Sweetened condensed milk and creamy peanut butter help turn semi-sweet chocolate into this completely scrumptious fudge.

Steps:
- Spray foil-lined 8-inch pan with cooking spray; set aside.
- Place chocolate in medium saucepan. Add milk; cook on low heat 8 to 10 min. or until chocolate is completely melted and mixture is well blended, stirring frequently. Add remaining ingredients; mix well.
- Spread immediately into prepared pan. Refrigerate 6 hours or until set.

- Line an 8-in. square dish with foil and grease the foil with 2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream, corn syrup, salt and remaining butter. Bring to a boil over medium heat, stirring until sugar is dissolved. Cook over medium-low heat, without stirring until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; stir in marshmallows and vanilla., With a wooden spoon, beat until mixture begins to lose its gloss, about 10 minutes. Fold in pecans and candied cherries. Pour into prepared pan. Refrigerate for 2 hours or until firm., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

This is a recipe I found from Kraft. Very easy and very delicious, this will be a favourite of any peanut butter lover.

- Combine the condensed milk and chocolate in a saucepan, stirring over a low heat until chocolate melts. Add the peanut butter, nuts and cherries and mix until smooth.
- Pour mixture into a lined 28cm x 18cm slab tin and refrigerate until set.
- Cut into squares or diamond shapes.

- In a microwavable bowl, combine milk and chocolate chips. Microwave on high until chips are melted and mixture is smooth when stirred, about 1 minute. Stir in almonds, cherries and extract. - Butter an 8x8 inch pan.
- In a medium saucepan over medium heat, combine milk, sugar and salt.
- Bring to a boil and stir in gelatin.
- Boil 4 minutes.
- Remove from heat and stir in butter, chocolate chips, vanilla and cherries.
- Pour into prepared pan.
- Chill 2 hours before serving.
CHERRY WALNUT FUDGE
This, my favourite fudge recipe,is from an old Good Housekeeping Christmas Cook Book dated 1959. It's a little time consuming to make but well worth the effort; and the addition of dates really does make this fudge special. Prep time includes resting period before being spread into pan.

Steps:
- Grease 8"x8" pan.
- In 2 quart saucepan, combine sugar, cream of tartar, salt and cream, stirring well.
- Cover pan; bring to a boil.
- Boil 1 minute, or until all sugar crystals on sides of pan have melted.
- Remove cover (If using a candy thermometer, set in place).
- Continue cooking, without stirring, over gentle heat (I use medium-low) to 238 degrees, or until a little mixture in cold water forms a soft ball.
- Remove from heat; drop in butter;do not stir.
- Cool, without stirring, to 110 degrees, or until outside of pan feels lukewarm to the touch.
- Add vanilla.
- With heavy spoon, beat mixture until it loses its gloss and a small amount dropped from spoon holds it's shape.
- Quickly add nuts and fruits and pour into pan.
- Spread quickly and evenly.
- Cool and cut into squares.

- In a heavy-bottomed saucepan combine marshmallow cream, sugar, evaporated milk, butter OR margarine and salt; bring to a full boil, stirring constantly, over medium heat.
- Boil for 5 minutes (this must be timed; start timing when mixture is at full boil).
- Remove from heat; add the vanilla chips and 1 tsp vanilla extract; stir rapidly until the vanilla chips are completely melted.
- Add in nuts.
- Pour into an 8" x 8" square baking pan lined with foil (make sure that the foil is overlapping sides of pan for easy removal).
- Chill in refrigerator until firm (about 2 hours).
- remove from fridge, lift out of pan by the ends of foil; remove foil, cut into small squares.

- In a large bowl, combine cherries and cranberries. Add enough warm water to cover; set aside. Line a 15x10x1-in. pan with foil and grease the foil with 1-1/2 teaspoons butter; set aside. , In a large heavy saucepan, melt remaining butter. Stir in the milk, chips and cream. Cook and stir over low heat for 15-20 minutes or until chips are melted and mixture is smooth and blended (mixture will first appear separated, but continue stirring until fully blended).
