CHEF JOEY'S YOUNG COCONUT SMOOTHIE

I love the milk and flesh from young coconuts and its much sweeter then old coconuts. I buy mine in our local Asian market. This drink is delicious anytime, but I prefer it in the morning as a pick me up. The raw cacao nibs in this drink give it a nice kick without the crash other chocolate drinks give you. You can use other types of berries besides Strawberries in this recipe. And, you could also substitute all or some of the non-dairy milk with pineapple or apricot juice to give it a tropical kick.

Number Of Ingredients 8

2 young fresh coconut (milked and cleaned of flesh)
4 tablespoons cacao, nibs (ground to a powder in a coffee mill)
1 cup non-dairy milk substitute or 1 cup coconut milk
1 banana
1/4 teaspoon cinnamon
1 teaspoon vanilla
1 cup fresh strawberries (cleaned)
2 tablespoons agave nectar

Steps:

  • Grind up the cacao nibs in a coffee mill until it resembles coco powder. Set aside.
  • Clean the berries and set aside.
  • With a hammer and pointed screw driver make three holes in the top of the two young coconuts. Drain the milk out into a large measuring cup through a sieve.
  • Cut the two young coconuts in half. My hubby uses his table saw and it works very nicely for this.
  • Rinse the coconut insides to remove any of the outer shell that might have coated the coconut flesh.
  • Scrape out all the flesh, get every bit as it's so delicious.
  • Put the flesh and the coconut milk into a blender and process until well combined.
  • Put the coconut mixture through the sieve again to remove the little pieces of shell. Put the coconut mixture into a container and set aside.
  • Clean out the blender cup and lid and put the coconut milk/flesh mixture back into it. Add the one cup coconut milk or non-dairy milk, the banana, the ground cacao, vanilla, cinnamon and berries.
  • Process until smooth and creamy.
  • Drink ASAP!
  • Bon Appetit!

On weekends my hubby and I like to start our morning with a smoothie of some sort. This morning I decided something with a mocha base would be nice for a change. The flavor of this drink was very subtle and very delicious. I didn't need to add any sweetener as the bananas were sweet enough. Note: It is best to cut the banana up in slices before freezing.

2 frozen bananas (cut in 1/2 inch pieces)
2 cups oat milk (or other non-dairy milk)
10 whole decaf coffee beans
1 (14 ounce) can light coconut milk
1 teaspoon ground cinnamon
3 tablespoons cacao, nibs

Steps:

  • Grind up the coffee beans, cinnamon and cacao nibs in a coffee grinder until finely ground.
  • In the cup of a large blender add the non-dairy milk, coconut milk, bananas and the coffee bean/cacao mixture.
  • Blend on high until well incorporated.
  • Serve in a tall glass and enjoy.
  • Bon Appetit!

We all know how important it is to have a good breakfast. Not only does it get your motor running but keeps you from eating more then you should during the day. This morning I wanted to get my motor running because I have a lot to do to get ready for the holidays. I love this breakfast sandwich and eat it a few times a week. I use Alvarado Bakery Sprouted Buns. These buns don't get dry and have a wonderful taste. Serve with your favourite hot beverage. Mine is a steaming cup of Rooibos Tea.

1 large organic egg
1 sprouted organic bun
1 slice vegan cheese (I use the cheddar)
1/4 teaspoon coconut oil
1 tablespoon horseradish (I used Captain Toadies Creamed Spread)
1/2 teaspoon herbs (I used Simply Organic Grilling Seasoning for Vegetables)

Steps:

  • Put the coconut oil in a small saute pan and heat.
  • When hot add the egg.
  • Break the yolk before the white totally cooks.
  • Sprinkle the grilling season on the egg.
  • Flip the egg and cook on the other side.
  • Lightly toast the sprouted bun. Spread on the horseradish. Put the slice of cheese on the bun and add the egg.
  • Bon Appetit!

We came into a trove of peaches recently and I'm having a wonderful time using them up on various recipes. Today I created a delicious smoothie. You could probably use nectarines in this recipe as well. I used my Vita-Mix Blender so all the fruit and pulp would liquefy.

5 large fresh peaches (sliced & seeded)
1 (14 ounce) can light coconut milk (organic)
1 cup filtered water
2 teaspoons pure vanilla extract
1 cup vanilla ice cream (I used rice dream)
1 tablespoon agave nectar

Steps:

  • Wash and slice the peaches and remove the pits.
  • Place them into the blender cup and add the rest of the ingredients and process.
  • This makes a huge amount so if you're using a smaller blender maybe cut the recipe in half.
  • Bon Appetit!
