Canned cherry pie filling is spread between buttery oatmeal layers in these easy, delicious cherry bars.

2 cups all-purpose flour
2 cups uncooked quick-cooking oats
1 1/2 cups sugar
1 1/4 cups Land O Lakes® Butter melted
1/2 cup chopped pecans
1 teaspoon baking soda
1 (21-ounce) can cherry pie filling
1 cup miniature marshmallows

Steps:

  • Heat oven to 350°F.
  • Combine all ingredients except pie filling and marshmallows in large bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Reserve 1 1/2 cups crumb mixture for topping.
  • Press remaining crumb mixture into ungreased 13x9-inch baking pan. Bake 12-15 minutes or until lightly browned on edges.
  • Gently spoon pie filling evenly over hot, partially baked crust; sprinkle with marshmallows. Sprinkle with reserved crumb mixture. Continue baking 25-35 minutes or until lightly browned. Cool. Cut into bars.

1/2 cup butter or margarine, softened
3 tablespoons powdered sugar
2 eggs
1 cup granulated sugar
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries, drained
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients except pie filling and marshmallows in a large bowl. Beat at low speed, scrapping bowl often, until mixture resembles coarse crumbs (mixture will be moist).
  • Reserve 1 1/2-cups crumb mixture for topping. Press remaining crumb mixture into ungreased 9x13-inch baking pan. Bake for 12 to 15 minutes or until lightly browned on edges.
  • Remove from oven and gently spoon pie filling evenly over hot, partially baked crust. Sprinkle with marshmallows and reserved crumb mixture. Continue baking for 25-35 minutes or until lightly browned.
  • Cool completely. Cut into 36 bars.

1 cup packed brown sugar

1 (4 ounce) jar maraschino cherries
1 teaspoon butter
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix together flour, white sugar and butter or margarine. Mix until crumbly. Press into a 9 x 13 inch pan. Bake for 20 minutes or until lightly browned.
  • Beat eggs, sugar, salt, baking powder, and vanilla. Drain and chop cherries, reserving liquid. Stir chopped cherries, nuts, and coconut into egg mixture. Pour on top of crust.
  • Bake 25 min. Cool.
  • Combine 1 teaspoon butter and 1 cup confectioner's sugar with enough liquid from cherries until spreadable. Frost bars. Sprinkle with coconut when icing is set.

2 cups crispy brown rice cereal
1 cup raw pepitas
1 cup raw almonds, roughly chopped
1/2 cup sweetened dried cherries
2/3 cup brown rice syrup
2 tablespoons almond butter
1/2 teaspoon almond extract
1/2 teaspoon flaky sea salt

Steps:

  • Preheat an oven to 325 degrees F. Coat an 8-inch square glass baking dish with cooking spray. Line the bottom with a piece of parchment or waxed paper leaving a 4-inch overhang on two opposite sides and spray the paper with cooking spray.
  • Put 1 cup of the rice cereal in a resealable plastic bag and crush to a fine powder with the back of the measuring cup. Combine the remaining 1 cup rice cereal, pepitas, almonds and cherries in a large bowl. Heat the rice syrup and almond butter in a small saucepan until warm and bubbling and remove from heat. Stir in the almond extract and salt, and pour into the nut mixture. Fold with a spatula until it is everything is moistened and well combined. Add the crushed rice cereal and continue to fold until evenly incorporated.
  • Press the mixture very firmly and evenly into the prepared pan using the overhanging pieces of parchment to prevent sticking. Bake until beginning to brown, about 25 minutes. Cool 15 minutes on a wire rack, then press again to compact the mixture. Chill until firm but not completely set , about 45 minutes. Remove the block by the paper handles and invert onto a cutting board. Gently peel off the paper. Cut the block in half, then cut each half into 6 bars for 12 total. Refrigerate until fully set.
  • Store the bars individually wrapped or layered between sheets of parchment or waxed paper in the refrigerator for up to 2 weeks. The bars will soften up and become chewy as they come to room temperature.

