VELVEETA® ITALIAN SAUSAGE BAKE

Steps:
- Heat oven to 350°F.
- Cook pasta as directed on package, omitting salt. Meanwhile, crumble sausage into large deep skillet; cook on medium-high heat until evenly browned, stirring occasionally. Drain; return sausage to skillet. Stir in vegetables and pizza sauce; cook 5 to 6 min. or until vegetables are crisp-tender, stirring occasionally.
- Drain pasta. Add to sausage mixture along with the VELVEETA; mix lightly. Spoon into 13x9-inch baking dish sprayed with cooking spray; sprinkle with Parmesan.
- Bake 15 to 20 min. or until heated through.

JOLEAN'S CHEESE POTATO & SMOKED SAUSAGE CASSEROLE
This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

Steps:
- Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
- Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
- Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
- Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
- Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
- NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

- HEAT oven to 350ºF.
- COOK and stir bacon in large skillet on medium heat 10 minute or until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet.
- ADD potatoes, mushrooms, peppers and onions to reserved drippings in skillet; cook 10 minute or until peppers and onions are crisp-tender, stirring occasionally. Stir in VELVEETA. Spoon into 13x9-inch baking dish sprayed with cooking spray.
- WHISK eggs and sour cream in medium bowl until blended; stir in bacon. Pour over vegetable mixture.
- BAKE 40 minute or until center is set and casserole is heated through.

VELVEETA CHEESE AND SAUSAGE BAKE
Steps:
- 1. Preheat oven to 350°F. Layer a casserole dish (9x13) with the cocktail sausage.
- 2. Bring water to boil and add a pinch of salt and 1/2 teaspoon oil to avoid sticking. Once water has begun to boil and elbow macaroni. Cook 10 minutes or until macaroni noodles are enlarged and soft. Drain macaroni and place in casserole dish over cocktail sausage
- 3. Cube cheese and place in a saucepan with milk. Stir frequently to avoid burning mixture. When cheese is melted pour over the mixture in casserole dish. Salt and pepper to taste.
- 4. Place in oven and bake for 30 minutes or until liquid has been absorbed. To brown the top turn oven to broil and watch until the cheese starts to bubble and top begins to slightly brown. Remove from oven and let sit 5 minutes to thicken.

- Heat oven to 400°F.
- Beat eggs and sour cream with whisk until blended. Pour into 13x9-inch baking dish sprayed with cooking spray. Bake 10 min. or until egg mixture is softly set. Meanwhile, cook sausage, mushrooms and onions in large skillet on medium heat 6 to 8 min. or until sausage is done, stirring occasionally; drain.
- Reduce oven temperature to 325°F. Spoon tomatoes over egg layer; cover with sausage mixture and cheese.
- Bake 30 min. or until center is set.

BAKED SAUSAGE POTATOES AND CHEESE
Mmm...cheesy goodness. This is especially good on those cold days. I got this recipe from my mom and her best friend a couple of years ago and have been enjoying it ever since.

Steps:
- Preheat oven to 375°F.
- Put oil in skillet and place over medium heat until hot.
- Brown sausage on both sides.
- Place sausage in between layers of paper towels to get out as much of the grease as possible.
- Spray deep baking dish with Crisco and place sausage into it.
- Brown potatoes, (but do not fry until done) in the sausage grease left in skillet.
- You may need to add a bit more oil.
- Follow the same paper towel method as you did in step #3. This time with the potatoes.
- Place potatoes on top of sausage in deep baking dish.
- Bake at 375°F until potatoes are soft (about 45 minutes). Check often, as not to burn.
- Place a layer of sliced cheese over top when potatoes are soft.
- Put back in the oven until cheese is melted (about 5 minutes).
- Serve and enjoy.

- Preheat oven to 400 degrees.
- Add hot water to stuffing mix; stir till blended. Set aside.
- Saute Italian sausage in a large nonstick skillet over med-high heat until nicely browned.

Steps:
- Cut sausage into small bite sized pieces. Fry with onion and garlic until completely cooked.
- Meanwhile, cook pasta with a pinch of salt until fully cooked.
- Preheat oven to 350°F In a greased 8 inch square pan, cover the bottom with the sausage mixture.
- Top with sliced celery. Cut 4oz of Velveeta into small chunks and scatter over celery.
- Top with 1/2 of cooked pasta. Cut remaining Velveeta and layer that and remaining pasta on top.
- Spoon pasta sauce over noodles, making sure it covers all of the top (otherwise the pasta will dry out). Sprinkle with Parmesan. Bake for 20 minutes.
