COCA-COLA JELLO SALAD WITH CHERRIES
This Jell-O is made with Coke, so it has a tiny little sparkle to it. And it's filled with chopped tart cherries and crushed pineapple.

Steps:
- Put some water in a saucepan and turn up the heat to get it boiling. In a large bowl, add the package of Jello. Once the water is rolling, pour one cup of the boiling water over the jello and stir until dissolved. Stir in the Coca-Cola. Cover and refrigerate mixture until partially firm, about 45 minutes. Stir the jello every 10 minutes or so; you want it a thickened but not set.
- Meanwhile, add the can of cherries to a food processor or blender. Pulse in one-second intervals, about 3-5 pulses, until the cherries are chopped into small pieces but not blended.
- Once the Jello mixture has thickened, stir in the chopped cherries and it's juice, pineapple and it's juice. Pour into a jello mold, bowl, bundt pan, or 2-quart casserole dish. Cover tightly and refrigerate until set, at least 4 hours, overnight, or up to 2 days before serving. Remove salad from the mold by inverting onto a serving platter. Serve cold.

CHERRY COLA SALAD
The only thing more retro than a congealed salad is a congealed salad made with soda. This delightful recipe, from a May 1980 issue of Southern Living, was submitted by Mrs. Jack Corzine of St. Louis, Missouri. The original story, "Congealed Salads Bring a Light Touch", read: "If you're having friends over for a casual lunch, round out your menu with one of these congealed salads."While gelatin salads may have gone the way of cassette tapes, this one is worth a second look, especially if you're a fan of ones with lots of fruit. Made with black cherry-flavored and raspberry-flavored gelatin and a can of cola (such as Coca-Cola or Pepsi), it's filled with crunchy chopped celery and pecans, juicy dark sweet cherries and crushed pineapple, and flaked coconut. Cream cheese, which is beaten until fluffy, is folded into the other ingredients, making the salad rich and creamy.One of the best things about this recipe is that you don't even need a special mold to make it. Just pour it into a 13- by 9-inch pan and chill in the refrigerator until firm. (The salad can be prepared one day in advance.) When you're ready to serve, simply cut your cheery cola jello salad into squares. Top each cherry jello salad square with additional cherries or pineapple for a pretty garnish.

Fold cream cheese mixture into gelatin; pour into a 13- x 9- x 2-inch pan. Chill until firm. Cut into squares to serve.

- Drain pineapple, reserving juice; set fruit aside. In a saucepan or microwave, bring pineapple juice and water to a boil. Add gelatin; stir until dissolved. Stir in pie filling and cola. , Pour into a serving bowl. Refrigerate until slightly thickened. Fold in reserved pineapple. Refrigerate until firm.

CHERRY COCA-COLA JELLO SALAD
Steps:
- Drain cherries and pineapple, reserving the liquid in a measuring cup. Set fruit aside, and add enough water to measuring cup to make 2 cups of liquid.
- Add liquid to a medium sauce pan and bring to a boil. Remove from heat, and add cherry gelatin, stirring until the gelatin is dissolved completely. Stir in Coca-Cola. Put in fridge and COOL ONLY for 30-40 minutes.
- Combine drained cherries, pineapple, pecan and coconut. After gelatin has cooled for 30-40 minutes. Stir fruits and nuts into gelatin. Carefully pour into 9x13 or trifle or serving dish. Cover tightly and refrigerate for gelatin to set completely. About 3-4 hours.
- Combine cool whip and cream cheese. Top Cherry Coco-Cola Salad and serve. Add Maraschino cherries for garnish, if desired.

- Heat 1-1/2 cups of reserved juice; most of the 1-1/2 cups should be pineapple juice and just a little cherry juice.
- Dissolve Jell-O in heated juice; add softened cream cheese; whip.
- Add pineapple, cherries, and pecans.
- Stir in Cola.
- Chill until firm.
- The ounce sizes are guesses; it is the big can of cherry and pineapple; the Jell-O is the small box. When I make it I will look at sizes and edit.

- Seperate the pineapple and cherry juice from the fruit. Use the juice and water as needed to create 2 cups of liquid. Bring liquid to a boil, remove from heat and add jello packets. Stir untill dissolved completely.
- Wisk in cream cheese until well blended. Stir in diet coke, crushed pineapple, and cherries. Refridgerate for 1 hour.
- Before the jello fully sets, stir in chopped pecans. Put jello salad into a pretty dish and place the mini marshmallows on top. Refridgerate over night or until it is completely set.
