Categories     side-dish

Time 45m

Yield 8 servings

Number Of Ingredients 9

4 1/2 to 5 pounds Swiss chard or rainbow chard (6 to 8 large bundles)
Salt
1 stick butter
1/2 cup flour
5 cups whole milk
Freshly ground black pepper
Nutmeg
2 bulbs roasted garlic, cloves squeezed from skins and pasted
4 cups freshly shredded Parmigiano-Reggiano

Steps:

  • Arrange the rack in the middle of oven and preheat the oven to 400 degrees F. Bring a large pot of water to boil.
  • Stem the chard, keeping the leaves whole. Salt the boiling water and add the chard and let wilt. The pot will be packed at first. Boil the chard 10 minutes, drain in a colander and run under cool water. Let it drain and squeeze out any excess liquid in a clean kitchen towel. Chop.
  • Meanwhile, heat the butter over medium heat. Whisk in the flour and cook 1 minute, and then whisk in the milk. Season with salt, pepper and a little freshly grated nutmeg. Stir in the roasted garlic paste. Thicken the sauce to coat the back of a spoon and adjust seasonings to taste.
  • Layer half the greens in a medium casserole (8 to 10 inches long). Top with half the bechamel sauce and half the cheese. Repeat layers, ending with the cheese. Bake until bubbly and brown, 20 to 30.

CHESTNUT AND APPLE CASSEROLE WITH SWISS CHARD AND CRANBERRY GRANOLA

Chestnut and Apple Casserole With Swiss Chard and Cranberry Granola image

This recipe came to The Times from Bruno Davaillon, the executive chef of the celebrated Rosewood Mansion on Turtle Creek restaurant in Dallas. He uses dry organic cranberries and peeled frozen chestnuts, which he says give him the most consistent results because they usually arrive unbroken and well peeled. "It's really a comfort food side dish,'' he says.

Time 1h15m

Yield 4 servings

Number Of Ingredients 22

1/4 cup (1 ounce) pine nuts
1/4 cup (1 ounce) almonds, blanched
1/4 cup (1 ounce) oats
1/2 cup (2 ounces) dried cranberries, cut into small pieces
2 tablespoons Italian parsley, chopped
1 sprig fresh thyme leaves, chopped
Zest and juice from 1 lemon
1/2 clove garlic, crushed

4 cups vegetable stock, divided
Salt
Black pepper
1 pound gala apples (about 3 medium)
1 bunch green Swiss chard
Lemon juice, squirt
1/2 pound white pearl onions

Steps:

  • Make the cranberry granola. Toast nuts and oats on a cookie sheet in a 375 degree Fahrenheit oven until golden brown. Allow to cool and coarsely chop.
  • Cut dried cranberries into small pieces. In a mixing bowl, combine cranberries, parsley, thyme leaves, lemon zest and juice, garlic, cayenne pepper and 2 tablespoons olive oil. Season with salt and pepper to taste. Add nuts and oats. Spread mixture on a cookie sheet and bake in 250 degree oven for 30 minutes.
  • Meanwhile, prepare the casserole. In a sauté pan, heat 2 teaspoons olive oil and 1 tablespoon butter until the butter is golden brown. Add frozen chestnuts and roast for 5 minutes. Add 2 cups vegetable stock, and salt and black pepper to taste. Cook for 10 minutes over medium heat until tender and the chestnuts have absorbed most of the liquid

Creamed Greens with Chestnuts image

Creamed kale, collards, and Swiss chard are studded with chestnuts.

Provided by Martha Stewart

Categories     Gluten-Free Recipes

Time 40m

Number Of Ingredients 14

1 bunch kale, tough stems discarded and leaves roughly chopped (11 cups)
1 bunch collard greens, tough stems discarded and leaves roughly chopped (5 cups)
1 bunch Swiss chard, stems removed, chopped, and reserved and leaves roughly chopped (1 cup stems; 5 1/2 cups leaves)
Coarse salt
3/4 cup dry white wine
6 tablespoons unsalted butter, divided
2 large shallots, peeled, halved vertically, and thinly sliced crosswise (3/4 cup)
3 garlic cloves, minced (1 tablespoon)
5 ounces shelled chestnuts, roughly chopped (1 cup)
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1/2 cup heavy cream
Pinch of freshly grated nutmeg
Pinch of red-pepper flakes

Steps:

  • Wash all greens, and shake off excess (but not all) water. Heat a large saute pan over high heat, and add kale, collards, 1 teaspoon salt, and wine. Cover, and cook until greens wilt, about 2 minutes, turning occasionally. Reduce heat to medium, and cook, turning greens occasionally, until almost tender, about 15 minutes. Remove cover. Add chard leaves, and cook, turning with tongs, until wilted, about 3 minutes. Transfer greens to a bowl.
  • Add 4 tablespoons butter to pan, and melt over high heat. Add shallots, garlic, and chard stems, and saute until softened, about 3 minutes. Stir in chestnuts, and saute 1 minute. Return greens to pan, stirring to incorporate, and remove from heat.
  • Melt remaining 2 tablespoons butter in a saucepan over medium-high heat. Add flour, and whisk to incorporate. Slowly whisk in milk and cream, and bring to a simmer. Simmer, whisking constantly, until sauce thickens slightly and begins to coat the back of a spoon, about 2 minutes. Add nutmeg and red-pepper flakes. Season with salt.
  • Stir sauce into greens, and cook over medium heat until warmed through. If not serving immediately, let cool completely, then refrigerate. Reheat over low heat before serving.

Mini Crustless Quiches with Mushrooms and Swiss Chard image

Provided by Jaymee Sire

Categories     appetizer

Time 35m

Yield 12 servings

Number Of Ingredients 10

Nonstick cooking spray
1 tablespoon olive oil
1 medium yellow onion, diced
2 large garlic cloves, minced
1 bunch chard, ribs and stems removed and leaves chopped
6 ounces oyster or baby portabella (cremini) mushrooms, cut into bite-size pieces
12 eggs
1/4 cup grated Parmesan cheese
2 or 3 dashes hot sauce, such as Tapatio
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 375 degrees F. Spray the cavities of a 12-cup muffin tin with the cooking spray.

  • Evenly divide the chard mixture between the muffin cups. Pour the egg mixture over the top and stir each cup with a fork to make sure the ingredients are evenly distributed. Sprinkle with the remaining 1 to 2 tablespoons of grated Parmesan and bake until slightly golden and a toothpick or butter knife inserted in the center comes out clean, about 20 minutes.
  • Loosen the mini crustless quiches from the muffin cups with a rubber spatula and transfer to a platter for serving.
