If you love those cheesy corn snacks that leave your fingers bright orange, then you have to try this recipe! The Nacho Cheese and Flamin' Hot varieties are especially good here. Make sure you use the "crunchy" ones, not the "puffs".

Number Of Ingredients 7

3 cups crunchy Cheetos cheese-flavored snacks (or any other Brand)
1/3 cup parmesan cheese, grated
1/4 cup flour
1/2 teaspoon salt
1 egg
1 tablespoon water
2 boneless skinless chicken breasts

Steps:

  • Place the "Cheesies" in your food processor and process into small crumbs. Add the Parmesan Cheese and pour onto a plate.
  • Coat chicken breasts in flour & salt.
  • Combine egg & water. Beat until well combined. Dip floured Chicken in egg mixture.
  • Coat the chicken in the Cheesie crumbs.
  • Place on a lightly greased baking sheet (I use cooking spray).
  • Bake for 35-45 minutes at 350° until chicken is cooked through (cooking time will depend on thickness of meat).

Flamin' Hot Cheetos are great. Fried chicken is great. Together, they make something even greater.

3 pounds chicken, a variety drumsticks, thighs and bone-in breasts
3 cups buttermilk
1 cup pickle brine
1 head garlic, smashed
6 tablespoons kosher salt, separated
2-3 turns with a pepper grinder
3 cups flour
2 cups Flamin' Hot Cheetos
2 tablespoons paprika
2 tablespoons cayenne
2 tablespoons garlic powder
6-8 cups peanut or canola oil, for frying

Steps:

  • Mix buttermilk, pickle brine, smashed head of garlic and 3 tablespoons kosher salt in a large bowl. Add chicken and stir to coat. Cover and let chicken brine in the fridge for at least 2-4 hours to overnight.
  • Remove chicken from fridge, and as it comes to room temperature prepare your coating.
  • Place Hot Cheetos into a food processor and pulse until there are no large bits left. Mix together the flour, Hot Cheeto dust, 3 tablespoons kosher salt, paprika, cayenne and garlic powder.
  • Heat your oil in a heavy-bottomed (preferably cast-iron) pan with high sides. Place a thermometer on the side of your pan so you can keep the oil temperature around 350°F.
  • When your oil is heated, take the chicken piece by piece from the brine and dredge it in the flour mixture. Fry each piece until golden brown, usually between 6-12 minutes per side, depending on the size of the chicken pieces, taking care not to crowd the pan while frying. Let cool on a wire rack.

Nonstick cooking spray, for spraying the baking dish
6 cups crispy cheese puffs, such as Cheetos®
1 pound all white meat ground chicken
1 teaspoon chicken bouillon powder or crumbled cube
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
1 cup all-purpose flour
3 large eggs, lightly beaten
1/2 cup ranch dressing

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray.
  • Add the cheese puffs to a food processor and grind to fine crumbs.
  • In a large bowl, mix the ground chicken, chicken bouillon, garlic powder, paprika, 1/4 cup of the cheese puff crumbs, 1 teaspoon salt and 1/2 teaspoon black pepper with your hands until combined. Press the chicken mixture into the baking dish, creating an even layer. Bake until the chicken is cooked, 7 to 10 minutes. Set aside to cool slightly, then turn out onto a cutting board and cut into 4-by-1/2-inch sticks.
  • Meanwhile, fill a heavy skillet or a Dutch oven halfway with oil. Heat over medium-high heat until a deep-frying thermometer registers 350 degrees F.
  • Put the flour, eggs and remaining cheese puff crumbs in separate shallow dishes. Season the flour with 1 teaspoon salt and 1/2 teaspoon pepper. Dip each chicken stick first in the flour, then in the egg, then in the crumbs.
  • Add the sticks to the hot oil a few at a time, making sure not to overcrowd. Fry, turning frequently, until crispy, about 1 minute. Remove to a paper-towel lined plate. Serve warm with ranch dressing.
