8 oz. semisweet chocolate, chopped
4 oz. bittersweet chocolate, chopped
1/4 cup half-and-half
1 cup butter, softened
1 cup finely chopped dried red tart cherries
1/4 cup cherry-flavored brandy or liqueur
2 1/2 oz. white chocolate baking bar, finely grated
Cocoa, if desired
48 small (1-inch) paper or foil candy cups

Steps:

  • In medium saucepan, combine semisweet chocolate, bittersweet chocolate and half-and-half. Cook over low heat until chocolate is melted, stirring frequently. Remove from heat. Cool 10 minutes.
  • With wire whisk, beat butter, 1 tablespoon at a time, into chocolate until smooth and creamy. Beat in cherries and liqueur. Cover; refrigerate 1 1/2 hours, stirring twice, or until mixture is thick and can be molded.
  • Spread grated baking bar on sheet of waxed paper. Drop teaspoonfuls of chocolate mixture over grated baking bar; roll each to coat and shape into rough ball. For variety, roll some of the chocolate mixture in cocoa. Place truffles in candy cups. Refrigerate until serving time.

Chocolate Cherry Truffles have an incredibly rich chocolate brownie base. Dipped in melted chocolate, you'll be in Valentine heaven!

1 box brownie mix, 18.4 ounces
1 cup cherry pie filling
1/4 cup canola oil
1 large egg
1/4 teaspoon pure almond extract
1 1/2 cups dark chocolate
sprinkles

Steps:

  • Preheat the oven to 350°F. Grease a 8-inch-by-8-inch square pan with nonstick baking spray. In a large bowl, add brownie mix, cherry pie filling, oil, egg, and almond extract. Stir until the mixture is thoroughly combined. Transfer the mixture to the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few crumbs are recommended). Allow the brownies to cool completely on a wire rack. Using a fork, break the mixture into crumbs, avoiding the outer edges (as pictured above). We're only using the center of the brownie for this recipe since the edges bake up crunchy. Be sure to save the crunchy edges for snacking. Roll the mixture into 1-inch balls. The mixture will be sticky. If you find that the balls are sticking to your hands, wash and dry your hands before continuing to roll the rest of the balls. Place the balls on a parchment or wax paper-lined baking sheet. Place the brownie balls in the freezer to chill for 30 minutes. While the truffles are chilling, melt the chocolate over a double boiler or in the microwave until smooth. Roll the truffles, one at a time, in the chocolate, making sure they're fully coated on all sides. Use a fork to remove the truffles from the chocolate, allowing the extra chocolate fall off before placing them back on the baking sheet. Top with festive sprinkles. Once all of the truffles are coated, place the baking sheet back in the freezer to allow the chocolate to harden. Store the truffles in an airtight container in the refrigerator for up to 7 days.

11 ounces ghirardelli white chocolate chips, or other good quality white chocolate
1/2 cup heavy whipping cream
2 tablespoons unsalted butter
1 tablespoon cherry gelatin
8 ounces ghiaradelli chocolate melting wafers
sprinkles, or valentine's day candy, for decoration

Steps:

  • In a small saucepan heat heavy cream over low heat until warm. Add butter and cook until melted. Stir in gelatin powder until blended. Over low heat, add in white chocolate chips. Mix quickly until smooth. Refrigerate mixture for about 1 hour, until it begins to harden. Scoop 1 tablespoon balls onto a parchment paper lined baking sheet. Freeze balls for about 30 minutes. Once firm, remove balls from freezer, and use your fingertips to shape smooth. Melt chocolate wafers according to package directions. Using a toothpick, dip each truffle into the melted chocolate, tapping on the side of the bowl to remove the excess. Drop onto parchment paper and add sprinkles immediately. Repeat for remaining truffles.

1/4 cup unsalted butter, softened
3 cups powdered sugar
3 teaspoons LorAnn Cherry Bakery Emulsion
2 tablespoons milk
1/4 teaspoon red food coloring
12 ounces semi sweet chocolate
2 teaspoons coconut oil
1/4 cup chopped peanuts

Steps:

  • Into the bowl of your stand mixer, place butter and 1 cup of powdered sugar. Mix to combine. Add another cup of powdered sugar, followed by milk. Mix to combine. Add remaining of powdered sugar, cherry emulsion and food coloring. Mix to combine.
  • Using a 2 teaspoon cookie scoop, scoop cherry mixture into balls and place onto a sheet pan. Once all mixture has been rolled into balls, place into freezer to chill for 2 hours or until solid.
  • Melt chocolate and coconut oil together. Stir in peanuts.

