MARASCHINO CHERRY MINI LOAVES
I've been making these breads as Christmas gifts for my neighbors for more than 20 years. Each moist slice is dotted with cherries, chocolate and nuts.

Steps:
- Drain cherries, reserving 1/4 cup juice; set aside. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk eggs and reserved juice; stir into dry ingredients just until moistened. Fold in the walnuts, chocolate chips, dates and cherries., Spoon into three greased 5-3/4x3x2-in. loaf pans. Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack to cool completely. Wrap and store for 24 hours before serving.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks and vanilla. Combine the flour, baking soda, baking powder and salt; add to the creamed mixture alternately with buttermilk just until blended (batter will be thick). , In a small bowl, beat egg whites until stiff peaks form. Fold into batter. Fold in cherries and pecans., Transfer to four greased and floured 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean and loaves are golden brown. Cool for 10 minutes before removing from pans to wire racks.

- Preheat oven to 350 degrees. Butter and flour six mini loaf pans (each 5 3/4 by 3 inches, with a 2-cup capacity). Make streusel topping: In a bowl, mix streusel ingredients with fingertips until moist clumps form. Place in freezer.
- Make cherry-pecan batter: In a medium bowl, whisk flour, baking powder, salt, and baking soda. In a large bowl, whisk butter, sugar, sour cream, eggs, and vanilla until smooth. Mix in dry ingredients until moistened. Fold in dried cherries and pecans.
- Divide batter evenly among prepared pans; spread to fill corners. Place pans on a baking sheet. Bake 15 minutes, then remove from oven, and quickly sprinkle loaves with streusel topping.
- Return loaves to oven; bake until golden and a toothpick inserted in center comes out with only a few moist crumbs attached, 20 to 25 minutes. Cool loaves 10 minutes in pans; turn out of pans, and cool completely, streusel side up, on a rack.
AMARETTO CHERRY NUT BREAD
This vanilla bread becomes amaretto flavored with extra maraschino cherries and extra sugar on top with brandy butter glaze. This recipe will make 5 mini loaves or 2 (8x4-inch loaves)

- 1. Preheat oven to 350^.grease bottoms only of 5(5x3-inch) mini loaf pans bake- 35-45 minutes or 2 (8x4-inch) loaf pans- bake 45-50 minutes.
- 2. Bread: Combine sugar and butter in large bowl; beat at medium speed until smooth and creamy. Add eggs; continue beating until well mixed. Reduce speed to low; add milk. Beat until well mixed. Add dry ingredients and continue beating just until flour is moistened- like for muffins.
- 3. Gently stir in liqueur and cherries. Spoon batter evenly into prepared pans of your choice. --- Combine all topping ingredients in a small bowl; mix well. Sprinkle over batter. MARASCHINO CHERRY QUICK BREAD
These cute mini loaves are delicious and great little gifts for teacher's, co-workers, etc. They are also just as good for snacking!

- Preheat oven to 350 degrees.
- Grease and flour 4 mini loaf pans (6 x 3 x 2).
- Drain cherry syrup into measuring cup.
- Add enough milk to measure 1 cup.
- Set cherries aside.
- In a large bowl, on low speed, beat flour, brown sugar, cherry milk, butter, eggs, baking powder and salt for 2 minutes or until just blended.
- Stir in nuts and cherries.
- Pour evenly into loaf pans.
- Bake for 45 minutes or until pick in center comes out clean.
- Cool in pans on racks for 10 minutes.
- Remove from pans and cool completely.
- Wrap in plastic wrap or foil and refrigerate overnight for best flavor and easier slicing.
FESTIVE MARASCHINO CHERRY NUT BREAD
Steps:
- Preheat the oven to 350 F. Grease and flour one 8-inch by 4-inch or two 6-inch by 3-inch mini loaf pans. Combine the flour, baking soda and salt in a large bowl with a wire whisk. Set the bowl aside.
- In a smaller bowl, beat the sugar and the eggs. Beat in the butter, milk, and vanilla until well mixed. Add the wet ingredients to dry. Only mix until moistened. Carefully, stir in nuts and cherries.
- Spoon the batter into the prepared pans.
- Bake the 8-inch pans for 55 to 60 minutes. Bake the mini pans for 45 minutes. Cool in pans on a cooling rack for five minutes.
- Remove the bread from the pans to finish cooling on the cooling racks.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
- Combine sugar, shortening, eggs, and salt in a large bowl; beat with an electric mixer until well combined.
- Mix flour and baking powder together in a medium bowl. Add flour mixture to shortening mixture in 2 or 3 batches, alternating with maraschino cherry juice, mixing batter well after each addition.

