APPLE CHERRY CRISP

Number Of Ingredients 14

4 cups cherries (pitted and stems removed {if you have some extra cherries leftover, add them in, more cherries the better))
4 Granny Smith Apples (cored, peeled and sliced)
1 1/2 tablespoons lemon juice
2 teaspoons cornstarch
1/4 cup brown sugar
1/4 cup white sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1 1/4 cups yellow cake mix (just the mix!)
1/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
6 tablespoons chilled butter
NOTE: You can make this with up to 8 cups of cherries

Steps:

  • Preheat oven to 425 degrees.
  • Remove stems from all of the cherries and remove seeds.
  • Peel apples, cored and then slices into quarters. Then slice each quarter piece into three pieces.
  • In a large bowl, add cherries, apple slices, lemon juice, cornstarch, brown sugar, white sugar, vanilla, and cinnamon. Gently toss to combine. Pour cherry mixture into skillet or 2-quart baking dish.
  • In a medium mixing bowl, combine yellow cake mix, brown sugar, salt, and baking powder. Stir to combine. Add butter, and using a pastry blender or a fork, cut butter into the mixture until it resembles coarse crumbs.
  • Add crumb topping to cover the cherries entirely. Set in the oven and bake for 25-35 minutes or until crumb topping is a nice golden brown and the juice from the cherries is bubbling.
  • Serve immediately or let it cool and serve later, it's great either way especially with vanilla ice cream or whipped topping.

4 apples, such as Gala or Fuji, peeled, cored, and cut into 1/2-inch pieces (4 cups)
2 tablespoons fresh lemon juice
1 cup dried cherries or dried cranberries (5 ounces)
1/4 cup sugar
Coarse salt
1 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 1/2 cups rolled oats
4 tablespoons cold, unsalted butter, grated

Steps:

  • Preheat oven to 375 degrees. In an 8-inch square baking pan, toss apples, lemon juice, and cherries.
  • Whisk together sugar, a pinch of salt, the cinnamon, and flour. Add half the sugar mixture to apples; stir to combine.
  • Stir together oats and remaining sugar mixture. Add butter, and stir. Evenly pat oat-butter mixture over apples. Bake until oats are golden, apples are tender, and the juices are bubbling, 40 to 50 minutes.

These Cherry Oatmeal Cobbler is the perfect sweet and tart summer treat!

1 cup flour
¾ cup light brown sugar--packed
½ tsp salt
½ cup butter
2½ cups quick cook oats
2 tbsp apple juice
1 can cherry pie filling

Steps:

  • Heat oven to 375 degrees.
  • Place flour, salt and brown sugar in food processor and pulse lightly. Add butter and pulse until crumbles form. Add the oats and mix.
  • Remove 1½ cups of mixture and set aside. Add apple juice to food processor and pulse until mixture is moist.
  • Place in an even layer in the bottom of a greased 9 x 13 inch pan.
  • Place cherry pie filing on top of mixture and then top with remaining oats mixture.
  • Bake until top is golden--about 35-40 minutes.
  • Allow to cool slightly and then serve with ice cream.
  • Enjoy!

My grandmother's recipe that always has guests begging for thirds! It is easy to make and especially decadent if served with vanilla ice cream

6 -8 baking apples (I prefer Cortland)
1/2 cup white sugar
1/2 cup margarine
1 tablespoon ground cinnamon
3/4 cup quick-cooking oatmeal or 3/4 cup rolled oats
3/4 cup brown sugar
3/4 cup white flour

Steps:

  • For best results with this recipe, use apples that hold their shape when baking and aren't too tart.
  • Do not use Macintosh apples (too soft) or Red Delicious (too bland).
  • I prefer Cortlands or Empires.
  • Preheat the oven to 350 degrees- if you have a convection oven, do NOT use the convection feature- the dessert will be dry and overcooked on top.
  • Use the regular baking feature.
  • This recipe isn't good for microwave use.
  • Peel and core the apples, then cut them into eighths or into large cubes.
  • Distribute the apples evenly into a medium-sized ungreased baking dish (I like the white Corning/Pyrex oval dishes) and sprinkle the white sugar and cinnamon over top.
  • Distribute 1 tbsp of the margarine in dollops throughout the top of the apples (no need to try to stir it in).
  • In a separate medium mixing bowl, combine the remaining margarine, the oats, brown sugar and flour using your hands or a pastry whisk until it forms a crumbly, dry-ish mixture.
  • (Note: if you like lots of crumble topping, feel free to double the ingredient quantities for the toppping).
  • Pour the mixture over top of the apples and spread it out evenly so that all the apples are covered and the edges and corners hidden.
  • Pat the mixture down lightly so that it looks sort of like a crust.
  • Bake for 30-35 minutes, until the crumb top has darkened to a golden brown colour.
  • Remove from the oven and let cool for at least 10 minutes before serving.
  • Spoon out portions into large bowls and serve with ice cream, thick sweetened yoghurt or milk.

1 cup Quaker® Oats
1/4 cup chopped dried cherries
1/4 cup chopped dried apples
1/2 tsp of cinnamon
1 tbs of butter
1/3 cup of packed light brown sugar
for the crumb topping:
1 cup of Quaker® Oats
6 tbs of flour
1/2 cup of packed light brown sugar
8 tbs butter, softened
1/4 tsp ground cinnamon
1/3 cup of chopped pecans

Steps:

  • Bring 1 3/4 cups water to a boil and add in 1 cup of your Quaker® Oats . Simmer over medium heat for about a minute until the water is absorbed by the oats. Mix in chopped dried cherries, chopped dried apples, 1/2 tsp of cinnamon, 1 tbs of butter and a 1/3 cup of brown sugar while the oatmeal is still very hot.
  • For the Crumb Topping:
  • Mix together all of the dry ingredients, then mix in butter using your fingers. The mixture will be crumbly in texture. Spread the mixture on a greased cookie sheet and bake at 350 degrees for about 15 minutes. The mixture will spread and become thin and crispy. Take it out of the oven and let it cool completely.
  • Once it cools, you can break it into pieces.