8 ounces cream cheese (set out an hour ahead to get soft)
1 1/4 cup graham cracker crumbs (about 9 sheets)
1/2 cup powdered sugar
1 teaspoon vanilla extract
6 tablespoons cherries (I used maraschino, chopped/diced & pat with paper towel)
10 ounces vanilla almond bark or white chocolate chips
sprinkles, sanding sugar & silver dragées (optional)

Steps:

  • Using a hand mixer, in a medium bowl mix cream cheese until smooth, adding powdered sugar, vanilla extract, and graham cracker crumbs until combined. Fold in cherries and chill a couple hours to overnight.
  • When ready to roll line a sheet pan or cookie sheet with parchment paper and lightly spray with nonstick spray or a silicone mat and use either a cookie scoop or teaspoon to make even 1 1/2" balls (makes 2 dozen). Place back in fridge until chilled and firm, about 30 minutes.
  • Melt bark or white chocolate in a double boiler or microwave safe dish, stirring every 15-30 seconds until melted and smooth, about 3 minutes. Dip each truffle using a spiral dipping tool or fork and tap a little for excess to run back into the bowl. Place back on sheet pan, adding sprinkles before it sets up or drizzle a little melted white chocolate over the top again if you don't have a helper, it sets up pretty quick.   • In a small saucepan, bring the cream, butter and sugar to a boil, stirring constantly. Remove from the heat; stir in chocolate until melted. This is a deliciously moist chocolate cake, with a chocolate truffle filling. Finish it off with a lucious chocolate glaze and garnish with maraschino cherries and white chocolate curls for a real show stopper!

1 cup semi-sweet chocolate chips
2/3 cup sweetened condensed milk (from 14 oz can)
1/4 teaspoon almond extract
1 (18 1/4 ounce) box fudge cake mix, with pudding in the mix
1 cup water
1/2 cup vegetable oil
1/2 teaspoon almond extract
4 eggs
1 (113 g) box chocolate flavor instant pudding and pie filling mix (serves 4)
1 (10 ounce) jar maraschino cherries, drained on paper towel, chopped (3/4 cup)
remaining sweetened condensed milk (from 14 oz can)
3/4 cup semi-sweet chocolate chips
2 tablespoons corn syrup
1 teaspoon milk (if needed)
8 ounces vanilla candy coating
6 maraschino cherries, with stems drained on paper towel

Steps:

  • Heat oven to 350*F. Grease and flour a 12 cup bundt pan. In medium microwavable bowl, mix filling ingredients. Microwave on High 25 to 35 seconds,stirring every 15 seconds, until melted and smooth; set aside.
  • In a large bowl, with an electric mixer, beat cake mix, water, oil, 1/2 tsp almond extract, the eggs and pudding mix on low speed about 1 minute, scraping bowl constantly. With rubber spatula, fold in cherries. Spoon batter into pan, spreading evenly. Carefully spoon filling in ring over batter, being careful not to let filling touch sides of pan.
  • Bake 45 to 50 minutes, or until toothpick inserted 1 inch from inside edge of pan comes out clean and top of cake feels firm to the touch and cake pulls away slightly from side of pan. Cool 15 minutes.
  • Invert onto heatproof serving plate. Remove pan and let cool completely, about 1 hour.
  • In a 1 quart saucepan, heat all glaze ingredients except 1 tsp milk over medium low heat, stirring occasionally, until chocolate is melted and mixture is smooth. Stir in up to 1 tsp of milk, if necessary, for glazing consistency. Pour glaze over cake, allowing some to drizzle down sides. Garnish with white chocolate curls and additional cherries if desired. Store loosely covered in the fridge.

1 cup heavy cream
1 tablespoon unsalted butter
Pinch of salt
1/2 teaspoon vanilla extract
/2 teaspoon cherry extract
Shredded coconut, for coating

Steps:

  • Chop the chocolate and put in a heatproof bowl. Bring the heavy cream, butter and salt to a simmer in a saucepan over medium heat; pour over the chocolate and let sit until completely melted, about 10 minutes. Stir with a rubber spatula or whisk until smooth. (If necessary, microwave in 20-second intervals until the chocolate melts.)
  • Whisk in the vanilla and cherry extracts. Stir the ganache until it is smooth and shiny. Pour into a shallow baking dish and refrigerate until firm, at least 3 hours or overnight.
  • Roll tablespoonfuls of the ganache into 18 to 24 balls, then roll in shredded coconut. Transfer to a parchment-lined baking sheet, cover with plastic wrap and refrigerate until firm, at least 1 hour or overnight. (To make these in advance, roll into balls but do not coat; cover and freeze up to 2 weeks. Let sit at room temperature for 20 minutes before uncovering, then roll in coating.)

