CHOCOLATE CHERRY SHORTBREAD COOKIES

1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon pink peppercorns, crushed
1/2 teaspoon kosher salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1/3 cup plus 2 teaspoons sugar
2 egg yolks, at room temperature
1/4 cup dried cherries, chopped
1/4 cup semisweet chocolate chips

Steps:

  • In a medium bowl, whisk together the flour, cocoa powder, pink pepper and salt. Set aside.
  • Place the butter and 1/3 cup sugar in a large bowl and beat with an electric mixer until light pale and fluffy, about 2 minutes. Add the egg yolks and beat for an additional minute. In two additions, add the flour mixture, beating on low speed until just combined between additions. Pulse in the dried cherries and chocolate chips.
  • Place a piece of plastic wrap on a clean, dry surface. Transfer the cookie dough to the plastic wrap, form into a 2-inch-wide log, and wrap tightly. Refrigerate for at least 1 hour.
  • Preheat the oven to 350 degrees F.
  • Using a sharp, thin knife, cut the log into 1/3-inch-thick rounds. Set the cookies on an ungreased baking sheet, spaced 1 inch apart, and sprinkle evenly with the remaining 2 teaspoons sugar.
  • Bake until just set, 25 minutes. Cool the cookies completely on the baking sheet before removing to a wire rack.

1 1/2 pounds (6 sticks) unsalted butter, at room temperature
3 cups confectioners' sugar
1 tablespoon pure vanilla extract
7 1/2 cups all-purpose flour
1 1/2 cups finely ground pistachios
1 teaspoon kosher salt
3/4 cup dried cherries, chopped
Royal Icing, recipe follows
3 1/2 cups (1 pound) confectioners' sugar
2 tablespoons meringue powder
6 tablespoons water
Red and green food coloring

Steps:

  • Beat together the butter and confectioners' sugar in the bowl of a stand mixer until combined. Add the vanilla and mix until just combined.
  • In a separate large bowl, whisk together the flour, ground pistachios and salt. Gradually add the flour mixture to the butter and sugar, beating just to combine. Add the dried cherries and mix just until combined; the mixture will look crumbly. Turn the dough out onto a clean work surface and knead few times with your hands until the dough comes together. Divide into 3 pieces and form each piece into a disk; wrap with plastic wrap and chill for at least 1 hour.
  • When ready to bake, preheat the oven to 325 degrees F. Line 4 baking sheets with parchment paper.
  • Roll the dough, one disc at a time, to 1/3-to-1/2-inch thick. Cut 2 rounds with a 6-inch cutter. Cut the center from each with a 4-inch cutter to create rings. Then cut 2 rounds with a 5 1/2-inch cutter and use a 3 1/2-inch cutter to create rings. Cut 2 rounds with a 5-inch cutter and use a 3-inch cutter to create rings.   • When ready to assemble, stack the two 6-inch ring cookies atop each other, using the white Royal Icing to adhere to one another creating a sandwich. Repeat with the other like-size cookies so they are all in 2-cookie stacks.
  • To assemble the tower, pipe white icing on the bottom of the stack of 6-inch cookies and set it on a decorative platter (the icing will help it adhere). Decorate the cookies with swags of red icing and add the next-largest sandwich. Continue decorating with swags of alternating colors of icing and stacks of cookies in descending sizes. Finish with the solid rounds on top.
  • Add the confectioners' sugar and meringue powder to the bowl of a stand mixer fitted with the whisk attachment; turn on low to combine. Add the water 1 tablespoon at a time, beating with the mixer on medium speed until the icing is thick and glossy but soft enough to pipe. Divide among 3 bowls, tinting one red, one green and leaving one white. Transfer the icing to plastic piping bags; snip off the corners.

2 C all-purpose flour spoon filled in a cup and leveled with a knife
1/2 tsp Kosher salt
1 C maraschino cherries juice drained from the jar and chopped
Place chopped cherries on paper towels to remove any additional liquid
1 C Godiva chocolate chips
1 ⁄2 C Godiva chocolate chips melted

Steps:

  • Spray a cookie sheet with nonstick spray.
  • (The spray will adhere to the parchment paper so that it doesn't move.)
  • Line this cookie sheet with parchment paper.
  • Spray the parchment paper with baking spray. Set aside.
  • Whisk flour and salt together in a medium bowl. Set aside.
  • Line a cutting board with plastic wrap.

100g icing sugar , plus extra for dusting
200g plain flour , plus extra for dusting
50g cornflour
50g ground almonds
250g pack cold butter , cut into cubes
50g glacé cherries , finely chopped
½ tsp almond extract
8 tbsp cherry jam , sieved

Steps:

  • Heat oven to 180C/160C fan/gas 4. Sift the icing sugar, flour and cornflour together into a bowl. Stir in the ground almonds and butter, then rub in the butter until smooth. Stir in the chopped glacé cherries and almond extract, and bring together to form a dough.
  • Roll out on a lightly floured surface, then stamp out biscuits using a heartshaped cutter. Keep re-rolling the trimmings until all the dough is used. Carefully transfer the biscuits to baking trays lined with parchment and bake for just 8-10 mins until just pale golden.
  • Using an upturned bottle top or similar, press gently into the centre of each biscuit to make a round indent. Spoon in a little jam and return to the oven for 2 mins. Remove and cool on a wire rack, before dusting with icing sugar to serve.

1/2 cup sugar
1/2 teaspoon almond extract
2 cups all purpose flour
1/4 cup argo cornstarch or 1/4 cup kingsfords cornstarch
1/2 cup finely chopped sunsweet cherries
1 ounce bittersweet chocolate (1/4 cup) or 1 ounce semisweet chocolate, finely chopped (1/4 cup)
1 tablespoon sugar
2 ounces bittersweet chocolate, roughly chopped
1 teaspoon shortening

Steps:

  • Mix butter, sugar and almond extract throughly using an electric mixer. Gradually blend in flour and corn starch. Add cherries and chocolate.
  • Form into 1"-inch balls and place on ungreased baking sheets. Pour sugar on a small plate; dip bottom of drinking glass in sugar and gently press down on each cookie to flatten.
  • Bake in a preheated 300 oven for 20-30 minutes, or until bottoms begin to brown.
  • Cool 5 minutes; remove to a wire rack to cool completely.
  • Drizzle by placing 2-ounces chocolate and shortening in a small resealable plastic freezer bag. Microwave on HIGH for about 30 seconds, until chocolate is melted. Snip off the corner and drizzle over cookies.
