CHEWY CHOCOLATE PEANUT BUTTER BARS
Found in a Nestle booklet. It has been a while since I've made these but my notes say they stay chewy & moist for a while if kept tightly covered. Pretty sweet so cut into smaller bar sizes (2"x1"). A little bite goes a long way.

Steps:
- Preheat oven to 350°F Grease at 13x9" baking pan.
- In a large mixer bowl, beat brown sugar and butter together until creamy.
- Beat in corn syrup and vanilla; then stir in uncooked oats.
- Press dough into bottom of the prepared pan.
- Bake 15 minutes. Cool slightly (about 10-15 minutes).
- While this is cooling, in a small saucepan, combine chocolate chips and peanut butter. Cook over low heat, stirring constantly until smooth.
- Spread this mixture over the crust. Sprinkle with chopped peanuts and then cool completely. Refrigerate 10 minutes to set chocolate mixture after letting it cool on its own to set chocolate mixture.
- Cut servings into 2x1 inch bars.

Steps:
- In a medium saucepan over medium heat, combine the corn syrup, peanut butter and chocolate chips. Bring to a boil, stirring constantly. Continue to boil for 5 minutes.
- Remove from heat and stir in the vanilla, oats and peanuts. Turn onto a well greased 10x15 inch jellyroll pan or any cookie sheet with 1 inch sides. When cool enough to touch, grease your hands and pat the mixture down flat in the pan.
- Refrigerate overnight. Let stand for 20 minutes before cutting into squares.

CHOCOLATE PEANUT CHEWY BARS
This makes a ton of "almost" Almond Roca-like bars, and there are no eggs in these. These are SO good, you won't be able to stop just at one bar LOL!

Steps:
- Set oven to 350°F.
- Grease a 15 x 10-inch baking sheet (can use a 13 x 9-inch pan also).
- In a large bowl, combine the oats, graham cracker crumbs, brown sugar, baking soda and peanuts; mix well until combined.
- In another bowl, combine corn syrup with melted butter and vanilla; mix well and add to the oat mixture; mix to combine.
- Press into prepared baking sheet/pan.
- Bake for 15 minutes (don't over bake!).
- Melt the chocolate chips with peanut butter in the microwave or double boiler until smooth.
- Spread on warm bars.
- Refrigerate to slightly set the chocolate (this makes for easier and more even slicing).
- Remove from fridge and slice into small bars.

- In a bowl, combine flour and sugar; cut in the butter until mixture is crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until lightly browned. , In a large bowl, beat the eggs, corn syrup, sugar, peanut butter and salt until smooth. Fold in coconut and chocolate chips. Pour over crust. Return to the oven for 15-20 minutes or until golden. Cool on a wire rack. Cut into bars.

CHEWY CHOCOLATE PEANUT BUTTER BARS
Steps:
- Preheat the oven to 350 degrees F. Grease a 9-inch square pan with cooking spray and line with parchment so that wings come up the sides by 1 inch.
- In a large pot, combine the sugar, corn syrup, vanilla and salt over medium heat and cook until the sugar is melted. Stir in the peanut butter, then the cereal. Pour into the prepared pan and pack it down firmly and evenly with a spatula. Scatter the chocolate chips and butterscotch chips all over the top.
- Bake until the chips are melty, about 3 minutes. Use an offset spatula to spread the melted chips in an even layer all over the top. Sprinkle with flaky salt and sprinkles if using and allow to set at room temperature or in the fridge. Slice into 25 squares.
CHEWY PEANUT BUTTER CRANBERRY BARS
This recipe is a variation from a old 4-H project book. I have been making them for years! I always, always, always have people asking me to make these! Great snack for road trips! I use no-sugar-added peanut butter.

Steps:
- Combine corn syrup and brown sugar in a large saucepan; bring to a boil, cook at a boil for 1 minute, and remove from heat. Stir peanut butter and vanilla extract into sugar mixture. Add rice cereal, oats, cranberries, and coconut; stir well.
- Press peanut butter mixture into an 8-inch square baking dish. Cool completely before cutting into bars.