36 Oreo cookies (finely crushed (filling left in))
4 oz. cream cheese (softened)
½ cup cherry pie filling
¼ tsp cherry extract
1 package chocolate bark (melting chocolate) (16 oz)

Steps:

  • Mix crushed Oreo crumbs (I always use my blender to crush the cookies) with cream cheese, cherry pie filling and cherry extract until well combined.
  • Roll dough into 1-inch balls and place on wax paper on a cookie sheet or plate. Freeze the balls for at least 30 minutes before dipping in chocolate.
  • Once the balls have been frozen, melt the chocolate bark in a glass bowl in the microwave for about 45-second intervals, stirring in between each interval until all the chocolate has barely melted and is smooth when stirred. I also added a couple drops of cherry extract to the chocolate before dipping and it adds a little bit more of a cherry flavor. Just be careful not too use too much - it is very strong stuff!
  • Dip each ball into the chocolate and then return to the wax paper until chocolate is hard. (I've tried many different methods and the one that seems to work best is using a fork to lift the truffle out of the chocolate once completely coated - this allows some of the excess chocolate to drip off before you place it on the wax paper.)

50 grams (1/2 cup) desiccated coconut, plus extra for rolling
120 grams (3/4 cup) glaced cherries
100 grams (2/3 cup) milk chocolate
150 grams (1 cup) dark or semi-sweet chocolate
250 ml (1 cup) sweetened condensed milk

Steps:

  • Crush your biscuits or cookies until they resemble fine crumbs, either using a food processor or bash with a rolling pin. Add your crumbs to a large bowl, along with the coconut and mix together.
  • Finely chop your cherries and the milk chocolate and add to your crumbs. Stir well. Melt your dark chocolate in the microwave, then combine with your sweetened condensed milk.
  • Working quickly, pour the chocolate mixture over the dry ingredients and stir well until combined. Cover with plastic wrap and pop in the fridge for 30 minutes.
  • Then carefully roll out your truffles, approximately a teaspoon of mixture at a time, and then roll each truffle in more desiccated coconut. Store truffles in the fridge for up to 5 days.

1/3 cup pecan pieces
4 ounces bittersweet chocolate, very finely chopped
4 ounces semisweet chocolate, very finely chopped
1 teaspoon pure vanilla extract
Pinch of kosher salt
1/2 cup heavy cream
1 tablespoon unsalted butter
1/2 cup dried cherries, very finely chopped
Turbinado sugar, for rolling

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the pecans on a rimmed baking sheet and bake until browned and toasted, 8 to 10 minutes. Let cool completely, then chop very finely.
  • Put the bittersweet chocolate, semisweet chocolate, vanilla, and salt in a large bowl. Heat the heavy cream and butter in a small saucepan over medium-low heat until the cream is steaming and the butter has melted; pour over the chocolate, then let sit for 5 minutes. 2/3 cup cream
Optional: 3 tablespoons kirschwasser (or other cherry liqueur)
1/2 cup dried cherries (finely chopped)
1/3 cup cocoa powder
1 pound chocolate candy coating
Garnish: things like red sprinkles, dried cherries, red candy coating, etc

Steps:

  • Begin by making the chocolate-cherry ganache. First, place the chopped chocolate in a medium heat-safe bowl.
  • Pour the cream in a small saucepan, and place it over medium heat. Heat the cream until small bubbles form along the sides of the pan, but don't allow it to come to a boil.
  • Pour the hot cream over the chocolate and let it sit for 1 minute. Gently whisk the chocolate and cream until it is well-combined. Stir in the chopped cherries and the kirschwasser, if using.
  • Press a layer of cling wrap on top of the chocolate, and allow it to come to room temperature. Place the truffle cream in the refrigerator to firm up for about 2 hours.

1/4 cup cherry brandy
11 ounces 53% cacao dark baking chocolate, chopped
1/2 cup heavy whipping cream
1 teaspoon cherry extract
COATING:
4 ounces milk chocolate, chopped
4 ounces dark chocolate, chopped
Melted dark, milk and white chocolate and pearl dust

Steps:

  • In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth.