- Heat cherries and brandy in saucepan over low heat just until mixture starts to simmer.
- Remove from heat; let stand 5 minutes for cherries to soften.
- Heat oven to 350 degrees.
- Coat 3 mini loaf pans (6x3x2") with nonstick cooking spray.
- Mix together flour, baking soda, baking powder, salt and allspice in large bowl.
- Beat together eggs and sugars in medium-sized bowl until well blended.
- Beat in buttermilk and oil.
- Make a well in center of flour mixture.
- Add egg mixture to well.
- Stir with a wooden spoon just until the flour mixture is evenly moistened and better comes together.
- Fold in walnuts and cherries with their soaking liquid from the saucepan.
- Divide batter equally among prepared mini loaf pans.
- Bake in 350 degree oven for 30-40 minutes or until wood pick inserted in centers of loaves comes out clean.
- Let loaves cool in pans on wire rack for 10 minutes.

DRIED CHERRY OR CRANBERRY LOAF
I clipped this recipe from an old issue of Parade Magazine, and they adapted it from a recipe originally found in The Tea Pot Cookbook by Steffi Berne. Posted by request. Plan ahead - the cherries need to soak at least three hours or overnight. NOTE: If you prefer, you can use cherry or orange juice instead of using the liqueur.

- Place cherries (or cranberries) in a container with a very tight fitting lid.
- Pour liqueur and hot water over the cherries, seal the lid tightly, and shake to coat cherries well with the liquid.
- Set aside 3 hours or overnight so cherries will absorb the liquid.
- Preheat oven to 350 F (or 325 F for a pan with a black surface).
- Grease a loaf pan and lightly dust with plain dry breadcrumbs, shaking out excess.
- Sift together the flour, baking powder, and the salt.
- In another bowl, cream the butter and the cream cheese until smooth.
- Add the sugars, and the finely grated lemon zest and beat until well combined and pale yellow.
- Beat in eggs, one at a time.
- Add the flour mixture, beating on low speed, just until the flour is combined.
- Stir in the cherries and any liquid still in the soaking container.
- Pour batter into the pan and smooth top with a rubber spatula.
- Bake in the center of the oven for 45-60 minutes- or until a toothpick insterted in the center tests clean, checking as early as 40 minutes into the baking time- if it is getting too brown, cover loosely with foil and continue baking until the toothpick tests done.
- Expect the top of the loaf to crack.
- Let cool in the pan 15 minutes, then remove from pan and set onto a wire rack to cool completely.
- Wrap in plastic and let set overnight before slicing.
- For extra decadence, drizzle a little more liqueur over the crack before wrapping in plastic- don't pour too much or you'll soak the bread.
MINI NUT ROASTS WITH CANDIED CARROTS
Serve these lovely mini nut roasts as a vegan dish at Christmas. You could also serve the recipe as one large nut roast, too - just use a larger loaf tin

- Heat the oven to 200C/180C fan/gas 6. Scrub and trim the carrots, and cut them in half lengthways or into quarters if large. Toss the carrots with 1 tbsp olive oil and 2 tbsp maple syrup in a bowl. Season well, and tip onto a baking tray. Roast for 20-25 mins until tender and starting to caramelise.
- Meanwhile, mix the flaxseed with 4 tbsp water and leave to thicken. Heat 1 tbsp olive oil in a frying pan, and fry the onion and celery until soft and translucent, about 10 mins. Add a splash of water if you need to, to stop them from catching. Stir in the garlic, mushrooms, rosemary, tomato purée, tamari and paprika, and fry for another 10 mins until the mushrooms are tender. Remove from the heat and leave in a bowl to cool slightly.
- Put the pecans and hazelnuts in a food processor and blitz until roughly chopped. Add the lentils and chickpeas and blend again until you get a thick, dry paste.
- Combine the nuts and pulses, mushroom mixture, ground almonds, 2 tbsp maple syrup and soaked flaxseed in a bowl with a good amount of seasoning. Mix everything well using your hands.
- Oil six holes of a mini loaf tin and line each with a strip of baking parchment. Trim and cut the carrots to fit in the base in a snug single layer, cut-side down. Roughly chop any remaining carrots and mix them through the nut roast mixture. Pack it firmly into the tins and smooth over. Bake, uncovered, for 20 mins. Leave to rest for 10 mins before inverting onto a serving plate, or plates. Fry the sage and thyme in the remaining 1 tbsp olive oil until crisp, then stir through the remaining 1 tbsp maple syrup. Spoon over the nut roasts to serve.

This is my grandma's recipe. I remember her making it but never paid attention to the time it took in the oven. Grandma never timed anything, it was done when it was done. My suggestion, insert a tooth pick into center when it comes out clean it is done.

CHEERY CHERRY LOAF
You can serve this loaf year-round- but its cherries give it a pretty Christmasy look. In addition to being a lovely gift, it's something I often include in meals at home.
