CHEF JOEY'S VEGAN CHOCOLATE CHIP COOKIES
Don't you just hate it when you come across a great cookie recipe and the instructions are lacking? I sure do. This recipe was one of those. Not to be discouraged, I made these and now can impart what I learned. These cookies are very chewy. Make sure you flatten them to about 1/4" as they don't really spread, but they do rise. Their flavor is very mild even with the chips, nuts and seed additions. The batter is very stiff. I have a little tablespoon measure made by chip clip that has a rubber bottom so I can pop the batter out without it sticking. These cookies would be great dunkers!

Steps:
- Preheat your oven to 350'F.
- Spray a cookie sheet with spray oil. I used my silpat sheets in place of the oil to keep the fat content down. You could probably use parchment paper as well.
- In a large bowl stir the flour and baking powder with a whisk to lighten up the mixture.
- In a medium bowl mix the apple sauce, agave syrup and vanilla. Using a whisk mix this all together then add to the flour baking powder mixture. Stir it very well.
- The batter will be very stiff. Add the chips, nuts and seeds and fold them into the batter to distribute.
- Drop by tablespoonful onto the cookie sheet and flatten with a fork. Dip the fork in water if the batter sticks to it.
- Make sure if you like round cookies you shape them accordingly because they will stay in what ever shape they are in when you flatten them.
- Bake for 12 minutes. The edges of the cookies should be golden in color. Remove the cookies from the oven and transfer them to a cooling rack immediately. These cookies are pretty sturdy so they can handle being moved off the cookie sheet right away. Then pop the next batch into the oven.
- Serve with a nice tall glass of non-dairy milk.

CHEF JOEY'S ORGANIC HEMP MILK
I have been making my own organic hemp milk for quite a long time. When you make your own it is stronger then what you buy in the grocery store, so be prepared to taste more of the hemp flavor. You will need a high powered blender for this to break the seeds down. I have a Vita-Mix and it works perfect. You will also need a seed bag to strain the milk from the seeds. I got mine online. Steps:
- Fill the cup of a large blender with 7 cups of water.
- Add the hemp seed, honey and vanilla.
- Blend for a few minutes to ensure the seeds are all broken up.
- Taste your milk. If its not sweet enough or flavored enough, add more sweetener or vanilla. You can also add almond extract as well.
- If you are happy with the milk let it sit for a few minutes to let the water get into the seed puree. This step is important because it will help plump the seeds up and prevent them from leaking out into the milk while you're straining it.
- Once the milk is strained put in the fridge.
- Drink it up quickly this stuff won't keep too long.

- Note: If you use frozen blueberries thaw and drain them also.
- Preheat oven to 375'F.
- Mix together the sugar, shortening, and egg substitute.
- Sift together the flour, baking powder and salt.
- Add the dry to the wet ingredients.
- Gently add the blueberries last.
- Spread in a 9x9 inch baking dish.
- Prepare the crumb mixture by mixing the ingredients and sprinkling on top of the blueberry cake batter.
- Put in oven and bake!

CHEF JOEY'S CINNAMON MOCHA COCO
This recipe is really tasty. It has a few interesting ingredients and is well worth the effort to make it. We enjoyed this one today because it's cold outside and this really warmed us up! You could put a dollop of non-dairy whipping cream on top and sprinkle a little more cinnamon on that...Yummy!

- Add the almond milk to a large saucepan and heat it slightly, then add the rest of the ingredients.
- Using a whisk, whip everything together and serve in a nice cup.
- This tastes better if you heat it up slowly, but don't boil it.

CHEF JOEY'S VEGAN CINNAMON ROLLS
These are really good tasting cinnamon rolls. I added some currents and roasted pecans to the filling, along with the brown sugar for added flavour and crunch. These would be delicious with a cold glass of soy milk or a cup of tea.

Steps:
- Mix the yeast, sugar and heated soy milk in a large bowl and let sit until the yeast foams.
- Prepare your egg replacer. Mix it with the margarine, flour and salt. I used my Kitchen Aid mixer for this. The dough should be smooth and very stiff.
- Set the dough aside, covered in a warm place until its double in bulk.
- Once the dough has risen turn it out onto a floured surface cover with a T towel and let it rest for 10 minutes.
- While the dough rests, combine the brown sugar and cinnamon and mix well. Set aside.
- After 10 minutes roll out the dough on a floured surface. The dough should result in a 16x21 inch rectangle.
- Spread the dough with the cinnamon sugar. Spread it evenly with your hand. Add the currants and nuts also.
- Starting at one end, roll the dough up and cut into 12 equal pieces using a sharp knife.
- Put a piece of parchment on a 9x13 inch baking sheet and place the cut up rolls evenly spaced on the parchment. Cover with the T towel and let rise again for about 30 minutes or until the rolls are about double in size. Preheat your oven to 375'F.
- Bake for 15 minutes until golden brown. While the rolls are baking prepare the icing. Beat together the vegan cream cheese, margarine, icing sugar, vanilla and salt. Spread on the warm rolls.