12 ounces milk chocolate chips (1 package)
¾ cup chunky peanut butter
12 ounces salted peanuts (chopped)
10.5 ounces miniature marshmallows (1 package)
16 ounces cherry frosting (1 package)

Steps:

  • Melt chocolate chips and peanut butter on low in the microwave. Stir well and add the chopped peanuts. Spread half of this mixture in a 9 x 13 inch glass pan sprayed very lightly with non stick cooking spray. Place in fridge to set up.
  • Melt marshmallows in the microwave on very low stirring every 20 seconds. When melted and smooth, stir in the frosting.
  • Spread this mixture carefully on top of the chocolate layer. Let cool in the fridge.
  • Top with remaining chocolate for the last layer. If it has set up a little, just microwave it for about 30 seconds and stir well. Be sure to spread each layer to the edges of the pan.
  • Refrigerate until firm. Cut into pieces - about 48.
  • Store in refrigerator.

1/3 cup (114g) honey or brown rice syrup*
1/4 teaspoon pure vanilla extract
1/3 cup (40g) almond meal*
1/8 teaspoon salt
1 Tablespoon (15g) almond butter
2 cups (280g) whole almonds, roughly chopped
1/2 cup (60g) dried cherries, roughly chopped
1/3 cup (58g) mini chocolate chips

Steps:

  • Preheat oven to 300°F (149°C). Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • Using a rubber spatula or wooden spoon, mix the honey, vanilla, almond meal, salt, and almond butter together until combined. Fold in the almonds, cherries, and chocolate chips until combined.
  • Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 20 minutes. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This helps firm up the bars which makes them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars. Individually wrap each bar in plastic wrap or parchment. Store at room temperature for 1 week or in the refrigerator for up to 2 weeks. I find they get a little sticky at room temperature over a few days, so I prefer the refrigerator.

You don't really taste them (in fact everyone surprised when I said they were in there) but they add a wonderful creamy note that compliment the cherries beautifully. The oats in the more traditional shortbread crust is an excellent addition also.

3/4 cup whole-wheat pastry flour or regular whole-wheat flour
1/4 cup toasted wheat germ
1 teaspoon ground cinnamon

1/2 cup honey
1/3 cup unsweetened applesauce
1/4 cup canola oil
1 egg, beaten to mix
1 egg white
3/4 cup chopped dried tart cherries
1/2 cup finely chopped walnuts
Cooking spray
1/4 cup "fruit only" apricot preserves

Steps:

  • Preheat oven to 350 degrees F. In a medium bowl, whisk together the oats, flour, wheat germ, cinnamon and salt.
  • In another bowl, whisk together the honey, applesauce, oil, egg and egg white until well combined. Stir in the oatmeal mixture until well combined. Add the dried cherries and walnuts.

A yummy cherry nut bar recipe made with low fat, organic, simple ingredients. Clean recipe for a healthy and quick snack.

1 cup dried cherries (organic, if possible)
1 cup shelled pistachios
1 cup dates, softened
1-2 tsp Panaseeda Flax Oil

Steps:

  • Put the cherries, pistachios and dates into a food processor. Pulse. When the pieces start to break down, set it to blend. Leave it for 60-90 seconds, or until everything starts to come together. Move the mixture to a bowl, add the oil and then work the mixture with your hands to ensure it's all mixed together properly and there are no big chunks. Line a tray with parchment paper or aluminum foil. Put your fruit and nut mixture onto the tray and press it flat across the pan. Use your hands or a glass to ensure that it is packed down well and evenly distributed. Put the pan in the fridge to chill for 15-20 minutes. Cut into bars or squares and enjoy!   • Position a rack in lower third of oven; preheat to 300 degrees F. Line an 8-inch-square pan with parchment paper, letting it overhang on two opposite sides.
  • Combine honey, vanilla and salt in a small saucepan. Warm over medium heat, stirring, until the honey is more fluid and the salt is dissolved. Pour the honey mixture over the dry ingredients and fold until everything is moistened and sticky. Let cool for 5 minutes. Fold in chips (or chopped chocolate) until evenly distributed. Scrape the mixture into the prepared pan and spread evenly with a fork. Using the back of the fork, press the mixture very firmly all over. (Alternatively, cover with parchment paper and press firmly all over.)
  • Bake until the top is golden brown, about 35 minutes. (If in doubt, take it out so the honey does not burn.) Run a knife along the unlined sides of the pan to detach the bars. Let cool in the pan on a wire rack to room temperature, about 1 hour. Use the ends of the parchment to lift the bars from the pan. Gently peel off the parchment. Use a heavy sharp knife to cut into 16 bars or squares.
