HOMEMADE LUXARDO CHERRIES



Homemade Luxardo Cherries image

Make your own boozy cherries at home with this Luxardo Cherry Recipe. You can use these cherries in cocktails, desserts and more!

½ cup sugar
½ teaspoon vanilla extract
1 cinnamon stick
1 pinch freshly ground nutmeg
juice of 1 lemon
½ cup water
3-4 cups fresh cherries, stems removed and pitted
1 cup Luxardo Maraschino liqueur

Steps:

  • Place the sugar, vanilla, cinnamon stick, nutmeg, lemon juice, and water in a medium saucepan over medium heat. Stir the mixture and bring it to a simmer. Cover and simmer for 5 minutes. Add the cherries and bring the mixture to a simmer again for another 5 minutes. Remove from the heat and stir in the Luxardo liqueur.
  • Allow the mixture to cool completely and remove the cinnamon stick before adding to a sealable jar, about an hour. Store in the fridge for several weeks.

4 cinnamon sticks
1 teaspoon clove, whole
1 teaspoon allspice, whole
1 dash ground cardamom
1 dash ground nutmeg
3 cups vodka
2 cups brown sugar
1/4 cup water
1 teaspoon glycerin (optional)

Steps:

  • In a quart jar, add spices, 1 cup sugar, and vodka.
  • Seal jar tightly, and place in a dry, dark place for about 2 weeks.
  • After two weeks, strain the liquid using a double layer of cheese cloth.
  • In a fresh quart jar, add the second cup of sugar, glycerin, water to top and the strained liquid. Seal and store again in a dark place until sugar is dissolved.
  • Once the sugar has all dissolved, bottle the resulting liqueur in a fresh bottle and let age for roughly 3 months.

Wax seals add a nice finished touch. A tablespoon added to pie crust has phenomenal results. Very easy recipe... the hardest part is waiting 6 months for the maceration. 1 1/2 lbs ripe flavorful cherries
1 cup sugar, less 2 tablespoons sugar
1/3 cup water, plus
1 tablespoon water
1 3/4 cups grain alcohol or 1 3/4 cups vodka

Steps:

  • You will need to crush the cherries along with their pits. I found it was easiest to use a heavy duty extra large zip lock, adding a handful of cherries at a time, and smash each cherry with a hammer. Be sure to crust the pit well. Push the pulp to the bottom of the bag and add the next handful.
  • Leave covered in a dark place for 24 hours.
  • After 24 hours, boil the water and add the sugar. Stir until sugar is dissolved. Remove from heat.
  • Put cherry mixture in a fine muslin bag, or use a fine sieve, and squeeze the juice into a bowl.
  • Add the cherry juice to the sugar syrup mixture and set aside to cool.
  • Add alcohol to the cooled cherry syrup.
  • Pour into a jar with a tight fitting lid and place in a cool dark place for one week.
  • After one week, filter into a cool looking bottle, seal, and age it for at least six months before you pop the top.

My mother makes this all the time, she used to test my boyfriends' mettle by offering them some of the liqueur in a small shot glass, with a cherry on the bottom. If they survived the potency of the drink (she would really age it) then she would evilly say, "Bite into the cherry." If they survived that then they were good enough for her daughter.

1 1/2 lbs red cherries, with pits,no stems
1 1/2-2 cups sugar, sweeten to taste
2 1/2 cups vodka
1 cup brandy

Steps:

  • Mix vodka, brandy and sugar in a large glass measure or medium mixing bowl; stir well to dissolve.
  • Cut each washed cherry slightly to open, leave in pits.
  • Place cherries in two sterile, quart wide mouth jars or one larger aging container.
  • Pour liquid mixture over cherries; stir and cap with tight lids.
  • For the first two weeks, shake jars several times.
  • Let age in a cool, dark place for at least 3 months for best flavor.
  • Strain off liqueur through a wire mesh strainer and discard cherries.
  • Rebottle as desired.
  • Liqueur is ready in 3 months.
  • VARIATIONS:Almond-Cherry Liqueur: For a more prominent"almond" flavor, pit all or part of the cherries.
  • Place cherry pits in a clean cloth and hit with a hammer to break them up slightly.
  • Put broken pits and pitted cherries in jars or large container and continue as directed.
  • Sugarless Cherry Liqueur: Substitute 1 cup apple juice concentrate, undiluted, for the sugar in the Cherry Liqueur recipe.
  • Proceed as directed.
  • The"sugars" present will be natural fruit sugars rather than the granulated processed sugars.
  • Taste is excellent; aging is the same.

1kg cherry , stoned
1 cinnamon stick
zest and juice 2 lemon
500g jam and sugar with added pectin

Steps:

  • Put a couple of saucers into the freezer. Roughly chop about a third of the cherries. Put into a large pan with the cinnamon stick, broken in half, the lemon zest and juice and 150ml water. Bring gently to the boil, then reduce heat and simmer for 20 mins, stirring occasionally, until cherries are softened.
  • Add the sugar, stir until dissolved, then increase the heat and boil hard for 4-5 mins until the conserve is softly set. To test this, take a saucer from the freezer and spoon a little jam onto it. Push your finger through the jam; if it wrinkles on the surface it is ready. If not, reboil for a few mins more, then test again. Spoon into small clean warm jars, seal and label. Once open, keep in the fridge.
