adding. Once the mixture has cooled slightly, add in chocolate chips.
- Spoon mixture into your parchment lined pan and spread evenly. Spray a small amount of cooking spray onto your hands and press the mixture firmly into the pan so that it stays together.
- Place the pan in the refrigerator for 2 hours. Remove the bars with the parchment paper and cut into 12 even bars. Enjoy!

- In a large bowl, mix together the oats, rice cereal, chocolate chips, coconut, sunflowers, peanuts, raisins, wheat germ, and sesame seeds.
- In a large microwave-safe bowl, combine the marshmallows, peanut butter, butter, corn syrup and vanilla.
- Microwave the marshmallow mixture at 70% power for 2-3 minutes, stirring often until well-blended.
- Quicky stir the dry ingredients in to the marshmallow mixture. You'll have to work quickly as the mix will get gooey fast.
- Spread into a greased 13-in. X 9-in. X 2-in. baking pan. To flatten the granola bars, I spray the BOTTOM of a second baking pan with cooking spray, nest this second pan on top of the pan with the mix and press down hard.
- Bake at 350 degrees F. for 15-20 minutes.
- Cool and cut into 24 bars.

(SUPER HEALTHY) CHEWY GRANOLA BARS
This is a base recipe that is full of nutrient rich ingredients but yet is not overly sweet. The result is a chewy, almost cake-like granola bar though not at all similar to any that you would find in the supermarket. - Preheat oven to 350°F.
- Toast oats for 5 minutes in a dry skillet over medium heat. Let cool.
- In a large bowl, combine dry ingredients (including oats) and whisk together until well combined.
- In a separate bowl, whisk together wet ingredients until well blended.
- Add wet mixture to dry ingredients and blend gently until well moistened. Add any of the suggested additions now (see Step 8). Mixture should be moist but not too wet. If it seems too dry and crumbly, add a little more applesauce (by the spoonful).
- Line a 9in x 13in pan with parchment paper and press mixture into pan.
- Bake at 350°F for 30 minutes. Cut into bars while warm, but let cool completely before removing from pan.
- Suggested additions (add up to 2 cups of any of the following): chocolate chips, raisins (soaked in hot water for 10 minutes then drained), unsweetened shredded coconut, sunflower seeds (unsalted), pumpkin seeds (unsalted), dried fruit (like chopped apricots, cranberries), chopped toasted nuts.
